4 whole wheat pita pocket halves
1/4 cup reduced-fat margarine, melted
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons grated Parmesan cheese
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • Split each pita pocket in half. Cut each into two triangles; place split side up on a baking sheet coated with cooking spray. , In a bowl, combine the margarine, garlic powder, onion powder, salt and pepper; stir in the Parmesan cheese. Spread over triangles. Sprinkle with mozzarella cheese. , Bake at 400° for 12-15 minutes or until golden brown.

Number Of Ingredients 6

1/2 cup shredded mozzarella cheese
1 whole grain pita, pocket half
1/4 cup fresh spinach
2 baby portabella mushrooms
1 tablespoon chopped walnuts
1 tablespoon extra virgin olive oil

Steps:

  • 1. Wash the spinach with your hands and then squeeze the water out of it about 5 times, hard.
  • 2. Dry the spinach even more in a paper towel by squeezing the juice out.
  • 3. Chop the portobello mushrooms, starting at the top of the dome, slicing down to the bottom of the stub. Slice each one into about 8 or 9 thin slices.
  • 4. Push about 1/3 of the spinach into the bottom of the pita pocket with about a third of the mushrooms and half the walnuts; and then top that with most of the cheese, pushing down to make room for the rest.
  • 5. Put the rest of the spinach, walnuts, and mushrooms in the pocket and then the rest of the cheese.
  • 6. Microwave on high for about 20 seconds.
  • 7. Pour the olive oil into a medium hot skillet and rub one half the pocket in the oil, and flip it so that the oiled part is on the top.
  • 8. Fry the pocket for 30 seconds to a minute on each side.2.

1/4 cup old cheddar cheese, shredded
1 carrot, shredded
1/4 teaspoon pepper
1 pita bread
1/4 large cucumber, sliced
1/2 cup alfalfa sprout

Steps:

  • In small bowl, mash together cream and Cheddar cheeses, shredded carrot and pepper until blended.
  • Cut top quarter of each pita and tuck inside bottom of pita. Spread half of the cheese mixture inside each; fill with cucumber and sprouts.
  • (Pita pockets can be wrapped in plastic wrap and refrigerated or stored in cooler pack for up to 24 hours.).

1 teaspoon dried thyme
1 teaspoon paprika
1 garlic clove, minced
1/2 teaspoon salt
1-1/2 pounds boneless skinless chicken breasts, cut into 1-inch strips
1 package (14 ounces) coleslaw mix
2/3 cup mayonnaise
12 whole wheat pita pocket halves

Steps:

  • In a large bowl, mix oil, thyme, paprika, garlic and 1/4 teaspoon salt until blended. Add chicken; toss to coat. Let stand 10 minutes., Meanwhile, in a large bowl, combine coleslaw mix, mayonnaise and remaining salt; spoon into pita halves. Place chicken on an ungreased baking sheet. Broil 3-4 in. from heat 3-4 minutes on each side or until no longer pink. Fill pitas with chicken strips.

6 teaspoons olive oil, divided
1 package (12 ounces) fully cooked roasted garlic chicken sausage links or flavor of your choice, sliced
1 cup sliced fresh mushrooms
1 small onion, halved and sliced
1 medium zucchini, halved lengthwise and sliced
1 medium yellow summer squash, halved lengthwise and sliced
3 tablespoons chopped fresh basil
8 whole wheat pita pocket halves, warmed
Optional: Sliced tomato and plain Greek yogurt

Steps:

  • In a large nonstick skillet, heat 2 teaspoons oil over medium-high heat. Add sausage; cook and stir 4-6 minutes or until lightly browned. Remove from pan., In same skillet, heat 2 teaspoons oil over medium-high heat. Add mushrooms and onion; cook and stir 4-6 minutes or until tender. Remove from pan., Add remaining oil to pan. 1 pitta bread , white or wholemeal
2 long slices of brie (Blue Cambozola is very tasty) or any other cheese that melts well
a few roasted peppers from a jar or the deli counter
a handful of watercress or lettuce
your favourite dressing or olive oil

Steps:

  • Trim off one of the long edges of the pitta bread, put the pitta in the toaster on a medium setting for a second or two, then pop it up and open it like they do in kebab houses, being careful it doesn't split. (Warming the bread first makes this easier.) If the pitta doesn't fit your toaster, use the grill, or try mini pittas.
  • Stuff the cheese and peppers inside the pocket and close by gently pressing it down. Pop it back into the toaster on a medium setting (or under the grill) with the open side upwards.
  • Toss the watercress in a drizzling of your favourite dressing or some olive oil. When the pitta pops up, cut it in half for easy eating, or leave it as it is. Allow it to cool for a moment as it is quite hot at first. Serve with the watercress and have a napkin at the ready - the yummy pepper juices may leak when you take the first bite.
