For a true taste of the Mediterreanean try this quick and cheesy tuna, courgette and spinach pasta recipe. Great as an impromptu summer meal or for hungry, cash-strapped students.

350g penne pasta
20g butter, softened
20g plain flour
250ml semi-skimmed milk
100g mature Cheddar, roughly grated
1 large courgette, roughly grated
2 handfuls spinach leaves, washed and
large leaves torn
200g can tuna steak in spring water, drained

Steps:

  • Bring a large saucepan of salted water to the boil. Add the penne, stir once, bring back to the boil, then simmer for 10 minutes, or cook according to packet instructions, until al dente. Drain, then tip the pasta back into the saucepan.
  • Meanwhile, make the cheese sauce. Put the butter in a jug and microwave on high (based on a 900W oven) for 40 seconds, until melted and hot. Stir in the flour to make a paste, then very gradually stir in the milk - this will prevent any lumps forming. Microwave on high for 3-31/2 minutes, stirring every minute, until the sauce has thickened. (Alternatively, melt the butter in a pan over a medium heat, stir in the flour and cook for 1 minute. Gradually add the milk and cook, stirring, for 6-8 minutes until the sauce has thickened.) Stir in 60g Cheddar and season to taste.
  • Preheat the grill to high. Stir the cheese sauce into the pasta, along with the courgette and spinach and mix together to wilt the spinach. Gently mix in the tuna, then tip into a shallow, 2-litre ovenproof dish. Sprinkle with the remaining cheese. Place directly under the hot grill for 5 minutes, until piping hot and the cheese is turning golden.
  • Serve with a green salad.

3 cups pasta
4 ounces cream cheese (half of a block)
1/2 cup grated cheddar cheese
1/2 cup milk (more if you want the sauce thinner)
1 tablespoon granulated garlic
1 (6 ounce) can tuna

Steps:

  • Cook pasta according to package directions.
  • Meanwhile, melt cream cheese in milk in med saucepan over low heat.
  • Add cheedar and garlic.
  • Add tuna and mix well.
  • Once pasta is cooked, drain and pour tuna mix on top.
  • Mix well and serve.

3/4 lb campanelle pasta (or small shells)
2 (6 ounce) cans tuna in vegetable oil
1 (9 ounce) bag fresh spinach
4 garlic cloves, minced
2 tablespoons olive oil
1/8-1/4 cup seasoned dry bread crumb
1/8-1/4 cup parmigiano-reggiano cheese, grated

Steps:

  • Cook pasta in large pot according to package directions. Meanwhile, drain tuna, set aside. Mince garlic, set aside.
  • When pasta is done, drain and set aside. Reduce heat to medium. In same pot, add olive oil. Add garlic. Saute garlic over medium-low heat, stirring frequently until garlic takes on color. When garlic is colored to a medium golden brown, add spinach. Lid pot and reduce heat, stirring occasionally. When spinach is shiny and wilted, add tuna. Stir. Lid and let simmer for one minute. Add pasta, stir. Lid again, let simmer one minute. Add breadcrumbs, stir, lid for one minute. Add cheese, stir and serve.

A family favorite! --- I would recommend to slice the zucchini fairly thick and you may want to add in some chopped green bell pepper also if desired, I have even substituted cooked chicken breast in place of tuna with great success, I like to combine both mozzarella and cheddar cheeses but of coarse one or the other may be used, I also add in 1 teaspoon garlic powder to the sour cream mixture.

2 (6 1/2 ounce) cans chunk tuna (I use all white tuna, but light may be used also, or use both)
4 cups wide egg noodles (uncooked)
1 celery rib, diced
3 green onions, finely chopped
1 cup sour cream
1 cup mayonnaise
1/4 cup milk
1 teaspoon mustard powder
1/4 cup grated parmesan cheese
1/2 teaspoon dried thyme (rubbed between fingers to release flavor)
salt and pepper (I use about 1/2 teaspoon seasoned salt)
1 medium zucchini, sliced
2 cups grated mozzarella cheese
2 cups grated cheddar cheese
1 large firm roma tomato, chopped

Steps:

  • Cook the egg noddles in boiling water according to package directions; drain and rinse under warm water, then set aside.
  • Drain the tuna and flake with a fork.
  • In a large bowl, combine tuna, cooked egg noodles, celery and onions; mix well to combine.
  • In another small bowl, combine sour cream, mustard powder, mayo, Parmesan cheese, milk, thyme, salt and pepper; add into the tuna mixture and toss well to combine.
  • Set oven to 350°F.
  • Grease a 2-quart casserole dish.
  • Spoon HALF of the mixture into prepared dish.
  • Top with HALF of the sliced zucchini.
  • Then sprinkle with cheddar cheese.
  • Top with noodle mixture then remaining zucchini.
  • Sprinkle with more grated Parmesan cheese if desired.
  • Bake covered with foil for 30 minutes.
  • Remove from oven and uncover, sprinkle with grated mozzarella cheese, return to oven (uncovered) and bake for another 10 minutes.
  • Sprinkle chopped tomato over casserole before serving.

2 medium zucchini, spiralized
cooking spray
2 tablespoons salted butter
½ cup chopped onion
1 clove garlic, crushed
8 ounces cream cheese, softened
3 (5 ounce) cans tuna, drained
1 (12 ounce) package frozen peas
1 ½ cups shredded sharp Cheddar cheese
salt and ground black pepper to taste
1 tablespoon sliced almonds, or to taste

Steps:

  • Place spiralized zucchini (zoodles) into a pot and cover with well salted water; bring to a boil. Boil for 3 to 4 minutes, then empty into a colander to drain. Let drain for 2 to 3 hours, occasionally pressing out as much moisture as you can.
  • Preheat the oven to 375 degrees F (190 degrees C). Lightly spray a 9x13-inch glass casserole with cooking spray and add drained zoodles.
  • Bake zoodles in the preheated oven for 10 minutes.
  • Meanwhile, melt butter in a skillet over medium heat. Add onion and cook until soft and translucent, about 5 minutes. Add garlic and cook until softened, about 1 minute. Add cream cheese and cook until softened, about 2 minutes.
  • Remove zoodles from the oven and pour off any liquid. Add the skillet mixture to the zoodles, along with tuna, peas, Cheddar cheese, salt, and pepper. Stir until well combined. Sprinkle almonds on top.
  • Bake until cheese is melted and bubbly, about 30 minutes.

1 (400 g) can chickpeas, rinsed and drained
2 garlic cloves, crushed
1 (280 g) can tuna in water, drained

  • Cook pasta according to instructions.

10 ounces frozen chopped spinach, thawed
1/2 cup chopped onion
3 tablespoons butter
3 tablespoons all-purpose flour
1/2 teaspoon dry mustard
1/4 teaspoon salt
1 1/2 cups milk
1 cup shredded cheddar cheese or 1 cup swiss cheese
6 1/2 ounces tuna, drained
1 (8 ounce) can water chestnuts, drained, and sliced (optional)
1/3 cup fine dry breadcrumb
1 tablespoon butter, melted

Steps:

  • Cook noodles, drain. Meanwhile, press excess moisture from thawed spinach; set aside.
  • In saucepan cook chopped onion in 3 TBS. butter til tender. Blend in flour, dry mustard, and salt. Add milk all at once. Cook and stir until thickened and bubbly. Add shredded cheese, stir tip melted. Stir in cooked noodles, thawed spinach, water chestnuts and tuna. Put in a 1 1/2 quart casserole dish. Combine bread crumbs and 1 tablespoon melted butter and sprinkle atop. Bake in 350 oven for 40 to 45 minutes or tip heated through. Makes 4 to 6 servings.
