CHEESY BEEF & POTATOES CASSEROLE
Flavorful ground beef with sliced potatoes in a creamy and cheesy sauce! The family is sure to love this layered casserole!

Steps:
- Lightly grease an 11 x 7-inch baking pan. Preheat oven to 350 degrees F
- Brown ground beef and onion; drain
- Mix the soup, garlic powder, pepper, stock and cream in a bowl
- Layer half of the potatoes in the bottom of the prepared baking dish.
- Pour half the soup mixture over the potatoes.
- Top with half the ground beef mixture
- Sprinkle half of the cheese on top
- Repeat with second layer.
- Cover with aluminum foil and place in pre-heated oven.
- Check for potato doneness in center of casserole after 1 hour. May be cooked an additional 30 minutes if potatoes are not soft after 1 hour.
- Remove from the oven and let casserole stand for about 10 minutes.
- Slice it lasagna style and serve.
- SLOW COOKER DIRECTIONS
- Brown ground beef & onions as in main recipe; drain.
- Layer as in main recipe, but in a large slow cooker.
- Omit covering with foil as it will be covered with the cooker's cover
- Cook approximately3-5 hours on high, 6-8 hours on low (times are approximate as all cookers cook differently. Always check at the minimum time listed.

- In a large skillet over medium heat, cook beef until no longer pink; drain. Place in a greased 13x9-in. baking pan. Top with mushrooms. , In a small bowl, combine the potatoes and contents of sauce mix packets, water, milk, butter, salt, seasoned salt and pepper. Pour over beef and mushrooms. Cover and bake at 400° for 30 minutes or until heated through. , Sprinkle with cheese. Bake, uncovered, for 5 minutes longer or until cheese is melted. Let stand 10 minutes before serving.

CHEESY BEEF & POTATO CASSEROLE
A casserole bursting with flavor, made with hearty beef and potatoes and covered in cheese!

- Preheat oven to 400degF.
- In a large saute pan over medium-high heat, add bacon. Cook until crispy and remove to paper towel covered plate. Do not discard grease.
- Add onions and garlic to bacon grease. Saute for 3 minutes then add ground beef, Worcestershire sauce, Italian seasoning, and paprika. Cook and crumble until no longer pink.
- Place half of the potato slices evenly across the bottom of the 13x9 baking dish. Sprinkle with one cup of cheese. Use a slotted spoon to transfer beef mixture to baking dish. Top with remaining potatoes. Pour heavy cream over top. Sprinkle with remaining cheese and bacon. Back in oven for 45 minutes.
- Remove from oven and sprinkle with scallions. Let rest for at least 5 minutes before serving.
BEEFY CHEESE AND POTATO CASSEROLE

CHEESY LEEK AND POTATO BAKE
A well used recipe in my house-and so easy to make. It's great as a side dish to a main meal, or as a topping on Cottage Pies and suchlike, or quite simply a good comforting supper dish all on its own with some good thick gravy to pour on top. This is actually my husband's favourite way to eat potato. I hope you enjoy it.

- Preheat oven to 220°C.
- Boil potatoes. Cut leeks into 1 cm slices. Melt 1/2 of the butter in a pan and cook leeks for about 10 minutes.
- Drain and mash potatoes with the other 1/2 of butter, the egg and 3/4 of the cheese.
- Season to taste, stir in the leeks and turn into a large ovenproof dish.

- Preheat oven to 400°F Bake the potatoes for 1 hour, or until tender.
- Meanwhile, make the filling. Heat a large saucepan and add the beef a handful at a time, so that it sears and browns.
- Add the onion and garlic, cook for 1 minute, then add the mushrooms, stock and tomato paste, stirring well. Heat and simmer, partially covered, for 20-25 minutes.

CHEESY BAKED POTATOES WITH AVOCADO AND GROUND BEEF
Steps:
- Heat oven to 375ºF
- Prick potatoes with fork or sharp knife; place on baking sheet sprayed with cooking spray.
- Bake 1 hour or until tender. About 10 min. before potatoes are done, brown meat with onions in large skillet on medium heat. Stir in taco seasoning mix; cook 5 min., stirring frequently. Add cheese; cook 2 to 3 min. or until melted, stirring frequently. Remove from heat.
- Cool potatoes 10 min.; cut lengthwise in half. Scoop out centers, leaving 1/4-inch-thick shells. Add 1 cup potato flesh to meat mixture; mix well. Spoon into potato shells. Return to baking sheet. Discard remaining potato flesh or reserve for another use. (See tip.)
- Bake stuffed potatoes 5 min. or until filling is heated through. Meanwhile, mash avocados; stir in dressing.
- Spoon avocado mixture over potatoes; sprinkle with onions.

- Preheat the oven to 400 degrees F (200 degrees C). Spray a baking dish with nonstick spray.
- Place sliced potatoes in a large bowl. Pour melted butter over top and sprinkle with salt; mix until potatoes are thoroughly coated. Line the bottom and sides of the prepared baking dish with potatoes, overlapping as needed.
- Bake in the preheated oven until potatoes are fork-tender, about 30 minutes.
- While the potatoes are baking, heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Transfer beef to a large bowl and add condensed soup, 3/4 cup Cheddar cheese, and milk. Season with salt and pepper and mix until well combined.
- Remove potatoes from the oven. Pour beef mixture over top and return to the oven. Bake until heated through, about 15 minutes. Sprinkle remaining Cheddar over top and bake until melted, 4 to 5 more minutes.
