As much as we love the flavor of these zesty, cheesy veggies, we might love their ease of cleanup more. Just toss the foil-packs when you're done!

Time 30m

Yield 4 servings

Number Of Ingredients 8

1/2 lb. small red potatoes (about 3), cut into 1-inch pieces

GRILLED CHEESY LOADED POTATOES

Grilled Cheesy Loaded Potatoes image

This recipe is sponsored by Cabot Creamery Co-operative. This dish satisfies your craving for a fully loaded baked potato yet doesn't require turning on the oven. It's got all your favorite fixings -- cheese, bacon and sour cream -- but is cooked entirely on the grill!

Provided by Food Network Kitchen

Categories     side-dish

Time 1h

Yield 6 servings

Number Of Ingredients 6

8 slices bacon, cut into 1-inch pieces
3 russet potatoes, thinly sliced
Kosher salt and freshly ground black pepper
8 ounces Cheddar, grated
2 tablespoons sour cream
3 scallions, sliced

Steps:

  • Prepare a grill for direct and indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes, turn off one of the side burners and turn the remaining burners down to medium. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.)
  • Heat a 10-inch cast-iron skillet on direct heat and add the bacon; cook, stirring often, until crispy, about 5 minutes. Remove the bacon with a slotted spoon to a paper-towel lined plate; set aside.
  • Add the potatoes and sprinkle with salt and pepper. Stir to coat with the bacon fat, then move to indirect heat and cover the grill. Cook, uncovering the grill and stirring every 5 minutes, until the potatoes are tender, about 20 minutes.
  • Sprinkle with the Cheddar and move back to direct heat. Cook, uncovered, until the potato bottoms are golden and the cheese is melted, about 10 minutes, depending on the heat of your grill. Let cool for 10 minutes, then dot with the sour cream and sprinkle with the scallions and reserved bacon.

CHEESY GRILLED POTATOES

Categories     Potatoes

Time 1h15m

Number Of Ingredients 5

3 medium baking potatoes
2 c cheddar or colby jack cheese, shredded
1/2 c onion, minced
seasoning of your choice
3 Tbsp butter, divided

Steps:

  • 1. Cut three pieces of aluminum foil and place two of them cross-ways on top of each other, shiny side up. Fold the edges of the bottom piece over the top piece and then fold the edges of the top piece over. Set aside.
  • 2. Cut the potatoes into cubes and mix them with the onion and garlic. Place on the folded aluminum foil. Put each tablespoon of butter on top of potatoes, spaced out. Sprinkle with seasoning.
  • 3. Fold in two sides of the aluminum foil over the potatoes, then roll the other two sides in. Take the third piece of aluminum foil and fold over the top.
  • 4. Put in grill at 200 degrees for 1 hour. It's helpful to put them on right when the charcoal is lit and leave them in while you're getting the rest of your meal prepared, Matt will even leave them in and put whatever meat we're having in with them.
  • 5. RIGHT when you take them off the grill, open up the foil and put the cheese on top to melt. TA-DA!!!!

CHEESY ONION POTATOES

Cheesy Onion Potatoes image

If you are not a garlic-lover then omit the garlic powder, since the onion soup mix is salty I advise not to add in any extra salt. --- this makes a huge amount, but don't worry there won't be any leftovers! --- make certain to let the dry onion soup mixture sit in the hot melted butter for 30 minutes this will allow the onion flakes to soften, a few more or less potatoes will not matter -- these may also be made in a large greased heavy foil pan and cooked on the outdoor grill ---all amounts may be adjusted to suit taste :)

Categories     Potato

Time 1h15m

Yield 6-8 serving(s)

Number Of Ingredients 8

6 -8 potatoes (quartered or sliced peeled or unpeeled)
1/2 cup butter, melted
1.5 (1 1/4 ounce) packages lipton dry onion soup mix
1 1/2 teaspoons garlic powder
1/4 teaspoon cayenne pepper (optional I like to add it in)
1/2-1 teaspoon fresh ground black pepper
2 cups grated cheddar cheese (can use less)
5 large green onions, chopped

Steps:

  • If you are using unpeeled potatoes make certain to wash and scrub the skin, and if you are slicing the potatoes ahead of time and soaking in water the potatoes must be dried with a paper towel before using in this recipe.
  • Place the hot melted butter in a bowl; add in garlic powder, dry onion soup and cayenne pepper; mix to combine and allow to sit for about 30 minutes to soften the onion flakes (you may leave it sit for more time if desired) stir occasionally.
  • Slice the potatoes into quarters, then place in a large roasting pan; sprinkle with freshly ground black pepper.
  • Pour the butter mixture over the potatoes; toss to coat (I use my hands for this).
  • Preheat oven to 400 degrees F.
  • Set oven rack to bottom position.
  • Bake uncovered 30 minutes.
  • Remove and stir the potatoes.
  • Place back in the oven and bake uncovered for another 20- 30 minutes or until just fork tender, removing and stirring another time while cooking (cooking time will depend on the thickness of the potatoes).
  • Sprinkle with cheese and green onions over the hot potatoes.
  • Serve immediately.

CHEESY POTATOES ON THE GRILL

Cheesy Potatoes on the Grill image

What a great way to have potatoes off the grill. Great for a camping trip! If no is grill available you could use a campfire! This was so yummy.

Provided by Shawn C

Categories     Potato

Time 40m

Yield 3 serving(s)

Number Of Ingredients 8

2 large red potatoes
3 tablespoons butter, sliced fairly thin
2 tablespoons onions, minced
1 garlic clove, minced
salt and pepper
1/4 cup parmesan cheese, grated
1/4 cup mozzarella cheese, shredded
1/4 cup cheddar cheese, shredded

Steps:

  • You will need 2 large pieces of heavy duty aluminum foil.
  • Spray the bottom layer of the foil packet heavily with non-stick spray.
  • Scrub potatoes well and slice fairly thick.
  • Layer in a slightly overlapping way on top of one of the pieces of foil, but not piled up in a bunch.
  • Sprinkle the onion and garlic over the potatoes.
  • Season liberally with salt and pepper.
  • Layer slices of butter all over the potatoes.
  • Sprinkle the Parmesan, Mozzarella and Cheddar cheese on the potatoes.
  • Lay the other piece of foil over the potatoes and fold all the edges in all the way up to the potatoes inside the packet. You don't want the top layer of foil to be touching the cheese inside too much so do not mash it down.
  • With a small knife or scissors cut 3 tiny holes in the top center of the foil packet.
  • Lay packet on a hot grill and cook over medium heat for about 30 minutes.
  • Remove and let sit for about 5 minutes.
  • Be careful when tearing off the foil top because steam could burn you.

CHEESY POTATOES AND ONIONS FOR THE GRILL

1/2-1 teaspoon garlic powder

  • Make one or two very small pin-holes in the top of the foil to allow heat to escape (or cover the foil pan tightly with a sheet of foil, then make a small hole/s in the top of the foil).
  • Place the foil packet or foil pan on the grill, cover with the grilling lid and cook for about 40 minutes or until the potatoes are tender.

CHEESY POTATO BACON PACKETS FOR THE GRILL

Cheesy Potato Bacon Packets for the Grill image

I have been making these for years, it's a family favorite! all ingredients are wrapped in a foil pouch then grilled for about 30-40 minutes, add in some cooked cubed ham for a complete meal, you could even make the packets well in advance then refrigerate until ready to grill :) Make certain to use only large heavy-duty foil for this and spray the inside of the foil generously!

Provided by Kittencalrecipezazz

Categories     Potato

Time 50m

Yield 6 serving(s)

Number Of Ingredients 10

6 large potatoes (sliced 1/4-inch thick)
2 medium onions, chopped
1/3 cup grated parmesan cheese
1 cup grated cheddar cheese, shredded
1 cup mozzarella cheese, shredded
12 slices bacon, cooked and crumbled (I just use a 1-pound package of bacon)
6 tablespoons butter, cut into small pieces (use 3 tablespoons for each packet)
2 teaspoons seasoning salt
black pepper
shredded cheese

Steps:

  • Divide the sliced potatoes and onions equally between two pieces (about 18-inches each) heavy-duty foil, that has been sprayed liberally with cooking spray.
  • Sprinkle with seasoning salt, pepper and garlic powder; tossing lightly with hands to coat with seasonings.
  • In a bowl combine grated cheddar mozzarella and Parmesan cheese; divide and sprinkle over the potatoes and onions.
  • Divide/top with bacon and butter cubes.
  • Bring opposite ends of the foil together over filling and fold down several times.
  • Fold unsealed ends toward filling and crimp tightly (making a sealed packet, you may poke a small hole on top of the packet to let steam escape).
  • At this point to you may refrigerate for a few hours until ready to grill.
  • Place on grill over medium heat for about 35-40 minutes or until potatoes are fork-tender.
  • Remove from grill, carefully open the packets (be careful these packets have lots of steam inside, so open with care!) and sprinkle with more grated cheese.

  • Caramelize Onions: Melt the butter in a large skillet over medium heat then add the sliced onions. Cook on medium for 10 minutes, stirring occasionally. Reduce the heat to medium-low and cook for another 30-40 minutes until the onions are golden brown and caramelized. Stir the onions occasionally while cooking – if they are starting to stick to the pan, you can add a splash of water. Adjust the heat as necessary depending on your stove top. Once done, stir in the salt, pepper, and thyme.
  • Slice Potatoes: While the onions are cooking, peel and thinly slice the potatoes. They should be 1/8 inch or even thinner. If the potato slices are too thick, then they will take way too long to cook. I recommend using a mandoline, carefully, to thinly and evenly slice the potatoes. Add the potato slices to a large bowl of ice water to keep them from getting brown.
  • Make Cheese Sauce: Get the oven preheating to 375 degrees F and make the cheese sauce. Start by melting the butter in a pot over medium and slowly whisking in the flour – to make a roux. Cook and stir until the roux is golden in color. Slowly whisk in the milk until smooth. Bring to a gentle simmer then stir in about half of the cheese, the thyme, and a pinch of salt and pepper. Stir to combine and melt the cheese. The sauce should be smooth and thick enough to coat the back of a spoon – you can let it simmer for a few minutes to thicken. Remove pot from heat.
  • Assemble Scalloped Potatoes – Well grease a 9×13 inch baking dish with cooking spray. Layer half of the potatoes to the bottom of the baking dish – it’s best to lay each potato slice individually vs adding stacks that will take too long to cook. Pour half of the cheese sauce over the potato slices then sprinkle over about half of the caramelized onions and half of the remaining shredded cheese. Top with the remaining potato slices and pour over the rest of the cheese sauce. Finish by adding the rest of the onions, the remaining cheese, and sprinkle the breadcrumbs on top.
