LOADED BAKED POTATO ROUNDS
This twist on baked potatoes will be a new family favorite!

Steps:
- Wash your green onions and chop them. Mince your garlic. Set aside.
- Wash and scrub your potatoes. Slice into rounds.
- Add potatoes in a bowl and pour 2 tablespoons of melted butter over them.
- Sprinkle your salt and pepper. Stir. Microwave for 2 minutes, stir, microwave for another 2-3 minutes.
- Place potato rounds on a baking sheet and sprinkle with garlic. Bake in the oven at 350° for 20 minutes.
- Cook your bacon. Drain the strips, cut pieces on a towel lined plate.
- When the potatoes are tender and starting to crisp around the edges remove them from the oven and brush on more melted butter.
- Sprinkle your shredded cheddar cheese, bacon, and green onions.
- Bake at 350° until the cheese is melted. Top with sour cream (if you like that kind of thing) Serve and enjoy!

PARMESAN POTATO ROUNDS
Everybody just loves these potatoes, and they're so quick and easy to prepare. I often put this in the oven while I'm preparing the main dish.

- Pour butter into a 15-1/2-in. x 10-1/2-in. x 1-in. baking pan. In a plastic bag, combine flour, cheese, salt and pepper. Shake a few potato slices at a time in the bag to coat with the flour mixture. Place potatoes in a single layer over the butter. Bake at 375° for 30 minutes. Turn slices and sprinkle with Italian seasoning. Bake 30 minutes more or until tender.

CHEESY GRIDDLE POTATO ROUNDS
When it's too hot to use the oven, this is my method of making baked potato rounds. They were fork tender and oh so delicious.

Steps:
- 1. Scrub potatoes or peel. Slice into fairly thin rounds. I used my mandolin on the thickest setting.
- 2. I used my electric flat griddle and used my 18Qt. electric roaster LID as a cover, and kept them covered the entire cooking time, as well as when the cheese was melting. You could invert a rimmed cookie sheet as well.
- 3. I drizzled olive oil and rubbed the entire surface. Then placed the potato slices side by side on griddle. Then I drizzled a little more olive oil on potatoes and sprinkled with Mrs. Dash original blend. I set the griddle between 250-300°, just high enough to slowly cook them.
- 4. After about 30 min I flipped them and sprinkled more Mrs. Dash and some red pepper flakes and cook about 20 min longer. Cook time will vary depending on heat, but you don't want too high a heat or your potatoes will burn and won't be tender.
- 5. Once potatoes were tender I sprinkled grated Asadero cheese on top, turned heat to lowest setting until cheese melted. Then I sprinkled with chopped cilantro.
GRILLED CHEESY LOADED POTATOES

- Prepare a grill for direct and indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes, turn off one of the side burners and turn the remaining burners down to medium. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.)
- Heat a 10-inch cast-iron skillet on direct heat and add the bacon; cook, stirring often, until crispy, about 5 minutes. Remove the bacon with a slotted spoon to a paper-towel lined plate; set aside.
- Add the potatoes and sprinkle with salt and pepper. Stir to coat with the bacon fat, then move to indirect heat and cover the grill. Cook, uncovering the grill and stirring every 5 minutes, until the potatoes are tender, about 20 minutes.
- Sprinkle with the Cheddar and move back to direct heat. Cook, uncovered, until the potato bottoms are golden and the cheese is melted, about 10 minutes, depending on the heat of your grill. Let cool for 10 minutes, then dot with the sour cream and sprinkle with the scallions and reserved bacon.

- Line a baking sheet with parchment paper or a silicone baking mat and set aside.

Steps:
- Preheat oven to 350.
- Begin by washing potatoes and slicing into thin rounds (about ¼" thick).
- Place potatoes in a pot filled with water and bring to a boil. Cook for 3-4 minutes. Drain and pat dry potatoes.

- Cut russet potatoes into thin slices (see pictures for size)
- Cover a large baking sheet with parchment paper, cut to fit the size of the pan
- Place potato slices on the parchment paper
- Using a rubber brush, spread a thin layer of olive oil over both sides of the potato slices
- Combine salt, pepper, garlic powder, onion powder, cumin, and chili powder in a small cup or bowl
- sprinkle mixture evenly over potatoes, flipping potatoes, to cover both sides

- Process pecans, flour, and cornstarch in food processor until finely ground. Add remaining ingredients and pulse until dough forms. Turn dough out onto lightly floured surface and roll into two 8-inch logs. Wrap tightly with plastic wrap and refrigerate until firm, at least 1 hour or up to 3 days.
- Adjust oven racks to upper-middle and lower-middle positions and heat oven to 400 degrees. Line 2 baking sheets with parchment paper. Slice logs into 1/4-inch rounds and place 3/4 inch apart on prepared baking sheets. Bake until golden, about 15 minutes, switching and rotating baking sheets halfway through baking. - Preheat oven to 350°. Place potatoes in a Dutch oven; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 8-12 minutes. Drain.
