GREEK SPINACH & CHEESE QUICHE SQUARES

Steps:
- Heat oven to 350ºF.
- Bake butter in 9-inch square baking dish in 2 min. or until melted. Remove dish from oven; brush butter onto bottom and sides of dish.
- Beat eggs with mixer in large bowl. Add flour, milk and baking powder; mix until blended. Stir in spinach, cheeses and onion. Spoon into prepared dish.
- Bake 35 min. Let stand 15 min. before cutting into squares to serve.

Steps:
- Cook spinach according to package instructions and drain.
- Preheat oven to 350.
- Melt butter in a 9x13" baking pan (don't let it burn).
- Remove from oven.
- Combine remaining ingredients with spinach and mix well.
- Turn into pan with melted butter, stirring in butter and spreading evenly.
- Bake 30 minutes.
- Cool 5 minutes.
- Cut into large 3"x3" squares to serve as a side dish or 1 1/2" squares to serve as an appetizer.

CHEESY SPINACH SQUARES
My mother used to make these for Thanksgiving and Christmas. They are easy to make and is great for holiday meals. You will love this recipe even if you don't like spinach!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13-inch baking dish.
- Bring a large pot of water to a boil and add spinach. Cover, reduce heat, and cook until heated through, 5 to 6 minutes. Drain well, squeezing out excess moisture with your hands. Set aside to cool.
- Melt butter in a saucepan over medium heat; stir in onion and cook until soft and translucent, 5 to 10 minutes.
- Transfer onions to a double boiler; mix in milk, Cheddar cheese, flour, and ground black pepper; cook and stir until blended and smooth, about 5 minutes. Remove from heat; fold in eggs and spinach. Pour the spinach mixture into baking dish and smooth top.
- Bake, uncovered, in the preheated oven until a toothpick inserted in the center comes out clean, about 30 minutes. Cool briefly before cutting into squares.

EASY CHEESY SPINACH
Steps:
- Heat the butter in a 12-inch saute pan over moderate heat. Add the onions and cook until soft, about 8 minutes. Whisk in the cream cheese and let melt. Fold in the spinach until evenly combined. Add up to 3 tablespoons water if the mixture seems too dry. Sprinkle the nutmeg on top and season with salt and pepper.
- BYOC: Lemon zest and juice would bring a little bit of sunshine to this dish. Just add with the salt and pepper.
SPINACH CHEESE SQUARES
I found this in my mother's collection of recipe clippings, from the 1960's. The only change I made was to reduce the salt to one-half teaspoon. You could probably substitute frozen chopped spinach to save time. I think these taste great at room temperature.

Steps:
- Preheat oven to 350 degrees.
- Melt butter in a 9 X 13 pan. Either melt butter in microwave and then pour into pan, or place baking pan with butter into oven for a minute or two; then remove from oven and tip the pan so that the butter coats evenly on bottom and sides.
- Beat eggs.
- Mix flour into beaten eggs.
- Stir in milk, salt and baking powder.
- Add cheese and spinach, mixing well.
- Add onion and seasonings, stirring thoroughly.

Steps:
- Heat oven to 350 degrees F.
- Butter a 13 x 9-inch baking pan.
- Place the butter in the prepared baking dish, and melt in the oven; remove pan and set aside.
- In a large bowl beat the eggs thoroughly.
- Blend in flour, half and half, cayenne, garlic powder and Parmesan cheese seasoning salt, black pepper and baking powder.
- Add in 2-1/2 cups grated cheddar or mozzarella cheese, green onion and spinach; mix well.
- Spoon the mixture into baking dish on top of the melted butter, and level off.
- Drizzle the top with 2 tablespoons melted butter.
- Sprinkle with grated Parmesan cheese.
- Bake for about 30 minutes or until golden brown and set.
- Remove from oven, and cool for 40-45 minutes.
- If desired you may sprinkle about 1 cup shredded cheddar or mozzarella cheese immediately after baking.
- Cut into squares.
- Note: these squares freeze very well.

- Heat oven to 180C/ 160C fan/gas 4. Mash feta in a large mixing bowl, add the ricotta and mash again to thoroughly mix. Stir in the spinach, spring onions, Parmesan, egg, nutmeg and plenty of seasoning with half the breadcrumbs.
- Brush a 20 x 30cm tin with a little oil. Layer in half the filo sheets, brushing each with oil before adding the next. Scatter remaining breadcrumbs evenly over the base. Spoon in the ricotta filling and gently spread, so as not to dislodge the breadcrumbs. Cover with remaining filo, brushing with oil as you go, then score into portions. Bake for 35-40 mins until golden and crisp. When cool, freeze in individual squares. Defrost overnight in the fridge and eat cold, or warm in a microwave.
