CHEESY GARLIC BUTTER CRACKED POTATOES

Lightly crisped, roasted baby potatoes are drizzled in garlic butter and topped with an ooey gooey cheesy crust.

Number Of Ingredients 6

1 1/2 lbs baby potatoes, washed, scrubbed, & dried
1/4 cup butter
2 tsp minced garlic
1/4 tsp salt
2 tsp dried parsley
1 cup shredded mozzarella

Steps:

  • Add the potatoes to a medium sized pot. Fill the pot with enough water to cover the potatoes. Bring the pot of water to a boil, and cook the potatoes for 15 minutes.
  • Line a baking sheet with parchment paper, or lightly spray it with non stick cooking spray. Drain the potatoes completely, then transfer them to the prepared tray. Bake the potatoes at 400 degrees for 10 minutes.
  • In a small skillet, heat the butter over low heat until melted. Whisk in the garlic, and continue to cook for 2 minutes. Remove the skillet from heat, and whisk in the salt and parsley.
  • Remove the potatoes from the oven. Using the back of a fork, press down on each potato lightly, just until it's slightly squished and the skin has just cracked.
  • Drizzle the garlic butter evenly out over the potatoes. Sprinkle the cheese on top of them.
  • Return the potatoes to the oven, cooking for 10-15 minutes, or until it's bubbling and has just begun to turn golden brown. Serve them with your choice of entree, and enjoy!

1 1/2 lb. new or small potatoes
1/4 c. butter, melted
1/4 c. extra-virgin olive oil
3 cloves garlic, minced
kosher salt
Freshly ground black pepper
1 c. shredded mozzarella
1/2 c. freshly grated Parmesan
1/4 c. finely chopped parsley

Steps:

  • Preheat oven to 375° and line a large baking sheet with parchment paper.
  • Make small slits in each potato, like an accordion, making sure not to cut all the way through. Place potatoes on a large sheet pan.
  • In a small bowl, whisk together melted butter, olive oil and garlic. Brush mixture over potatoes then season with salt and pepper. Bake for 20 minutes, until the slits are starting to separate and the potatoes are beginning to turn golden.
  • Brush the potatoes with more of the melted butter mixture then sprinkle mozzarella and Parmesan on top. Bake for another 23 to 25 minutes, or until the potatoes are crispy on the outside and tender on the inside.
  • Garnish with parsley and serve warm.

Cheesy Garlic Butter Potatoes. Soft fluffy potatoes with a light crunch, rich with garlic butter and then coated generously in melted oozy cheese.

1.3 lb baby potatoes - (see notes)
3 tbsp salted butter
2 garlic cloves
1/4 tsp salt
2 tsp dried parsley
1 cup cheese (- I use a mixture of monetary jack, mozzarella and gruyere)

Steps:

  • Preheat oven to 390ºF/200°C.
  • Place the potatoes into a pan of boiling water and cook for 15 minutes or until they are almost cooked.
  • Drain the potatoes well, then place the potatoes in a roasting tray (lined with cooking paper) and bake for 10 minutes.
  • Melt the butter in a small pan and then crush in the garlic.
  • Cook for 2 minutes on a low heat.
  • Remove the butter from the heat and add in the salt and dried parsley.
  • Remove the potatoes from the oven and use the back of a fork to squash the potatoes slightly. You don't want to crush them, just break the skins open so the butter can ooze in.
  • Pour the butter mixture over the potatoes, then sprinkle over the cheese.
  • Put them back into the oven for 10-15 minutes or until the cheese is melted and everything is bubbling.
  • Serve with icy cold prosecco (and some napkins!)

3 pounds red bliss potatoes, quartered and boiled fork tender
2 cups heavy cream
1 stick butter
6 cloves garlic smashed
8 ounces shredded Cheddar
Cracked peppercorns
Kosher salt
Chives, for garnish

Steps:

  • Boil potatoes off in a large pot of salted water until tender. Drain the water and place potatoes back in pan.
  • In a large saucepan, heat heavy cream, butter and garlic to a light simmer. Once cream starts to simmer, turn off the heat and add to the potatoes. Mash together. Fold in cheese, peppercorns and salt, to taste. Garnish with chopped chives.

They are rich, but oh so good! You can vary the cheeses according to taste and add onions, too. I originally got the recipe from AllRecipes, but I have altered a couple of things that helped the recipe we believe. It is a family favorite!

1 1/2 lbs potatoes, thinly sliced (I use my KitchenAid slicer attachment to make thin. SaladShooter or mandolin works well, too, as lon)
2 tablespoons butter, divided
1 pint heavy cream (or to make it lighter I have made with 2 cups milk and 2 T. cornstarch heated until thicker)
2 garlic cloves, minced
salt and pepper
2 cups cheddar cheese, shredded
4 slices provolone cheese
1/2 cup parmesan cheese or 1/2 cup romano cheese, grated

Steps:

  • Preheat the oven to 350 degrees F (165 degrees C).
  • Grease a 1 1/2 quart or larger casserole dish with butter or nonstick spray.
  • Layer half of the potato slices in the bottom of the casserole dish.
  • Dot with half of the butter cut or pinched into small pieces.
  • Arrange half of the garlic slices over the potatoes, then pour half of the heavy cream over.
  • Sprinkle one cup of Cheddar cheese over the layer, and season with salt and pepper. Repeat layering of potatoes, butter, garlic, cream and Cheddar cheese, then top with the slices of provolone cheese.
  • Season again with salt and pepper. Cover with foil that the underside has been sprayed with cooking spray.
  • Bake for 1 hour in the preheated oven, then sprinkle the Parmesan or Romano cheese over the top.
  • This will create a semi-hard cheese crust. Continue baking uncovered for another 30 minutes, or until potatoes are tender when tested with a fork.
