1 lb Chicken breasts (cut lengthways for an even thickness)
Kosher salt and fresh ground pepper (to taste)
11/2 tsp garlic powder (divided)
1/2 tsp smoked paprika
2 tbsp olive oil (divided)
8 oz mushrooms (thickly sliced)
1 large yellow onion (sliced)
1 tsp Italian seasoning
1 cup low sodium chicken broth
2 tbsp chopped fresh tarragon or 1 tsp dried tarragon
1/2 cup shredded Monterey jack cheese or Mexican blend

Steps:

  • Preheat the oven to 375 F.
  • Rub the chicken with salt, pepper, half of the garlic powder, and paprika on all sides.
  • Preheat a large oven-proof skillet over medium-high heat. Drizzle with 1 tablespoon of oil and sear the chicken until golden on both sides, for around 5 -6 minutes in total. Set aside.
  • To the same skillet add the remaining oil. Sauté the mushrooms and onion, stirring frequently, for no more than 3-4 minutes.
  • Add in the Italian seasoning, chicken broth, remaining garlic powder, and tarragon, then return the chicken into the sauce.
  • Sprinkle with the mozzarella cheese and bake in the preheated oven until chicken is cooked through for 8-10 minutes or until an internal temp reads 165F, and cheese is melted.

4 thinly sliced chicken breasts
1 tablespoon Italian seasoning
2 tablespoons butter
8 ounce sliced mushrooms
1/2 cup chicken broth
1/2 cup shredded mozzarella cheese
Fresh chopped parsley for garnish

Steps:

  • Preheat oven to 375 degrees. Salt and pepper chicken breasts and evenly season with Italian seasoning. In a large skillet over medium high heat add the butter. Brown each side of the chicken and place in 9x13 inch baking dish.
  • Add the mushrooms, and chicken broth and simmer until tender. Add to baking dish. Bake for 15 mins uncovered. Top with cheese and bake an additional 5 until cheese is melted and chicken is cooked throughout. Garnish with fresh chopped parsley.

4 skinless, boneless chicken breasts
2 tablespoons unsalted butter
1 ½ cups sliced fresh mushrooms
½ cup diced onion
2 cloves garlic, chopped
1 tablespoon all-purpose flour
½ cup chicken broth
1 cup grated Parmesan cheese
½ cup shredded mozzarella cheese, or to taste
½ cup diced scallions

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a baking dish lightly.
  • Sprinkle salt and pepper on chicken. Heat butter in a pan over medium-high heat. Add chicken and brown on all sides, 5 to 7 minutes. Remove chicken and place in the prepared baking dish.
  • Stir mushrooms, onion, garlic, and flour into the remaining butter in the saucepan and saute over medium-high heat until softened, about 5 minutes. Add chicken broth and bring to a boil while scraping the "good stuff" off of the bottom of the saucepan, letting it add to the flavor. Cook until thickened to your liking; drizzle over chicken.
  • Bake in the preheated oven for 30 minutes. Sprinkle with Parmesan cheese, mozzarella cheese, and scallions. Continue to bake until chicken is no longer pink in the center and cheese is melted, about 10 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

This favorite household recipe for mushroom-stuffed chicken breasts comes from experimenting with adding various ingredients to chicken breasts to create the perfect combination. With its creamy sauce, it is excellent served with rice or vegetables.

4 (5 ounce) boneless, skinless chicken breasts
1 cup sliced button mushrooms
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dried parsley flakes
ground black pepper to taste
1 cup shredded Cheddar cheese
1 (10.5 ounce) can condensed cream of mushroom soup
1 cup milk
½ cup dry bread crumbs, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch pan with cooking spray.
  • Slice chicken breasts in half lengthwise, leaving one side attached. Open breasts to lay flat, resembling a butterfly.
  • On one half of each breast, layer 1/4 of the mushrooms. Sprinkle 1/4 teaspoon each of onion powder, garlic powder, and parsley flakes over each one. Season with pepper, then sprinkle about 2 tablespoons Cheddar cheese over top. Fold the ungarnished sides over the toppings and secure the edges with toothpicks to hold them together while baking. Transfer to the prepared baking pan.
  • Mix condensed soup with milk and pour over the chicken breasts. Sprinkle the remaining 1/2 cup Cheddar over top, then add bread crumbs to cover each breast.
  • Cover and bake in the preheated oven for 30 minutes. Uncover, and bake until the bread crumb topping is crispy and the chicken is no longer pink in the center and the juices run clear, about 20 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

2 tablespoons butter
½ cup finely chopped mushrooms
2 tablespoons all-purpose flour
½ cup sour cream
¼ teaspoon salt, or more to taste
ground black pepper to taste
1 ½ cups shredded sharp Cheddar cheese
½ cup all-purpose flour, or as needed
2 large eggs, beaten
1 cup dry bread crumbs
6 (5 ounce) skinless, boneless chicken breast halves
2 tablespoons olive oil, or as needed

Steps:

  • Melt butter in a skillet over medium heat. Add mushrooms and cook until soft, about 5 minutes. Add 2 tablespoons flour and stir until blended and paste-like. Stir in sour cream, 1/4 teaspoon salt, and pepper until combined. Cook and stir until mixture is very thick, 3 to 5 minutes. Stir in Cheddar cheese and cook until it melts, 2 to 3 minutes.
  • Remove from the heat and transfer to a pie pan or a square pan. Cover and refrigerate until chilled and firm, about 1 hour. Cut chilled cheese mixture into 6 "sticks."
  • Place 1/2 cup flour in a shallow dish, beaten eggs in another dish, and bread crumbs in a third dish.
  • Place a chicken breast in a resealable plastic bag and pound with a wooden mallet to a thickness of 1/4 inch. Season chicken with salt and place a cheese stick in the middle. Roll chicken up like a jelly roll. Dust it in flour, dip it in egg, and then dip it in crumbs. Repeat to flatten, stuff, and bread remaining chicken breasts. Cover and chill for at least 1 hour or until ready to cook.
  • Preheat the oven to 325 degrees F (165 degrees C). Line a shallow baking dish with foil.
  • Heat olive oil in a heavy skillet over medium-high heat. Add chicken and sear until golden brown, 2 to 3 minutes per side. Transfer chicken to the prepared baking dish.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, 30 to 45 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

2 cups sliced mushrooms
1 chopped yellow onion
1/2 cup white wine
1 cup chicken stock
1 cup grated mozzarella cheese
1/2 cup grated romano cheese
1/2 cup grated parmesan cheese
2 -3 garlic cloves
1 cup breadcrumbs
6 tablespoons olive oil
4 tablespoons butter or 4 tablespoons margarine
1/2 cup buttermilk

Steps:

  • Slice chicken breasts into strips.
  • Dunk in buttermilk, then cover in breadcrumbs.
  • Brown in skillet with olive oil.
  • Cover and set aside.
  • Sweat onions in skillet.
  • Add mushrooms and sautee with white wine.
  • Add garlic and reduce for 10 minutes.
  • Add chicken stock and reduce for 5 minutes.
  • Place browned chicken strips on top of mushrooms/onions and bake in 350 degree oven for 30-35 minutes.
  • During last 5 minutes, cover with three cheeses.
  • Serve over pasta.

500 g mushrooms
2 cups broccoli florets
2 cups cauliflower florets
8 boneless skinless chicken thighs
1 large onion
1 celery rib, sliced in 1cm thick bits
4 garlic cloves, sliced
1 teaspoon bottled minced garlic
4 tablespoons butter, seperated
1 cup chicken broth
1 cup sour cream
1/2 cup cornflour
1/4 cup tomato sauce
salt and pepper, to taste
1 cup cheddar cheese, grated

Steps:

  • Over medium-heat, saute the sliced garlic cloves in 1 tablespoon of butter until scent is released, add onion and celery and chicken thighs. Cook for approximately 10-15minutes. Until onion is soft and chicken has been THOROUGHLY browned.
  • Remove from frying pan and place into a large baking tray, leaving juices in the frying pan.
  • Melt another tablespoon of butter and the teaspoon of minced garlic in amongst the juices and add mushrooms. Cook for 5minutes, stirring constantly, and then add brocolli and cauliflower. Stir constantly and cook for another 5minutes. Then place in the baking tray. Juices and all.
  • Preheat oven to 180 degrees Celcius.
  • Mix together the flour, salt, and pepper. Melt the remainder of the butter and mix the flour mixture until well combined and smooth. Slowly top off with the chicken broth and mix well until smooth. Add the sour cream and tomato sauce. Mix well. Pour over what's in the baking tray.
  • Cover and bake for 45minutes, uncover and sprinkle with the grated cheese and bake uncovered for 10-15minutes or until cheese has browned.
