- Cook spaghetti according to package directions, drain and keep warm.
- Melt butter in large skillet over medium heat; add onion, cook 5 minutes, stirring occasionally. Stir in flour; cook 1 minute. Stir in milk, salt and pepper; cook 5 minutes, stirring constantly. Stir vegetables, scallops and shrimp into skillet mixture; simmer 10 minutes, stirring occasionally.
- Remove skillet from heat; stir in cheese until melted. Divide spaghetti among four plates; spoon sauce over spaghetti.
SCALLOPS AND RICE NOODLES

- Into a bowl, mix together ginger, soy sauce, chili sauce, ketchup, brown sugar, garlic salt and 1/3 cup clam juice, until smooth. Reserve. Preheat a wok with 2 tablespoons of the oil. Coat scallops with cornstarch and add to the wok. Stir-fry scallops for approximately 1 minute and sprinkle with salt and pepper, to taste. Stir in reserved ginger mixture cook for 1 to 2 minutes more. Remove scallops from sauce arrange on a serving dish. Reserve the sauce separately.
- Heat the remaining 1 tablespoon oil in the wok and add the carrot sticks, sweet pepper strips, broccoli florets and chopped onions for 4 to 6 minutes or until brown. Season with salt and pepper, to taste. Keep warm, in the wok.
- In another wok or deep pan, deep-fry rice noodles in 2 cups hot oil, for 3 minutes. Drain noodles. Arrange noodles in a bowl or on a plate, top with cooked vegetables and finish with scallops. If desired, mix a little more clam juice to the sauce, before pouring over the scallops and noodles. Serve with lemon slices.
CREAMY CHEESY COQUILLES ST. JACQUES/ SCALLOPS
I don't recall where I got this excellent recipe, but have been making it for special occasions for 25 years! Easy to put together, and very elegant served with rice pilaf and a green salad for company. I like to serve this in prepared scallop shells.

Steps:
- Lightly grease or butter 8 large scallop shells or 8 small ramekins.
- Combine 1 t. lemon juice, water and salt in a saucepan large enough to hold scallops. Bring to a boil.
- Add scallops and simmer 6 minutes. Drain. Set aside.
- Melt 4 T. butter in saute pan. Add onions and mushrooms. Saute until wilted and soft.
- Whisk in flour and pepper. Cook 30 seconds.
- Whisk in cream and milk. Bring to boil, whisking constantly, until thickened.
- Add cheese, wine, 1 T. lemon juice and parsley. Whisk and cook until blended and cheese has melted. Add scallops.
- Divide mixture into 8 shells or ramekins.
- Combine bread crumbs and 2 T. melted butter. Sprinkle on scallop mixture.
- Broil 4" from heat for 2-3 minutes, or until crumbs are brown and sizzling.
CHEESE RING
This zesty cheese ring can be also made as a log. The jelly may seem strange, but it is what makes this appetizer delicious.

- In a medium bowl, mix together the Cheddar cheese, mayonnaise, green onion, cayenne pepper, and garlic salt until well blended. Coat a ring shaped gelatin mold generously with cooking spray. Spoon the cheese mixture into the mold, cover, and chill for 2 to 3 hours to set.
- Unmold onto a serving plate, and pour raspberry preserves into the center. Arrange wheat crackers around the outside of the ring.

SEARED SCALLOPS WITH CREAMY NOODLES AND PEAS
Steps:
- Cook noodles in a large pot of boiling salted water , uncovered, until almost al dente, about 5 minutes, then stir in peas and cook until noodles are al dente, about 2 minutes more. Drain in a colander, then transfer to a platter and keep warm, loosely covered with foil.
- While noodles cook, pat scallops dry and sprinkle with salt and pepper. Heat butter in a 12-inch heavy skillet over moderately high heat until foam subsides, then add scallops. Increase heat to high and sear scallops, turning over once, until golden brown and just cooked through, 2 minutes total. Transfer to platter with noodles and keep covered.
- Add wine to skillet and deglaze by boiling, stirring and scraping up any brown bits, 1 minute. Stir in water and cream and boil until slightly reduced, about 3 minutes. Season with salt and pepper. Stir in chives and pour sauce over scallops and noodles.

- Cook fettuccine noodles until al dente, according to the package directions. Drain and set aside.
- In a large skillet over medium-high heat, add 1 tablespoon butter and 1 tablespoon olive oil. Once butter is melted add shrimp to skillet in single layer and sprinkle with salt and white pepper. Cook until shrimp turns pink on each side and just cooked through, about 3 minutes. Remove, place on plate, and set aside. Add another 1 tablespoon butter and 1 tablespoon olive oil to pan, once butter melts, add scallops in a single layer, sprinkle with salt and white pepper, and cook for 90 seconds on each side. Remove and place on plate with shrimp. Set aside.
- Add remaining 1 tablespoon butter to pan with green onions, shallots, and garlic, and sauté for 1 minute. Add sliced mushrooms and sauté for 3 minutes. Add white wine, and reduce to half.
- Reduce heat to medium-low, add cream and stir constantly until slightly thickened, about 2-3 minutes. Stir in Parmesan cheese, taste sauce and add salt and pepper, if needed. Add scallops, shrimp and cooked fettuccine noodles, stir together until everything is well coated and heated through, about 2 minutes.
