This rich, cheesy side dish is such an excellent meal extender that I always keep it in mind whenever I feel my menu needs a boost. It's a quick and easy casserole to fix...and is always devoured in a hurry! -Shirley McKee, Varna, Illinois

Yield 2 casseroles (12 servings each).

Number Of Ingredients 10

2 packages (1 pound each) wide egg noodles
1/2 cup butter, cubed
1/4 cup all-purpose flour
1 teaspoon garlic salt
1 teaspoon onion salt
5 to 6 cups 2% milk
2 pounds process cheese (Velveeta), cubed
TOPPING:
1/2 cup dry bread crumbs
2 tablespoons butter, melted

Steps:

  • Cook noodles according to package directions; drain. Meanwhile, in a Dutch oven, melt butter. Stir in the flour, garlic salt and onion salt until smooth; gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add the cheese; stir until melted. Stir in noodles. , Transfer to two greased shallow 2-qt. baking dishes. Combine the bread crumbs and butter until crumbly; sprinkle over casseroles. Bake, uncovered, at 350° for 25-30 minutes or until golden brown.

This is my version of a Tuna Casserole using Salmon. This is my own creation.

Number Of Ingredients 10

1 can(s) cream of chicken soup
1 can(s) boneless skinless salmon
1 1/2 cup(s) no yolk egg noodles
1/2 cup(s) milk
6 ounce(s) velveeta cheese
1/2 cup(s) cubed breadcrumbs crushed
1 cup(s) peas and carrots, frozen
1 teaspoon(s) old bay seasoning
1/2 teaspoon(s) salt and pepper
4 tablespoon(s) butter, melted

Steps:

  • Cook egg noodles to alden te. Drain.
  • Drain salmon and fluff. add to a bowl along with the soup, milk, cheese, vegetables, salt and pepper half of old bay seasoning. Add egg noodles and mix.
  • Crush bread stuffing add rest of old bay seasoning. Melt butter.
  • Pour Noodle Mixture in to a 2 quart baking dish, sprayed with cooking spray. Top with Bread crumbs and melted butter.
  • Bake at 375 for 40 to 45 minutes.

This is such a simple recipe, and it is so delicious! Salmon is baked with garlic and dill, and topped with Cheddar cheese and green onions.

2 pounds salmon fillets
2 cloves garlic, crushed
1 teaspoon dried dill weed
salt to taste
ground black pepper to taste
1 cup shredded Cheddar cheese
6 green onions, chopped

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Place the salmon on a large piece of foil, and season with garlic, dill, salt, and pepper. Seal foil around the salmon. Place on a baking sheet.
  • Bake 20 minutes in the preheated oven. Top with Cheddar cheese and green onions, and continue baking 5 minutes, or until cheese is melted and fish is easily flaked with a fork.

This recipe I got out of the Taste Of Home Magazine a number of years ago and have been making it ever since. It has been taken to potlucks many times. So easy to put together. I hope you enjoy it as much as we do.

1 (10 3/4 ounce) can cream of chicken soup
1 (10 3/4 ounce) can cream of broccoli soup
1 1/2 cups milk
1 cup parmesan cheese
1 minced garlic clove
2 tablespoons parsley flakes
1/2 teaspoon pepper
1/2 teaspoon salt
1 (16 ounce) package wide egg noodles, cooked and drained
1 (16 ounce) package frozen broccoli carrots cauliflower mix, thawed
2 cups corn, thawed

Steps:

  • In a large bowl combine the soups, milk,3/4 cup parmesan cheese, garlic, parsley, pepper and salt; mix well.
  • Add noodles and vegetables and mix well.
  • Pour into a greased 9x13 pan.
  • Sprinkle with remaining parmesan cheese.
  • Cover with foil and bake at 350°F for 45-50 minutes.

1/2 cup mayonnaise or 1/2 cup salad dressing
1/4 cup milk
1/4 cup parmesan cheese
1 (16 ounce) can salmon, drained, flaked
1 (10 ounce) package frozen peas, thawed
2 cups egg noodles, cooked, drained
1 tablespoon chopped onion
3/4 cup breadcrumbs

Steps:

  • Preheat oven to 350°F.
  • Combine condensed soup, mayonnaise or salad dressing, milk, and cheese, mixing well.
  • Stir in salmon, peas, onion, and noodles; toss lightly.
  • Pour mixture into a 1 1/2 quart ovenproof casserole; cover and bake at 350°F for 30 minutes.

1 can (10-3/4 ounces) condensed cream of broccoli soup, undiluted
1-1/2 cups 2% milk
1 cup grated Parmesan cheese, divided

1/2 teaspoon pepper
