MASHED POTATO MUFFIN CUPS
These mashed potato muffin cups are a delicious side dish for any meal.

Steps:
- Preheat the oven to 375 degrees. Spray medium-size muffin tins with nonstick cooking spray.
- Scoop the potatoes into a medium-size mixing bowl.
- Add the egg and seasoned salt. Stir until well mixed.
- Add 1/2 cup of the shredded cheese and fold it into the potato-egg mixture.
- Scoop a heaping tablespoon of the mixture into each muffin cup.
- Bake for 30 minutes. Remove from the oven and sprinkle the remaining cheese over the potatoes.
- Return the potatoes to the oven and bake for another 3 minutes.
- Remove from the oven and sprinkle the parsley over the top.
- Serve hot.

CHEESY POTATO CUPS
A delicious recipe to make some easy potato cups with cheese. It's flavorful and you can have it as your appetizer, side dish and even snack. With sausage and Ketchup is a hit for kids!

Steps:
- Pre-heat the oven to 400ºF {200ºC} and line muffin pan with cupcake liners.
- In a small pan, heat milk and butter until they are about to boil and add in the potatoes, cheese, onions, nutmeg, salt and pepper. Mix well.
- Incorporate the yolks and mix well.
- In a stand mixer beat the egg whites until hard peaks are formed.
- Start mixing one big spoon at a time with soft movements until you get all the egg whites and potatoes mixed.
- Divide evenly the mixture for 12 cups and cook for about 15 to 20 minutes or until it rises and golden brown.
- Serve immediately as your side dish, or with salad. It also goes perfect with sausags and ketchup for kids!
- This recipe can take about an hour or so if you prepare the mashed potatoes same day. If you have it done then it might take no more than 35 minutes!

- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. - In a large saucepan, cover potatoes with enough water and bring to a boil then reduce the heat; cover and cook for 10-15 minutes until softened. Drain excess liquid from the potatoes.
- In a large bowl with milk, butter, salt and pepper, mash the potatoes until smooth.
- Add 1⅓ cups of shredded cheese and stir to mix through.
- Lightly grease 2 x 6-portion muffin trays and divide the mashed potato, evenly between the muffin cups.
- Top with sprinkles of remaining cheese and dried parsley over each serving.
- If not serving immediately, cover and freeze for up to 3 months.
- Bake in the oven at 350 °F for 15-20 minutes until heated through and the cheese is melted all over.

- Place the potatoes in a large pot and cover with water by an inch. Bring to a boil over high heat, then reduce to simmer. Cook until the potatoes are fork tender, 25 to 30 minutes. Drain.

- Cut cheddar cheese block into small cubes.
- Place cold mashed potatoes into a large mixing bowl. Add green onion, chopped bacon, garlic powder, black pepper, and 1 egg - mix well.
- With lightly floured hands - pick up a tablespoon sized ball of potato mixture and flatten into a small pancake. Place a cube of cheddar in the center and wrap the potato mixture around the cheese. Repeat.
- In three separate bowls, add flour, remaining egg (whisked) and breadcrumbs. Coat the potato ball in flour, then egg, then breadcrumbs. Coat once more with egg and once more with bread crumbs. Set aside - store in fridge while you wait to fry.
- In a medium pan heat oil over medium/high heat (to approximately 350˚F (180˚C). Fry the potatoes in batches until browned on all sides.
- Transfer fried potato balls to paper towels to drain excess oil. Sprinkle with salt.
- Transfer to a baking tray and bake in a preheated oven for 5 minutes at 400˚F (200˚C).

- Heat the oven to 400°F and lightly grease the cups of a mini-muffin tin. Whisk together the mashed potatoes, the eggs, 3/4 cup of cheese, the chives, and ham. Season, if necessary, with salt and pepper. The seasoning will depend on how seasoned your mashed potatoes were to begin with. Mound a spoonful of the mixture in each muffin cup. Sprinkle the tops with the remaining 1/4 cup of grated cheese. Bake for 20 minutes, or until the potato cups are set, browned on top, and hot through. Let cool for about 5 minutes in the pan, then use a spoon or knife to gently release them from the pan. Serve immediately with dollops of sour cream, if desired. Do use a nonstick 12-cup muffin tin. Coating the tin with softened butter and ground panko bread crumbs ensures a clean release.

- Adjust oven rack to lowest position and heat oven to 425 degrees. Pulse panko in food processor until finely ground, about 5 pulses. Evenly coat each muffin cup with softened butter and then ground panko.
- Cut each potato in half lengthwise, then cut each half into 3 wedges. Cut each wedge crosswise into 1/4-inch-thick slices. Combine potatoes, half-and-half, salt and pepper in large bowl and microwave, covered, until just tender, 12 to 15 minutes, stirring once.

- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes.

- Potatoes -- Cook the potatoes in a medium boiling water until tender. Remove to a large bowl and that let slightly cool. Cover while you prepare everything else.
- Mash the potatoes -- If you have a potato ricer it is great -- if not -- a potato masher is fine too. You can even use a fork. Just mash them up.
- No lumps for this dish.
- Eggs -- Now make the egg mixture. Beat the eggs, cottage cheese, salt and pepper until fluffy with a mixture until well combined. I use medium speed for 3-4 minutes.
- Batter -- Add the scallions and parsley and any additional salt and pepper to the potatoes and lightly fold the egg mixture inches.
- Spray muffin tins with Pam -- Now fill the muffin cups. Fill almost to the top. Now bake for 10 minutes on the middle rack at 450F, then reduce to 425F and cook 15 minutes more. The last minute I sprinkle the cheese on top and return to the oven to melt. Let cool a few minutes before removing from the tin.
