SHRIMP QUESADILLAS

Number Of Ingredients 8

1 pound uncooked medium shrimp (peeled and deveined)
1 tablespoon olive oil
1/2 cup onion (chopped)
1/2 cup bell pepper (chopped)
2 cloves garlic (minced)
2 tablespoons taco seasoning
1-2 cups melting cheese (mozzarella, cheddar, Mexican blend or Monterey Jack)
6-8 Medium flour tortillas

Steps:

  • Heat 1 tablespoon oil in a large skillet or pan. Add the chopped onion, bell pepper, and garlic to the pan. Cook for 1 minute or until tender.
  • Add the shrimp and taco seasoning and cook for another 1-2 minutes or until shrimp begins to turn pink.
  • Transfer the mixture to a bowl and rinse and whip down the pan with a paper towel. Return the pan to the heat and spray cooking spray or brush with about 1 teaspoon vegetable oil.
  • Place a tortilla in the pan and sprinkle cheese on one side of the tortilla. Spoon about 5-6 shrimp or enough to cover with another sprinkle of cheese. Fold tortilla in half. Cook for 2-3 minutes on each side or until golden and crispy. Repeat for reaming tortillas.
  • Serve with Sour cream, salsa, or guacamole.

2 cups frozen corn, thawed
1 can (15 ounces) black beans, rinsed and drained
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 cup shredded reduced-fat Mexican cheese blend
1 can (4 ounces) chopped green chilies, drained
4 green onions, chopped
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon pepper
20 egg roll wrappers
Cooking spray
Salsa and reduced-fat ranch salad dressing, optional

Steps:

  • In a large bowl, combine the first nine ingredients. Place 1/4 cup mixture in the center of one egg roll wrapper. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Fold bottom corner over filling. Fold sides toward center over filling. Moisten remaining corner with water; roll up tightly to seal. Repeat., Place seam side down on baking sheets coated with cooking spray. Spray tops of egg rolls with cooking spray. Bake at 425° for 10-15 minutes or until lightly browned. Serve warm with salsa and dressing if desired. Refrigerate leftovers. Freeze option: Freeze cooled egg rolls in a freezer container, separating layers with waxed paper. To use, reheat rolls on a baking sheet in a preheated 350° oven until crisp and heated through.

1 can (14-1/2 ounces) diced tomatoes, well drained
3 to 4 jalapeno peppers, seeded and sliced
4 cups multigrain tortilla chips

Optional toppings: Sour cream, chopped fresh cilantro and additional jalapeno slices

Steps:

  • Preheat oven to 350°. Mix beans, tomatoes and jalapenos. Arrange chips in an even layer in a 15x10x1-in. pan. Top with bean mixture and cheese., Bake, uncovered, until cheese is melted, 10-12 minutes. Serve immediately with toppings as desired.

Ragú® Recipe Contest Entry. Mexican inspired shrimp with Ragu Four Cheese sauce served over black beans in corn tortillas. Incorporates green chiles, onion, garlic, lime juice, sour cream and avocado in the dish.

Number Of Ingredients 13

2 tablespoons cooking oil
1 garlic clove, minced
1/2 cup chopped onion
4 ounces chopped fire roasted and peeled green chilies, drained
1 lb shrimp, peeled, deveined and tails removed (if using frozen, thaw first)
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup Ragú® Pasta Sauce, four cheese sauce
1 (15 ounce) can black beans
1 tablespoon lime juice
12 (6 inch) corn tortillas
3/4 cup sour cream
1 avocado

Steps:

  • Heat oil in large frying pan, over medium heat. Add garlic and onion stirring until starting to soften, approximately 5 minutes. Add shrimp and cook until no longer pink (about 3-5 minutes). Sprinkle with salt and pepper. Add drained green chiles and Ragu four cheese sauce. Heat and stir until slightly thickened (about 5 minutes). Place in bowl to serve.
  • While cooking shrimp and cheese sauce, drain black beans reserving 1/4 cup of liquid. In small saucepan, heat black beans, reserved liquid and lime juice. Heat over medium heat for 3 minutes. Then reduce heat to low to keep warm until ready to serve. At serving time, drain black beans in colander, shaking to remove as much liquid as you can. Put in separate small bowl.
  • Bring large frying pan to medium heat. Heat corn tortillas for 20-30 seconds on each side. Keep warm until ready to serve by stacking on a warmed plate and cover with foil or in a covered tortilla keeper.
  • Cut avocado in half lengthwise, remove center, then run knife lengthwise to create thin wedges. Use a large spoon to scoop out wedges from skin. Place on plate to serve.
  • Guests will place a row of black beans down the center of the heated tortillas, cover with shrimp/cheese sauce, a heaped teaspoon of sour cream and top with a wedge of avocado.

4 cups white beans or gigante bean
6 ounces extra-virgin olive oil
4 ounces garlic, sliced
4 ounces shallots, sliced
10 ounces chicken stock
4 tablespoons butter
2 lemons, zested
3 ounces Italian parsley leaves, chopped
Kosher salt and freshly ground black pepper
1 1/2 quarts apple cider (recommended Knudsen's)

Steps:

  • In a large saucepan cook beans in boiling water for 30 minutes until tender. Drain.
  • Heat oil, garlic and shallots over medium heat until golden. Add beans and stir until nicely coated with oil. Add chicken stock and simmer until 1/3 liquid remains, about 15 to 20 minutes Add butter and cook until thickened. Finish with grated lemon zest and parsley. Season with kosher salt and freshly ground black pepper. Bring cider to a boil and reduce by 3/4. Drizzle on plate.

Whether or not you've fallen for this cheesy white-bean tomato bake, we'd like you to meet its bolder counterpart, smoky and spiced, with lots of melty cheese. Black beans shine in a deep-red mixture of fried garlic, caramelized tomato paste, smoked paprika and cumin. The whole skillet gets coated in a generous sprinkling of sharp Cheddar or Manchego cheese, then baked until melted. The final result is what you hope for from a really good chili or stew, but in a lot less time. For a spicier rendition, add a pinch of cayenne with the paprika, or douse the final skillet with hot sauce. Serve with tortillas, tortilla chips, rice, a baked potato or fried eggs.

3 tablespoons extra-virgin olive oil
5 garlic cloves, peeled and sliced
1/4 cup tomato paste
1 1/2 teaspoons smoked paprika
1/4 teaspoon red-pepper flakes
1 teaspoon ground cumin
2 (14-ounce) cans black beans, drained and rinsed
1/2 cup boiling water
Kosher salt and black pepper
1 1/2 cups grated Cheddar or Manchego cheese (from about a 6-ounce block)

Steps:

  • Heat the oven to 475 degrees. In a 10-inch ovenproof skillet, heat the olive oil over medium-high. Fry the garlic until lightly golden, about 1 minute. Stir in the tomato paste, paprika, red-pepper flakes and cumin (be careful of splattering), and fry for 30 seconds, reducing the heat as needed to prevent the garlic from burning.
  • Add the beans, water and generous pinches of salt and pepper, and stir to combine. Sprinkle the cheese evenly over the top then bake until the cheese has melted, 5 to 10 minutes. If the top is not as browned as you'd like, run the skillet under the broiler for 1 or 2 minutes. Serve immediately.
