CHEESY BASIL-STUFFED CHICKEN BREASTS
I got this recipe out of The Best of America's Test Kitchen book. Its simple and it's a real family pleaser :) I served this with mashed potatoes and steamed broccoli for a complete meal. Note: Avoid thin chicken breasts for this recipe; they are difficult to stuff without tearing. Preshredded or part-skim mozzarella will also work in the filling, but it will be grainy.

- Adjust an oven rack to the middle position and heat the oven to 425 degrees.
- Combine the cheese, 2 Tbls. of the basil, cream, lemon juice, 2 teaspoons of the garlic, 1/2 tsp salt, and pepper to taste in a medium bowl.
- Pat the chicken dry with paper towels and cut off any fat. Cut a pocket in the thickest part of the chicken breast and gently work the knife back and forth until the pocket extends down into most of the breast.
- Scoop one-quarter of the filling into each breast.
- Seal the opening by threading a toothpick or wooden skewer through the chicken about 1/4 inch from the opening.
- Transfer the stuffed breasts to a 13 by 9-inch baking dish and spread evenly with mayonnaise.
- Pulse the bread in a food processor to coarse crumbs, about 8 pulses. Toss the breadcrumbs with 1 teaspoons garlic, 2 Tbls. basil, and 1 Tbls. of EVOO. Sprinkle the crumb mixture over the chicken, pressing lightly to adhere.
- Toss the tomatoes with 1 Tbls. EVOO, 1/2 teaspoons salt, and pepper to taste. Arrange in the baking dish around the chicken. Bake until the crumbs are golden brown and the thickest part of the chicken registers 160 degrees, about 25 minutes.
- Serve.

- Preheat the oven to 400 degrees F (200 degrees C).
- Split chicken breasts down the middle with a knife, but do not cut fully in half.
- Mix cream cheese, Parmesan cheese, 2 tablespoons lemon juice, buttermilk, 2 tablespoons garlic powder, 1/2 teaspoon pepper, and 1/2 teaspoon thyme together in a bowl. Divide mixture and stuff evenly into split chicken breasts. Set into a casserole dish.
- Mix mayonnaise, 2 tablespoons lemon juice, 1 teaspoon garlic powder, 1/2 teaspoon pepper, and 1/2 teaspoon thyme together in a separate bowl. Apply mayo mixture evenly to both sides of the chicken breasts.
- Bake, uncovered, in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 45 minutes. An instant-read thermometer inserted into the center of a chicken breast should read at least 165 degrees F (74 degrees C).

- Melt 1 tablespoon butter over medium-high heat in large skillet . Add mushrooms, onion and garlic; cook 7 minutes or until vegetables are tender and liquid is evaporated, stirring occasionally. Remove from heat; cool slightly.
- Stir 1 cup cheese and lemon pepper into cooled mushroom mixture; spread 1/3 cup mixture onto each chicken breast. Fold chicken lengthwise in half; secure each with 2 wooden picks. Melt remaining 2 tablespoons butter; dip chicken into butter and roll in crumbs. Place in lightly greased shallow baking dish or pie plate; drizzle with remaining melted butter.
- Bake in preheated 450°F oven 20 minutes or until golden brown and chicken is cooked through. Sprinkle with remaining cheese. Bake 3 minutes more or until cheese is melted. Remove wooden picks before serving.
CHEESY STUFFED CHICKEN BREAST
My youngest son enjoys Malibu Chicken made with breaded chicken patties and fried. I try to stay away from fried foods so I came up with this variation. It's easy, fairly quick and a nice presentation.

- 1. Cut a slit in each of the chicken breasts
- 2. Cut the cheese into strips, roll inside the canadian bacon and place one rollup inside each chicken breasts, securing with a toothpick.
- 3. Place bone side down in a greased baking dish.
- 4. Brush the chicken with olive oil.
- 5. Combine the remaining ingredients and sprinkle over top of the chicken

- 2. Stuff inside with both cheese's on the breast.
- 3. Then add garlic.
- 4. Sprinkle with sweet basil before closing up and securing with toothpicks or short skewers. (Make sure you have secured the opening because the next step is to roll in butter and bread crumbs.)
- 5. Melt the butter in a flat dish with sides so you can still roll the chicken in it.
- 6. Then roll in bread crumbs.
- 7. Place them in a baking dish or pan.
- 8. Pour remaining butter, or melt a little more, over the chicken.
- 9. Bake at 350 degrees for about an hour.
- 10. Make sure to pull out all the toothpicks or skewers before serving. (I like to use the short skewers because they don't get in the way and they are easier to take out once the chicken is ready.)

- Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish with olive oil, then sprinkle 3 pinches bread crumbs across the bottom.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, 10 to 11 minutes. Drain bacon slices on paper towels.
- Filet chicken breasts 90% of the way through and open like a hot dog bun. Spread 2 tablespoons chopped Parmesan cheese on one side of each breast. Top each with a bacon slice and 1 1/2 tablespoons shredded Parmesan.
- Close the breasts. Dip in beaten egg, then in bread crumbs. Place in the prepared baking dish. Sprinkle remaining shredded Cheddar over top.
- Cook in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 35 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
