Flank Steak with Cheesy Waffle Hash Browns image

Try a new take on meat and potatoes: This simple steak recipe comes with hash brown waffles!

Categories     weeknight meals     dinner     main dish     meat

Time 45m

Yield 4-6 servings

Number Of Ingredients 15

2/3 c. olive oil
1/4 c. red wine vinegar
1 c. chopped mixed fresh herbs (basil, mint, cilantro and/or parsley)
1 garlic clove, finely grated
1 serrano chile pepper, seeded and finely chopped
1/2 shallot, chopped
1/2 tsp. kosher salt
1 30-ounce bag frozen, shredded hash brown potatoes, thawed
1 c. shredded pepper jack cheese
6 tbsp. salted butter, melted
1 tbsp. kosher salt
1/4 tsp. black pepper
Cooking spray
1 1/2 lb. flank steak
Kosher salt and black pepper, to taste

Steps:

  • Whisk the olive oil, vinegar, herbs, garlic, serrano, shallot and salt in a small bowl. Set aside.
  • Preheat a waffle iron to high. Toss the shredded potatoes with the cheese, melted butter, salt and pepper in a large bowl. Coat the waffle iron with cooking spray, add ¾ cup of the potato mixture to each well and pat down. (You should hear them sizzle!)
  • Close the waffle iron and cook until the hash browns are golden brown and crispy, about 15 minutes, depending on your waffle iron. Check occasionally to make sure they aren't burning. Use a butter knife to remove the hash browns. Repeat to make more hash browns.
  • Meanwhile, preheat a grill or grill pan to medium high. Pat the steak dry and season with salt and pepper. Grill the steak about 5 minutes per side for medium rare. Remove to a cutting board and let rest for 10 minutes.
  • Thinly slice the steak against the grain. Divide the hash browns and steak among plates and drizzle the steak with the herb sauce.

FLANK STEAK WITH HERB SAUCE AND THREE CHEESE WAFFLE HASH BROWNS

Categories     main-dish

Time 50m

Yield 4 servings

Number Of Ingredients 18

1 cup chopped fresh herbs, such as basil, mint, cilantro and parsley
2/3 cup olive oil
1/4 cup red wine vinegar
1 serrano chile pepper, seeded and finely chopped
1 garlic clove, finely grated
1/2 shallot, chopped
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
5 cups frozen shredded hash brown potatoes, thawed
6 tablespoons salted butter, melted
1/2 cup shredded Cheddar
1/2 cup shredded pepper jack cheese
1/2 cup shredded mozzarella
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
Nonstick cooking spray, for the waffle iron
1 1/2 pounds flank steak
Kosher salt and freshly ground black pepper

Steps:

  • For the herb sauce: Whisk together the herbs, olive oil, vinegar, serrano, garlic, shallot, salt and pepper in a small bowl. Set aside.
  • For the three cheese waffle hash browns: Preheat a waffle iron to medium.
  • Toss the shredded potatoes in a bowl with the melted butter, the three cheeses and the salt and pepper. Mix until well combined.
  • Spray the top and bottom of the waffle iron well with cooking spray. Put a mounded cup of the potato mixture (about 1 1/4 cups worth) in each well and gently pat down. (They will start to sizzle.)
  • Close the waffle iron and cook until the hash browns are golden brown and crispy; time will vary based on your waffle iron, but it will take roughly 12 minutes. (Check on them occasionally to make sure they aren't burning.) Use a butter knife or fish spatula to gently and very carefully remove the hash browns. They are very fragile when they are hot and just out of the iron.
  • For the flank steak: Meanwhile, preheat a grill or grill pan to medium-high. Pat the steak dry and sprinkle liberally with salt and pepper. Grill the steak for about 5 minutes on each side for medium-rare. Set on a cutting board to rest for 10 minutes.
  • Thinly slice the steak against the grain. Divide the hash browns and steak among 4 plates and drizzle the steak with the herb sauce.

A savoury take on the classic fluffy waffle. Chives and cheddar are perfect partners in this really easy recipe. Serve with wilted spinach and a fried egg for a tasty brunch

Provided by Miriam Nice

Time 50m

Yield makes about 10 large waffles

Number Of Ingredients 9

4 large eggs , separated
300g plain flour
½ tsp bicarbonate of soda
pinch paprika
¼ tsp mustard powder
¼ small bunch of chives , chopped
200g cheddar cheese, grated
50g butter , melted
400ml semi-skimmed milk

Steps:

  • Heat the waffle maker according to manufacturer's instructions. Whisk the egg whites to stiff peaks. In a separate large bowl, mix together the flour, bicarbonate, paprika, mustard powder, chives and season with salt and black pepper. Stir in the grated cheese then make a well in the centre and add the egg yolks and melted butter. Start mixing with a balloon whisk; keep whisking as you slowly add the milk until you get a smooth, thick batter. Carefully fold in the egg whites with a metal spoon.
  • Heat oven to 180C/160C fan/gas 4. Use a ladle to pour the batter into your waffle maker and cook for 5 mins or according to the manufacturer's instructions. Repeat until all the batter has been used up, placing your finished waffles onto a baking tray as you go.
  • Once all the waffles are made, transfer to the oven for 5 mins to warm through and crisp. Delicious served with wilted spinach and a fried egg.
