STUFFED CHEESE POBLANOS



Stuffed Cheese Poblanos image

Enjoy these cheese stuffed poblanos that are served with tomato sauce - a flavorful Mexican side dish!

6 large poblano chiles
18 strips (3x1 inch) queso fresco or mozzarella cheese
3/4 cup shredded mozzarella cheese (3 oz)
Mexican-style cream
2 lb plum (Roma) tomatoes, cut in half
1/2 medium onion, cut in half
2 cloves garlic, peeled
1 small serrano chile, seeded
2 teaspoons chicken bouillon granules
1 teaspoon vegetable oil
3/4 teaspoon salt

Steps:

  • Preheat oven to 350F. Meanwhile on a gas stove on high or skillet heat chiles directly on flame until charred. Keep in plastic bag for 5 minutes. Peel chiles under cold water.
  • Open on one side, remove seeds. Fill each poblano with 3 strips of the cheese. Sprinkle about 2 tablespoons shredded mozarella cheese on each chile. Place in 9x13-inch glass baking dish.
  • Bake chiles 15 to 20 minutes or until cheeses are melted and chiles are soft.
  • Meanwhile, make tomato sauce. Place all sauce ingredients in food processor bowl or blender; process until smooth. Pour sauce into 2 quart saucepan. Cook over medium high heat about 15 minutes or until sauce is slightly reduced and dark red.
  • To serve, place tomato sauce on plate; top with stuffed poblano chile. Drizzle with mexican style cream.

Sausage and Cheese-Stuffed Poblano Peppers with Quick-Pickled Red Onions and Radishes image

Get ready for a new take on stuffed peppers! Stuffed with spiced ground pork, topped with melty cheese and garnished with quick pickles and cilantro, these poblano peppers are as beautiful to look at as they are delicious! You can swap out the pork for any protein you'd like and use the extra pickles for sandwiches or salads.

1/3 cup plus 1 tablespoon white vinegar
1/2 teaspoon granulated sugar
Kosher salt
1 small red onion, thinly sliced lengthwise
2 small radishes, thinly sliced
1 tablespoon olive oil
4 large poblano peppers, stemmed, halved lengthwise and seeded
1 pound ground pork
2 cloves garlic, grated
1 tablespoon smoked paprika
2 teaspoons chili powder
2 teaspoons ground cumin
6 ounces shredded jack cheese
Cilantro leaves and tender stems, for garnish

Steps:

  • Position a rack on the top of the oven and preheat to broil.
  • Combine the vinegar, sugar, 1 teaspoon salt and 1/3 cup warm water in a mason jar. Cover and shake to combine until the sugar and salt dissolve. Add the onions and radishes and set aside.
  • Drizzle the oil over the peppers, season with 1 teaspoon salt and arrange on a baking sheet cut-side up. Broil on the upper rack of the oven until blistered and softened, 4 to 6 minutes.
  • Mix together the pork, garlic, paprika, chili powder, cumin and 2 teaspoons salt in a large bowl. Transfer to a large skillet over medium-high heat and cook, breaking up the pork into small pieces with a wooden spoon, until browned and cooked through, 5 to 6 minutes. Remove from the heat, drain the excess fat and set aside to cool.
  • Stir half of the cheese into the pork. Distribute the mixture evenly in the cavities of the peppers. Top with remaining cheese and broil until melted and bubbly, 2 to 3 minutes.
  • Top with the pickled onions and radishes. Garnish with cilantro and enjoy!

Stuffed Poblano Peppers With Cream Cheese image

A recipe for earthy poblano peppers that have been roasted and stuffed with cream cheese and white cheddar cheese along with a mixture of seasonings, then grilled or baked until the insides are nice and gooey. One of my favorite stuffed pepper recipes.

4 poblano peppers
1 bit olive oil or 1 a cooking spray
8 ounces cream cheese, softened
4 ounces shredded white cheddar cheese
1 tablespoon spicy chili powder
1 teaspoon garlic powder
1/2 tablespoon ground cumin
1 lime, juice of
1 teaspoon chopped cilantro (to garnish)

Steps:

  • Get a grill going good and hot, to about medium-high heat.
  • Lightly oil the poblano peppers and set them on the grill. Close the lid. Flip the poblanos a few times throughout as you grill, about 10 minutes or so, until the poblano skins are nicely charred. Remove from heat and cool. Set them into a sealable baggie and allow them to steam. Cool, then remove and peel off the skins. (Alternatively, you can either oven roast or flame roast the poblano peppers. See the post discussion.).
  • Slit the poblanos up the side and open. Scoop out the insides.
  • In a mixing bowl, combine cream cheese, cheddar cheese, garlic powder, chili powder, cumin, and salt and pepper. Mix well.
  • Stuff the cheese into the poblano peppers and set them back onto the grill over indirect heat. Close the lid and cook about 10 minutes to allow the cheeses to melt. Alternatively, you can bake the cream cheese stuffed poblano peppers for 10 minutes or so in an oven at 375 degrees.
  • Remove and set onto serving plates. Squeeze lime juice over them and garnish with chopped cilantro.
  • Serve and enjoy!

Take juicy beef sliders to the next level by pairing them with an irresistible cheesy topping inspired by Mexican rajas con crema. Pretzel slider buns have the perfect amount of structure to stand up to the gooey, decadent sauce studded with blistered poblano peppers and onions.

2 poblano peppers
1 tablespoon vegetable oil
1/2 white onion, thinly sliced
2 cloves garlic, chopped
1/4 cup Mexican crema
4 ounces Oaxaca cheese, cubed
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter, melted
1 teaspoon chipotle chile powder
One 11-ounce package pretzel slider buns
1 pound ground beef, divided into 9 patties (1.5 to 2 ounces each)
2 plum tomatoes, sliced
1 cup cilantro leaves

Steps:

  • Roast the poblanos over an open flame or under the broiler, turning as necessary, until charred all over, about 8 minutes. Place in a medium bowl and cover with a plate to steam and loosen the skin, about 5 minutes. When cooled, peel off the blackened outer skin, remove the seeds and stems and discard. Slice the poblanos into thin strips. Set aside.
  • Set an oven rack as close as possible to the broiler. Heat the broiler to high.
  • Heat the vegetable oil in a medium skillet over medium heat until shimmering. Add the onion and cook, stirring often, until softened and translucent, about 5 minutes. Add the garlic and cook until slightly softened and fragrant, about 30 seconds. Stir in the poblanos and cook until everything is very soft, about 5 minutes. Stir in the crema and Oaxaca cheese and cook until the cheese is just melted. Reduce the heat to low, season with 1 teaspoon salt and keep warm.
  • Combine the melted butter, chipotle powder and 1 teaspoon salt in a small bowl. Split the slider buns, put on a baking sheet cut-side up and brush evenly with the butter mixture. Broil until golden around the edges, about 2 minutes. Transfer to a serving platter.
  • Place the beef patties on the baking sheet and season generously with salt and pepper. Broil to desired doneness, about 4 minutes for medium.
  • Put a patty on each bottom bun. Spoon some of the poblano sauce over each and top with a tomato slice and cilantro leaves. Close the sliders with the top buns.

1 can (10 oz) Old El Paso™ red enchilada sauce
1/4 cup chopped onion
1 package (0.85 oz) Old El Paso™ chicken taco seasoning mix
1 cup chopped cooked deli rotisserie chicken
1/2 cup Progresso™ black beans, drained, rinsed (from 15-oz can)
1/2 cup frozen, canned or fresh whole kernel corn
1 cup shredded Cheddar cheese (4 oz)
4 medium poblano chiles, halved lengthwise and seeded

Steps:

  • Heat oven to 425°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In blender, place enchilada sauce, onion and 1 tablespoon of the taco seasoning mix; cover and blend until smooth. Reserve 1/4 cup of sauce, and pour remaining sauce into baking dish.
  • In medium bowl, stir chicken, beans, corn, 1/2 cup of the cheese, remaining 1/4 cup of blended sauce and remaining taco seasoning mix.
  • Divide chicken mixture among chile halves, and arrange in baking dish. Cover with foil; bake 30 to 35 minutes or until chiles are tender and filling is heated through. Remove foil; top with remaining 1/2 cup cheese. Bake 4 to 5 minutes or until cheese is melted.

I love spicy foods, and this is one of many variations of stuffed peppers that we eat around here. Perfect with steaks.

4 poblano peppers
8 ounces monterey jack pepper cheese, shredded
1 lb ground beef
1 (1 1/4 ounce) burrito seasoning mix, packet

Steps:

  • To Prepare Peppers:.
  • Preheat broiler. Fill large bowl or sink with ice cold water.
  • On a foil covered rack in broiler, arrange peppers about a 1/2 inch from each other and broil about 2 inches from heat, turning peppers occasionally with tongs until skins are blistered and lightly charred, about 20 minutes. Place roasted peppers straight from the broiler into the ice cold bowl water. Turn your oven off of broil and your oven on at 400 degrees.
  • While peppers are broiling, shred jack cheese and place in refrigerator until ready to stuff peppers.
  • Remove peppers from water and peel the blistered skin. Once all skin is removed and discarded, cut the tops off peppers and remove the stems and seeds and slice down one side to create a opening for stuffing. Place peppers on cookie sheet and set aside while preparing your ground beef taco meat.
  • To Prepare Filling:.
  • Heat a heavy skillet over moderate heat unit hot, but not smoking and brown ground beef. Drain the browned ground beef, and place back into the heated skillet, add the burrito season (lawry's is preferred) and follow the instructions on the back of the package, will take about 15 minutes.
  • To Stuff Peppers:.
  • Keep peppers on cookie sheet while stuffing.
  • Place about 3 tablespoons full of ground beef on bottom of peppers and a thin layer of shredded jack cheese on top of ground beef and repeat (you should have 1 layer meat 1 layer cheese 1 layer meat and 1 layer cheese) Pull sides of peppers together until they lap over each other (appearing closed). Now place peppers in the 400 degree oven for 20 minutes or until cheese is completely melted.
