- Lightly cover the bottom of a 10-inch non-stick skillet with butter. Heat butter over medium-low heat until hot.
- Add one package Simply Potatoes Diced Potatoes with Onion to skillet. Cover with lid. Cook for 10 minutes, turning every 3 to 4 minutes.
- Add 3 cups of chopped bell peppers. Cover with lid. Cook for 3-4 minutes, turning every 2 minutes.
- Add 2 cups of grated sharp cheddar cheese and 4 cups of spinach. Cook for 2 minutes, turning constantly until cheese is melted and spinach is wilted.

- Wash potatoes and cut into wedges or slices.
- Combine cheese, salt, garlic, paprika and stir well.
- Arrange potatoes in lightly greased 15x10x1 pan.
- Brush margarine on potatoes and sprinkle cheese mixture on top.
- Bake 375F, uncovered for 40 minutes till tender.
CHANA MASALA CHEESE FRIES
These sheet pan chana masala fries hit on all levels. This spin on chana masala leans toward vegetarian chili, with a heavy dose of tomatoes.

- If using whole spices, finely grind coriander and cumin in a spice mill. Combine coriander, cumin, garam masala, chile powder, and turmeric in a small bowl.
- Heat oil in a large pot over medium. Add onion and ½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt and cook, stirring occasionally, until golden and softened, 8-10 minutes. Stir in serrano chiles (add up to 2 depending on your heat preference and how spicy your chiles are), garlic, and ginger and cook, stirring occasionally, until starting to soften and fragrant, about 2 minutes. Add spice mixture and remaining 1½ tsp. Diamond Crystal or ¾ tsp. Morton kosher salt and cook, stirring, 1 minute (be careful not to burn spices).
- Add chickpeas, tomatoes, and 1½ cups water to pot and stir to combine. Bring to a gentle simmer, then reduce heat to medium-low and cover pot. Cook until slightly thickened, 20-25 minutes. Uncover and mash about one third of chickpeas with a potato masher or fork. Continue to cook, uncovered, stirring occasionally, until chana masala is thick but spoonable, 8-10 minutes more. Remove from heat and cover to keep warm.
- While the chana masala is cooking, preheat oven to 450°. Place sweet potatoes on a rimmed baking sheet, drizzle with oil, and season with salt. Toss to coat. Spread out in a single layer and roast, turning halfway through, until tender and browned in spots, 25-30 minutes. Set sweet potato fries aside; leave oven on.
- Purée serrano chile, garlic, lime zest and juice, mint, oil, salt, and 3 cups cilantro in a blender, adding water a tablespoonful at a time if needed to thin, until chutney is smooth and pourable.
- Sprinkle two thirds of cheese over reserved sweet potato fries, then spoon a generous layer of chana masala over. Sprinkle with remaining cheese. Return fries to oven and bake until cheese is melted, about 5 minutes.
- To serve, drizzle half of chutney over fries and top with red onion and chopped cilantro. Serve with yogurt and remaining chutney alongside.

Easy, cheesy potatoes to make that are a real crowd pleaser. These are made with frozen shredded hash browns and you can make these in the oven or in the crockpot. Very easy to make and loaded with flavor. You could add cubed ham to this and serve it as an entree with a salad and rolls.

- Preheat oven to 350 degrees.
- In a large bowl, combine hash browns, 1/2 cup melted butter, cheddar cheese soup, sour cream, chopped onion, cheddar cheese, salt and pepper. Place mixture in a 3 quart casserole dish.
- Mix crushed corn flakes and 1/4 cup melted butter together and sprinkle the mixture over the top of the casserole.
- Baked covered in preheated oven for 45 minutes.
- Can be made in crockpot. Cook on high for 3 - 4 hours or on low for 7 - 8 hours.

- Cut potatoes into "steak french fries" size. {I like them thicker...but that means it will also take a little longer to cook than skinny ones.} Place on foiled baking sheet. Drizzle with olive oil and lightly toss with tongs. Sprinkle salts and pepper over the potatoes. Bake 400 for 40 minutes or until fork tender in seperate bowl mix: sour cream, Ranch dressing and milk. on a separate platter smooth out 3/4 of the sour cream sauce. place hot potatoes on sour cream sauce. drizzle remaining sour cream sauce on potatoes Sprinkle toppings. Place under broiler for a few seconds to re-melt cheese. It's going to be messy and delicious.
