Potato Gratin With Cheese and Bacon image

Easy potato gratin with cheese and bacon makes the perfect supper dish. Change it up by adding onions, mushrooms, or greens.

2 1/2 pounds (1.2 kilograms) waxy potatoes
1 ounce (25 grams) unsalted butter
9 ounces (255 grams) Reblochon cheese, or other strong cheese
6 ounces (175 grams) smoked bacon pieces, or lardons
2 1/2 cups (600 milliliters) heavy cream , or double cream
Sea salt, to taste
Freshly ground black pepper, to taste

Steps:

  • Preheat the oven to 300 F / 150 C / Gas 2 and grease a 10 x 12-inch (25 x 30-centimeter shallow baking dish with a little of the butter.
  • Peel and slice the potatoes into thick slices, approximately 1/8-inch (3-millimeters) thick. Place the potatoes in a colander and rinse thoroughly under cold, running water. Dry with kitchen paper and season well with salt and pepper (potatoes soak up a lot of salt while cooking, so be generous). Keep to one side.
  • Cut the cheese into small cubes.
  • Heat a large frying pan to hot but not burning. Dry fry (fry without any fat) for about 5 minutes until the bacon lardons are crisp and golden. Drain on kitchen paper. Place half the potatoes neatly into the dish, sprinkle over the bacon, then top with half the cheese followed by the remaining potatoes.
  • Pour in enough cream to just cover the potatoes-don't worry if you don't use it all. Dot the surface with the remaining butter.
  • Bake in the preheated oven until the potatoes are tender when pricked with a knife, about 1 1/4 hours.
  • Remove the baking dish from the oven, dot the surface with the remaining cheese and return to the oven and cook until bubbling and golden, about 15 minutes. Remove from the oven and leave to stand for 15 minutes covered in foil before serving.

8 tablespoons (1 stick) unsalted butter
1/2 yellow onion, finely diced
Kosher salt
2 cloves garlic, smashed and finely chopped
1/2 cup all-purpose flour
1 quart milk
1/4 cup Dijon mustard
2 cups grated Gruyere
1 cup grated Parmigiano
3 pounds Yukon gold potatoes, unpeeled, cut into 1/4-inch slices

Steps:

  • Preheat the oven to 375 degrees F.
  • Melt the butter in a large saucepan over medium heat. Add the onions, then season with salt and cook until the onions are soft and very aromatic, 5 to 7 minutes. Add the garlic and cook for another 2 to 3 minutes. Whisk in the flour and cook until the roux is the consistency of wet sand, 3 to 4 minutes. Whisk in the milk, bring to a boil and cook for 5 to 6 minutes. Turn off the heat and whisk in the mustard and cheeses. Season with salt to taste to make sure it is delicious!
  • Place a quarter of the potatoes in the bottom of a 9-by-13-inch baking dish. Ladle a quarter of the cheese sauce evenly over the potatoes. Repeat this process 3 or 4 more times with the remaining potatoes and sauce, pushing down the potatoes between each layer and topping with the sauce. Place the baking dish on a sheet tray lined with foil. Bake, rotating the dish halfway through, until the potatoes are soft when poked with a fork, 50 to 60 minutes. Tent with foil if the top is getting too brown.
  • Let sit for 15 to 20 minutes before serving.

500ml semi-skimmed milk
300ml double cream
2 garlic cloves, bashed
1 tbsp vegetable oil
200g smoked bacon lardons
6 large (about 900g) Maris Piper potatoes, thinly sliced (use a mandolin if you have one)
50g cheddar, grated
50g parmesan, grated
50g gruyère, cubed

Steps:

  • Heat the oven to 180C/160C fan/gas 4 and butter a shallow baking dish (I used a 20 x 30cm dish). Pour the milk and cream into a large saucepan, add the garlic, tip in the potatoes and bring to the boil. Remove from the heat to let the garlic infuse and the potatoes cool a little while you cook the bacon.
  • Heat the oil in a frying pan and add the lardons. Cook on a low-medium heat for 10 mins until they are turning crispy.
  • Using a slotted spoon, start layering the potatoes onto the base of the dish until completely covered (remove the garlic cloves when you spot them). Spoon over some of the cream mixture, a little cheddar, parmesan and gruyère, and scatter on some of the bacon. Season well and repeat until you have used up all the potato. Pour over any remaining cream and scatter with the remaining cheese. Reserve some of the bacon for topping later.
  • Cover with foil and cook in the oven for 1 hr. Remove the foil and cook for a further 30 mins until the potatoes are cooked through (insert a skewer or knife and check there is no resistance) and the topping is golden. Scatter with the remaining bacon for the final 5 mins of cooking.

I love scalloped and au gratin potatoes. I love bacon. Putting them together makes for some serious comfort food!

5 large potatoes
1 teaspoon salt
1 large onion, sliced
1/2 cup green onion, chopped
3 tablespoons butter
1/3 cup flour
3 1/2 cups milk
1 1/2 cups shredded cheddar cheese
3/4 teaspoon salt
1/8 teaspoon black pepper
6 slices bacon
garlic salt

Steps:

  • Cook bacon until done, but not crispy. Set aside on paper towels to absorb grease and pat dry. Cut into bite sized pieces when cool.
  • Wash potatoes. Bring a large saucepan of water to a boil. Add salt to the boiling water, then add the potatoes. Cook for 10-15 minutes in boiling water (the potatoes will finish cooking in the oven). Set aside and allow to cool. Once you're able to work with the half-cooked potatoes, slice them into 1/2" pieces.
  • In saucepan, melt butter. Saute the onion slices until just tender; remove from pan and set aside. Making sure you still have enough butter in your pan, stir in flour and milk, whisking until smooth. Cook over low heat, stirring/whisking constantly for 1 minute. Add cheese and continue to stir until cheese melts. Stir in 3/4 teaspoon salt and 1/8 teaspoon pepper. Mix in bacon.
  • In a buttered 9x13 quart casserole, layer potatoes, onion, and cheese mixture. Continue to add layers until about one inch from the top, finishing off the top layer with the cheese mixture.
  • Bake in a preheated 350°F oven, covered, for 45 minutes. Take the cover off of the casserole dish, sprinkle with green onions, and bake for another 5 minutes uncovered. Sprinkle lightly with garlic salt before serving, if desired.

8 slices OSCAR MAYER Bacon, cut into 1-inch pieces
1 onion, chopped
4 cloves garlic, minced
1 cup milk
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, cubed
1 cup sour cream
1 Tbsp. fresh thyme leaves
1/4 tsp. freshly ground black pepper
2 lb. red potatoes (about 6), peeled, thinly sliced
1-1/2 cups KRAFT Shredded Mozzarella Cheese with a TOUCH OF PHILADELPHIA

Steps:

  • Heat oven to 350ºF.
  • Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon, reserving 2 Tbsp. drippings in skillet. Drain bacon on paper towels. Add onions to drippings in skillet; cook and stir 5 min. or until tender, adding garlic for the last minute.
  • Add milk and cream cheese; cook and stir 2 min. or until cream cheese is completely melted and mixture is well blended. Whisk in sour cream, thyme and pepper. Add potatoes; mix lightly. Cover; cook on low heat 5 min.
  • Place half the potato mixture in 13x9-inch baking dish sprayed with cooking spray; cover with layers of half each of the bacon and mozzarella. Repeat all layers.
  • Bake 40 to 45 min. or until potatoes are tender and top is golden brown.

Recipe from New Orleans Cooking by Emeril Lagasse. Simple and tasty side dish. Did add a couple of extra spices as the recipe seemed to be bland with just salt & pepper. The additions of garlic & onion powder seemed to make a difference in the layers.

1 lb idaho potato, peeled and thinly sliced (about 2 very large potatoes)
4 ounces cheddar cheese (grated or shredded)
3/4 cup heavy cream
salt, to taste
pepper, to taste
garlic powder, to taste
onion powder, to taste

Steps:

  • Preheat oven to 400 degrees.
  • Lightly grease a medium gratin dish with butter.
  • Cover the bottom of the pan with an overlapping layer of potatoes.
  • Lightly season with salt, pepper, garlic powder, and onion powder and top with a sprinkling of cheese (about 2 tablespoons).
  • Continue layering potatoes, seasoning, and cheese, ending with the remaining cheese on top.
  • Pour the cream over the potatoes, pressing lightly with your hands to cover the potatoes with cream.
  • Cover with aluminum foil and bake until the cheese is absorbed into the potatoes and the potatoes are tender when pierced with a knife, about 50 minutes.
  • Remove the foil and bake until the mixture is bubbly and the top is golden brown, about 10 minutes.
  • Remove from the oven and let rest 10 minutes before cutting into portions.

This golden and glorious mash-up of potato gratin and Hasselback potatoes, from the acclaimed food science writer J. Kenji López-Alt, has been engineered to give you both creamy potato and singed edge in each bite. The principal innovation here is placing the sliced potatoes in the casserole dish vertically, on their edges, rather than laying them flat as in a standard gratin, in order to get those crisp ridges on top. Allow extra time for the task of slicing the potatoes, for which it's helpful to have a mandoline or food processor (though not necessary, strictly speaking). And do buy extra potatoes, just in case; you want to pack the potatoes tightly and keep them standing up straight.

Steps:

  • Adjust oven rack to middle position and heat oven to 400 degrees. Combine cheeses in a large bowl. Transfer 1/3 of cheese mixture to a separate bowl and set aside. Add cream, garlic and thyme to cheese mixture. Season generously with salt and pepper. Add potato slices and toss with your hands until every slice is coated with cream mixture, making sure to separate any slices that are sticking together to get the cream mixture in between them.
  • Grease a 2-quart casserole dish with butter. Pick up a handful of potatoes, organizing them into a neat stack, and lay them in the casserole dish with their edges aligned vertically. 1 tsp vegetable oil
200g smoked bacon lardons or cubetti di pancetta
2 large onions , sliced
800g potatoes , thickly sliced
1kg cauliflower , cut into bite-size florets
100g medium-mature cheddar or gruyère , coarsely grated
250ml double cream

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat the oil in a pan and fry the bacon for 5 mins until just starting to crisp. Add the onion and sizzle for 12 mins until soft and golden.
  • Meanwhile, tip the potatoes into a large pan of water, making sure they are well covered. Bring to a gentle boil, then add the cauliflower and cook everything for 6-7 mins until both are tender. Tip into a colander and drain thoroughly.
  • In a gratin dish, layer the potato and cauliflower, then scatter with bacon, onion and a small handful of cheese. Drizzle each layer with a little cream and season. Continue until all the layers are finished, pour over the remaining cream and scatter with the last of the cheese. Bake for 30 mins until bubbling. Remove from the oven and set aside for 1 min to rest. Serve straight from the dish with a crisp green salad.
