BASIL BURGERS WITH SUN-DRIED TOMATO MAYONNAISE
I often end up with a bumper crop of herbs-and here's one of my favorite basil recipes. These burgers feature great Italian flavor. The gooey, cheesy centers and scrumptious topping are irresistible. -Virginia Kochis, Springfield, Virginia

- In a small bowl, combine tomatoes and water. Let stand for 5 minutes; drain. In a food processor, combine mayonnaise and tomatoes; cover and process until blended. Chill until serving., In a large bowl, combine the Worcestershire sauce, basil, Italian seasoning, garlic, pepper and salt. Crumble beef over mixture and mix well. Shape into 12 thin patties. Place 2 tablespoons cheese on six patties; top with remaining patties and press edges firmly to seal., On a greased grill, cook burgers, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear. Serve on buns with mayonnaise mixture and, if desired, additional basil.

- Heat grill to medium heat.
- Combine stuffing mix and milk; let stand 2 min. Add meat, cheese and sun-dried tomatoes; mix well. Shape into 4 (1/2-inch-thick) patties.
- Grill 6 to 8 min. on each side or until done (160°F).
- Place 1 burger on each of 4 large tomato slices; top with basil and remaining tomato slices.

CHEESY MEATBALLS WITH BASIL TOMATO SAUCE
Add the meatballs to the simmering sauce during the last 10 minutes of cooking. Serve over cooked pasta, if desired. Recipe is from Rachael Ray.

- For meatballs, in large mixing bowl, gently break apart the beef with a fork.
- Add the onion, breadcrumbs, parmesan, pecorino-romano, ketchup, parsley, basil, salt, Worcestershire sauce and garlic powder and stir gently to combine.
- Stir in the egg until just incorporated.
- Using your hands, shape the meat into 1-inch balls, to make about 60 meatballs.
- In a large nonstick skillet, heat 2 T olive oil over medium-high heat.
- Working in batches, add the meatballs and cook, turning, until lightly browned, about 10 minutes, adding more oil when necessary.
- Drain on paper towels.
- Note: You could also bake the meatballs for about 20-25 minutes at 350 degrees.
- For sauce,.
- In large saucepan, heat the olive oil over medium heat.
- Add the onions, season with 1 1/2 t salt and cook until softened, about 10 minutes.
- Add the tomatoes, the remaining 1 1/2 t salt and the basil and bring to a simmer over high heat.
- Lower the heat, cover and simmer for 45 minutes more.
- Add the meatballs to the simmering sauce during the last 10 minutes of cooking.
- Serve over cooked pasta.
- The amount of sauce will serve 6 people. I listed the servings as 60 for 60 meatballs.

TOMATO & BASIL TURKEY BURGERS
I'd never used ground turkey before but saw this recipe in Recipes + and was itching to try it. These burgers are so easy & so full of flavour, you can use any flavour gourmet chunky dip, I used a mixture of the red pepper & basil ones. In Australia these dips are made by Wattle Valley and a few other companies, I'm not sure of the availability overseas but recipe #222384 or something similar could be used as the dip addition.

- Combine mince, breadcrumbs, egg and dip together in a mixing bowl, season with salt & pepper.
- Shape into 4 large flat patties, cover & chill for 20 minutes.

- Preheat grill to medium heat. Toss tomatoes with basil and 2 Tbsp.of the dressing; set aside. Heat remaining dressing in skillet on medium heat. Add mushrooms; cook and stir 5 min. or until tender and liquid has evaporated. Stir in 1/2 of the tomato mixture and cheese. Cool slightly.
- Mix meat and mushroom mixture. Shape evenly into 4 patties. Grill patties 7 to 9 min. on each side or until cooked through (160°F).
