3 1/2 cups grated Cheddar
3/4 cup grated Pepper Jack
1/2 cup grated Parmesan
1/2 cup (real) mayonnaise
1 1/4 sticks softened butter
4 whole green onions (white and light green parts), minced
1 dash salt
Freshly ground black pepper
4 cloves garlic, finely minced
1 loaf crusty French bread
1/2 cup chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 375 degrees F.
  • Mix the cheeses with the mayonnaise, 1/4 stick of the softened butter and the green onions. Add the salt and pepper to taste and set aside or keep in the fridge until you need it.
  • Melt the remaining 1 stick butter in a skillet over medium-low heat and add the garlic. Cook for a couple of minutes to release the garlic flavor.
  • Cut the loaf of bread in half. Brush the garlic butter over each half, making sure it's evenly distributed. Spread the cheese mixture on the loaves and bake until the cheese is hot and bubbly, about 10 minutes.
  • Once out of the oven, sprinkle over the chopped parsley. Slice and serve.

Cheesy Garlic Bread Stuffed Challah is the ultimate comfort food!

2 envelopes active dry yeast (4 1/2 teaspoons)
1½ cups warm water about 110 degrees F
½ cup plus 2 teaspoons granulated sugar
2 egg
6 egg yolks, plus one for glazing (use the whites for breakfast!)
½ cup vegetable oil, plus more for greasing the bowl
6-7 cups bread flour or all-purpose flour, plus more as needed
2 tsp salt
6 large garlic cloves
1 stick unsalted butter (8 oz)
salt to taste
1½ cups grated mozzarella cheese
Seeds for garnish (sesame, poppy, etc.)

Steps:

  • First, make your challah dough. Prepare the yeast in a large mixing bowl for a stand mixer by whisking it with warm water and 2 teaspoons sugar. Let yeast stand until it foams and puffs up, about 10 minutes. If it doesn't get foamy, your yeast is bad or the water was too warm or cool. Try again!
  • Using the whisk attachment for the stand mixer, mix in the remaining sugar, eggs, and oil into the yeast mixture. (You can just use a whisk of you're doing this by hand too) Then gradually add 6 cups flour and salt and either with a hook attachment using an electric mixer or a spoon and your hands until combined. Knead for about 5-10 minutes, and form into a ball. If it's too sticky, add a bit more flour. Dough should be soft, smooth and slightly tacky.
  • Place the dough in a bowl greased with oil and cover. Let dough ferment in a warm place until it has doubled in size, about 2-3 hours. I put mine on top of an oven heated to 200 degrees.
  • Meanwhile, make the filling. In a small saucepan, combine butter and garlic and cook over medium low heat until garlic starts to brown and is fragrant, about 2 minutes. Season with salt to taste
  • When the dough is ready, divide into three equal sized balls. Roll each one into a 10x14 rectangle, spread with garlic butter, and sprinkle with a bit of salt and cheese.Roll the rectangle up tightly like a jelly roll starting from the long end. The form a spiral to make a round mound. Repeat with the other dough balls.
  • I like to bake each loaf on its own cookie sheet because they spread. Carefully place the loaves on three parchment lined baking sheets, cover lightly with plastic wrap, and let it rise again for 1 ½ hours or until more than doubled in size.
  • Meanwhile, preheat oven to 350 degrees F. Whisk the last egg yolk with 1 tablespoon water and generously brush over challah. Repeat to have two coats. Sprinkle with seeds. Bake two at a time for 30-35 minutes, or until golden brown and with an internal temperature of 190 degrees F, rotating pans halfway through. If the challot start to brown too fast, cover with foil.

GARLIC AND ONION CHALLAH BREAD

2 packets (about 4 1/2 teaspoons) active dry yeast
1 1/2 cups warm water
1/4 cup plus 1 teaspoon sugar
6 1/2 cups flour, plus more for dusting (or sub in up to 2 1/2 cups whole wheat flour)
2 teaspoons kosher salt
2/3 cup flavorless oil, like canola or vegetable, plus more for the bowl
5 large eggs
1/4 cup butter, melted
1/2 onion, finely chopped
4 cloves garlic, minced
1 tablespoon honey
Flaky salt, for topping

Steps:

  • In a medium bowl, combine the yeast, warm water and 1 teaspoon of the sugar and give it a little stir. Let it sit for about 5 minutes, until it becomes foamy on top.
  • Meanwhile, in a large bowl or the bowl of stand mixer fitted with a dough hook, mix together the flour, kosher salt and remaining 1/4 cup sugar. In a separate medium bowl, whisk together the oil and 4 of the eggs.
  • When the yeast is foamy, add it to the dry mixture immediately followed by the egg mixture and stir to combine. Knead, either by hand on a floured surface or with a dough hook, adding more white flour as necessary (but resist any urge to add too much!), until you have a smooth and slightly sticky dough, 7 to 10 minutes.
  • Transfer the dough to an oiled bowl, cover it with plastic wrap and let it sit at room temperature until it has doubled in size, about 2 hours. It will take slightly longer if you're using whole wheat flour. Alternatively, you can stick it in the refrigerator overnight and then let it sit at room temperature for about an hour before shaping.
  • Line a baking sheet with parchment paper. Divide the dough into 6 pieces. Roll out each piece into a large strip, 1/2 to 1/4 inch thick and about 3 inches wide. Brush down each center with melted butter. Down the center, add the chopped onions and garlic. Roll each piece to seal in the onion mixture. Braid 3 of the pieces together, tucking the ends underneath to seal. Repeat with the remaining 3 pieces to make a second loaf. Place on the lined baking sheet and cover loosely with plastic wrap. Allow to rest for 30 minutes.
  • Preheat the oven to 350 degrees F.
  • Whisk together the honey and remaining egg in a small bowl. Brush the bread top with the mixture and sprinkle with flaky salt.
  • Bake until golden brown and not doughy in the center, about 35 minutes, but start checking at 28 minutes. Allow to cool slightly before serving.

1 loaf Italian bread
2 heads garlic
2 tbsp olive oil
8 tbsp unsalted room temperature butter
1/2 tsp sea salt (more or less to taste)
1/2 tsp ground black pepper (more or less to taste)
1/4 cup chopped flat leaf Italian parsley
1/2 cup shredded mozzarella cheese
1/2 cup shredded parmesan cheese

Steps:

  • Preheat oven to 400 degrees F. Peel the outer layers of the whole head of garlic. Making sure to leave the garlic cloves intact.
  • Use a sharp knife and cut the top 1/4 of the head of garlic. You want to be able to expose the garlic. Drizzle with olive oil and sprinkle with salt and pepper. Cover with aluminum foil. Bake for 40 minutes. Set aside to cool.
  • Once the garlic is cool enough to handle, squeeze in a large mixing bowl. Add room temperature butter, parsley, parmesan cheese, salt and pepper. Mix until smooth.
  • Make 1/2 inch wide cuts in your bread. Make sure to cut about 90% of the way down, leaving the bottom of the bread connected. Spread compound butter in between the slices, and across the top of the crust. Sprinkle the shredded mozzarella cheese on top of the bread and cover with aluminum foil.
  • Set your oven to 400 degrees F and bake the loaf for 35-40 minutes.
  • Remove from the oven and serve warm. You can cut through the bottom of the bread with a knife or pull off a slice with your hands!

500g strong white bread flour
7g sachet/1.5 tsp fast-action yeast
1 tsp salt
2 tbsp olive oil
1 tbsp clear honey
2 garlic cloves , crushed
25g soft butter
100g mature cheddar , grated
handful thyme leaves

Steps:

  • Measure the flour, yeast and salt into a large bowl. Mix 300ml hand-hot water with the oil and honey in a jug, then pour into the dry mix, stirring all the time to make a soft dough.
  • Turn the dough out onto a lightly floured surface, then knead for 5 mins until the dough no longer feels sticky, sprinkling with a little more flour as you need it. Now stretch it to fit the Swiss roll tin.
  • Mix the garlic with the butter, then dot over the dough. Sprinkle over the cheese and snip over the thyme. Cover the bread with lightly oiled cling film, then leave in a warm place to rise for 40 mins.
  • Heat oven to 200C/fan 180C/gas 6. Remove the cling film, then bake the bread for 30 mins until golden and risen. Leave to cool for 10 mins, then cut into 12 pieces and serve.
