Number Of Ingredients 8

1 Lb Ground Beef
1 Package of Gluten Free Taco Seasoning
1/4 Cup White Onion (Diced)
1 Green Bell Pepper (Diced)
1 14.5 oz Can of Diced Tomatoes with Green Chilies
1 8 oz Can of Tomato Sauce
1 1 lb Bag of Simply Potatoes Southwest Diced Potatoes
2 Cups Mexican Blend Shredded Cheese

Steps:

  • Pre-heat the oven to 350*.
  • Cook and prepare the ground beef in a large skillet on medium high heat, then add in the taco seasoning in accordance with the package instructions.
  • Add in the onions and peppers, let these cook for 5-10 minutes or until soft.
  • Stir in the diced tomatoes and tomato sauce.
  • Spray a 9x13 baking dish with nonstick cooking spray, then evenly place the potatoes in the dish.
  • Top the potatoes with the meat mixture.
  • Lastly, sprinkle the cheese on top.
  • Bake for 30 minutes or until cheese is nicely melted.

Serve it with ham, roast beef, turkey-it'll complement whatever showstopper you serve. It's also easy enough to enjoy any time of year, since it's made in a skillet.

2 tablespoons salted butter
3 pounds Yukon Gold potatoes, peeled and very thinly sliced
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh chives, plus more for garnish
1 cup shredded Gruyère
1 cup shredded sharp Vermont white Cheddar
1/2 cup shredded fontina cheese
2 cups heavy cream
2 cloves garlic, minced
1/4 teaspoon grated nutmeg
1/2 cup sour cream

Steps:

  • Preheat the oven to 375 degrees F.
  • Butter a 12-inch cast-iron skillet. Arrange half of the potatoes in the skillet. Sprinkle with salt and pepper, half the chives, and half of each of the Gruyère, Cheddar and fontina cheeses. Repeat the layers once.
  • Heat the cream, garlic, nutmeg, 1/2 teaspoon salt and 1/2 teaspoon pepper in a medium saucepan over medium heat until bubbles form around the edges, about 3 minutes. Remove from the heat and stir in the sour cream. Pour the cream mixture over the potatoes in the skillet. Cover tightly with aluminum foil. Bake until the potatoes can be easily pierced with a knife, about 45 minutes.
  • Uncover and bake until the cheese is browned and the edges are bubbly, about 15 minutes. Broil for 2 minutes, if desired. Remove the skillet from the oven and sprinkle with more chives before serving.

I came up with this for lunch today. It isn't exactly "figure friendly" but it sure is good!! Serve with taco chips or beans or any side you wish.

1 lb ground beef
1 potato, peeled and chopped (1/2-inch squares, like homefries)
2 cups vegetable oil or 2 cups canola oil
1/3 cup water
1 tablespoon chili powder
1 teaspoon ground cumin
1 tablespoon cajun seasoning (Tony Chachere's is my favorite)
1 cup cheddar cheese or 1 cup Mexican blend cheese, shredded

Steps:

  • Heat oil to medium high heat and fry potato pieces until crispy on the outside, and soft on the inside, like homefries. Drain on a paper towel.
  • Meanwhile, in a seperate skillet, brown ground beef until done through. Drain well.
  • Return beef to skillet and add water, chili powder, cumin and cajun seasoning. Stir to make a taco sauce.
  • Add potatoes and stir until sauce coats potatoes.
  • Add cheese and stir until melted. Serve immediately.

You may be familiar with that one-skillet macaroni dish that comes in a box where all you have to add is ground beef? Well, this is my version, with a little Tex-Mex twist. The whole family will eat it up, and it's so easy to put together.

1 tablespoon vegetable oil
1 cup diced onion
2 cloves garlic, minced
1 pound ground chuck
1 tablespoon Miss Brown's House Seasoning, recipe follows
2 tablespoons tomato paste
1 tablespoon chili powder
2 teaspoons ground cumin
1 1/2 cups beef stock
8 ounces elbow pasta, cooked according to package directions
One 8-ounce block sharp Cheddar, shredded
Kosher salt and freshly ground black pepper
Sour cream and chopped green onions, for serving, optional
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika
1 tablespoon kosher salt
1 tablespoon freshly ground pepper

Steps:

  • Heat the oil in a large cast-iron skillet over medium heat. Add the onion, garlic, ground beef and House Seasoning. Cook until the veggies begin to soften and the beef is slightly browned and no longer pink, about 7 minutes. Stir in the tomato paste, chili powder, cumin and beef stock.
  • Increase the heat to medium-high and bring the mixture to a rolling boil. Reduce the heat to low and cook until the sauce reduces, 5 to 10 minutes. Add the pasta and continue to cook, stirring constantly, until the liquid starts to slightly absorb. Add the cheese and remove from the heat. Season with salt and pepper.
  • To serve, top with the sour cream and sprinkle with the green onions, if using.
  • Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.

1 (28 ounce) package o'brien frozen hash browns with onions and peppers, thawed, divided
1 1/2 lbs ground beef or 1 1/2 lbs ground chicken
1 1/2 cups salsa
2/3 cup water
1 (1 1/4 ounce) package taco seasoning mix
2/3 cup water
2 1/2 cups shredded colby-monterey jack cheese
cooking spray

Steps:

  • In a medium skillet over medium heat, brown ground beef.
  • Drain and return to skillet.
  • Add taco seasoning and water.
  • Stir until water is absorbed, about 5 minutes; add salsa, mixing well.
  • With cooking spray, coat a 8 x 11-inch dish.
  • Spread half of potatoes evenly over bottom of dish.
  • Then spread half of ground beef mixture over potatoes.
  • Sprinkle with half of the cheese.
  • Repeat layers ending with cheese.
  • Bake at 350°F for about 25 to 30, or until cheese is a nice golden brown.

  • In a large bowl, mash the potatoes and then stir in the sour cream, cheese, paprika, cumin, chili powder, garlic powder, onion powder, cayenne, and salt until completely combined.
  • In a large skillet or dutch oven, heat oil until shimmering. While the oil is heating, wrap 3-4 tortillas at a time in a paper towel and warm them in the microwave for 15-20 seconds (they're much less likely to break when you fill them with the potatoes if they're warm!).
  • Place 2 large tablespoons of the potato mixture on one half of a warmed corn tortilla. Gently fold the tortilla in half and press together around the edges. Repeat with the remaining tortillas*.
