BAKED RANCH CHICKEN

- Preheat the oven: Preheat the oven to 375°F. Spray a 9x13-inch baking dish with cooking spray.
- Prep Dredge: In a shallow plate, combine the ranch dressing mix with the breadcrumbs and parmesan cheese. Place the mayo in another shallow plate.
- Coat Chicken: Dredge the chicken breasts first through mayo on both sides, then through the breadcrumb mixture. Place into the prepared baking dish.
- Bake: Transfer the baking dish to the preheated oven and bake for 40 minutes or until a thermometer reads 165°F when inserted into the thickest part of the chicken breast.

RANCH CREAM CHEESE CHICKEN (CRACK CHICKEN)
This ranch cream cheese chicken recipe has an irresistible topping with bacon and melty cheddar cheese that's baked to perfection!

- Preheat your oven to 375F and move the rack to the top third of the oven.
- Cook the bacon in a large oven-proof skillet until crispy (I cut it up quickly using kitchen shears). Transfer the bacon to a paper towel lined plate, and leave about 2 tablespoons of bacon fat in the skillet.
- Season the chicken breasts with the garlic powder and pepper, then add them to the skillet and sear for 5 minutes/side over medium-high heat.
- Meanwhile, add the cream cheese (microwave it for 30 seconds or until soft if it's straight out of the fridge), ranch seasoning, scallions, and about half of the cooked bacon to a bowl. Stir until smooth.
- Once the chicken has been seared, take the skillet off the heat. Spread the cream cheese mixture equally over the top of each piece of chicken, then sprinkle the cheddar over top, followed by the rest of the bacon. If you don't have an oven-proof skillet, transfer the chicken to a baking dish for this step.
- Bake, uncovered, for 20 minutes. If your chicken breasts are on the smaller side, try 15 minutes then test for doneness (chicken is cooked at 165F).
- Let the chicken rest for a few minutes prior to serving so it's nice and juicy.

- Preheat the oven to 400 degrees. Spray a 9X13 inch baking dish with cooking spray.
- Place chicken breasts in a single layer on the bottom of the baking dish.
- In a medium bowl, mix mayo, garlic, shredded cheese and ranch seasoning together.
- Spread mayo mixture on top of each chicken breast.
- Place uncovered into the oven and cook for 30 minutes or until completely cooked through and golden brown on top.
- Serve immediately.

CHEESY CHICKEN RANCH SANDWICHES
Each sandwich is filled with an entire chicken breast. No one will leave the table hungry! The recipes directs you to broil the sanwiches. But I prefer to bake them the way the Barefoot Contessa does, so I have included her directions. Baking them makes the breasts so very moist and luscious! However broiling does take less time -- 10 to 12 minutes total. Either way, you will enjoy these sandwiches.

- Preheat oven to 350 degrees F. Place chicken breasts on a non-stick baking sheet and drizzle with olive oil. Rub to cover the entire breast with the oil. Arrange breasts skin side up and sprinkle with salt and pepper. Bake in preheated oven 45 minutes.
- When breasts are cooked, cut the meat from the bone and brush each with ranch dressing.
- Top each breast with a slice of cheese. The heat from the meat will melt the cheese sufficiently.
- Spread ranch dressing on both halves of each roll, Grill or broil the roll halves to add crunch to your sandwiches, if desired.
- On the bottom roll, place a leaf of lettuce. Top this with a chicken breast.
- You may serve the sandwiches with your favorite fresh fruit.

EASY CHEESY RANCH CHICKEN

- Preheat oven to 350 degrees.
- Cover cookie sheet with aluminum foil.
- Poor ranch dressing into a medium sized bowl, and set aside.
- In a separate bowl, combine Parmesan cheese, Cheddar cheese, and the packet of ranch dressing mix.
- Mix until well combined.
- Dip thawed chicken breasts into the bowl of ranch and place on the covered cookie sheet.
- Sprinkle the top of the chicken breast with the cheese and ranch seasoning mixture, until you can't see the chicken breast.
- Place the ranch and cheese covered chicken breasts into the oven and bake for 30 minutes or until the chicken is cooked all the way through.
- Sprinkle with extra Cheddar and Parmesan cheese when it is freshly out of the oven (our family really likes cheese)
