This recipe is based on the recipe provided in the first South Beach Diet book. I modified it to suit our tastes. It's appropriate for any phase of the diet.

2 slices turkey bacon
2 teaspoons margarine spread (like Smart Balance)
1/2 cup sliced onion
1/2 cup sliced red bell pepper
1/2 cup sliced zucchini
2 plum tomatoes, diced
1 tablespoon fresh basil, chopped
1 pinch ground black pepper
1/2 cup liquid egg substitute
1/2 cup 1% low fat cottage cheese
1/4 cup 1% low-fat milk
1 ounce lowfat mozzarella cheese

Steps:

  • Cook turkey bacon per directions on package until crisp. Set aside. Crumble when cool.
  • Coat an ovenproof 10" skillet with cooking spray. Melt the spread in the skillet. Add the onion, bell pepper, and zucchini, and saute over medium-low heat until the vegetables are tender, 2 - 3 minutes.
  • Add the tomatoes, basil, and black pepper to the skillet and stir to combine. Cook until the flavors are blended, 2 - 3 minutes, and remove from the heat.
  • Preheat the broiler.
  • In a blender, combine the egg substitute, cottage cheese, and milk and process until smooth.
  • Pour the egg mixture over the vegetables and return to the heat source. Sprinkle the crumbled turkey bacon over the top. Cover and cook on medium-low heat until the bottom is set and the top is still slightly wet.
  • Transfer the skillet to the broiler and broil until the top is set - 2-3 minutes.
  • Sprinkle with the cheese and broil until the cheese melts.
  • Serve while hot.

6 ounces cremini mushrooms, thinly sliced (about 2 cups)
2 bell peppers (any color), thinly sliced
6 ounces cheese curds, roughly chopped (about 1 cup) or mozzarella, shredded
2 scallions, thinly sliced

Steps:

  • Preheat the oven to 375 degrees F. Whisk the eggs, heavy cream, 3/4 teaspoon salt and a few grinds of pepper in a large bowl until combined; set aside.
  • Heat 1 tablespoon olive oil in a 10-inch ovenproof nonstick skillet over medium-high heat. Add the mushrooms and cook, without stirring, until browned on the bottom, about 3 minutes. Stir, then continue cooking until the liquid evaporates, about 4 minutes. Add the remaining 1 tablespoon olive oil, the bell peppers and a pinch each of salt and pepper; cook, stirring, until the peppers are softened and lightly browned, 6 to 8 minutes.

1 large onion, sliced
3/4 teaspoon kosher salt
Freshly ground black pepper
8 large eggs
1/4 cup milk
1 cup diced ham
1 tablespoon chopped fresh herbs, like parsley, thyme, or dill
1 cup grated Swiss or cheddar cheese

Steps:

  • Position a rack about 8 inches from the broiler and preheat.
  • Melt the butter in a medium non-stick skillet over medium heat. Add the onions and season with 1/2 teaspoon salt and some pepper. Cook, stirring occasionally, until the onions get very soft, about 15 minutes. Meanwhile, whisk the eggs and milk in a medium bowl with the remaining 1/4 teaspoon salt and some pepper until smooth. Transfer onions to a bowl to cool. Reserve the skillet.
  • Stir the onions, ham, herbs and cheese into the eggs.
  • Heat the non-stick skillet. Pour the frittata mixture into the pan and stir to make sure the fillings are evenly arranged. Cook, stirring gently a couple times in the first minutes of cooking. Then let the mixture cook undisturbed until the bottom sets, about 5 minutes. Transfer the skillet to the oven and broil until the eggs are just set and brown, about 5 minutes. 4 ounces sharp white Cheddar, grated (about 1 1/2 cups loosely packed)

Steps:

  • Preheat the broiler to high and position a rack in the top third of the oven.
  • Put the bacon in a 12-inch nonstick ovenproof skillet and place over medium heat. Cook, stirring often with a rubber spatula, until the bacon is crispy and golden brown, about 10 minutes. Remove the bacon to a plate with a slotted spoon and remove all but 2 tablespoons of the bacon fat from the skillet. Add the red onion to the skillet along with the hash browns. 2 spring onions , ends trimmed off
4 tablespoons of frozen peas , defrosted
1 courgette , halved with the ends cut off
2 slices of ham
100g feta cheese
4 eggs

Steps:

  • Ask a grown-up helper to switch the oven on to 180C/ 160C fan/gas 4. Snip or cut up the spring onions and put them in a bowl. Add the peas to the bowl.
  • Grate the courgette using your rotary grater, one half at a time, then add it to the bowl.
  • Cut the ham into pieces with your scissors, if you do this over the bowl it will fall straight in.
  • Break the feta into the bowl by crumbling it with your hands.
  • Crack the eggs into a bowl and, if any bits of shell fall in, scoop them out with a spoon. Whisk the eggs until the yolks are mixed into the white.
  • Pour the eggs into the other bowl and stir. Brush a round ovenproof dish, about 16cm across, with oil. Tip everything into the dish. Ask a helper to put the dish in the oven for 30 minutes or until the egg is set. Serve with salad and crusty bread.

  • Blend eggs, spreadable cheese, and salt in a blender until smooth. Pour egg mixture evenly over spinach mixture. Stir spinach mixture gently with a fork to allow egg mixture to flow underneath. Sprinkle top with Parmesan cheese.
  • Transfer skillet to oven and bake until puffed slightly and a toothpick inserted in center comes out clean, about 35 minutes. Cut into 4 wedges and serve from skillet.

3 tablespoons creme fraiche
1 teaspoon chopped fresh flat-leaf parsley
1/2 cup shredded smoked gouda cheese
kosher salt & freshly ground black pepper
1 tablespoon olive oil
8 ounces fresh chorizo sausage, removed from casing
1/2 lb small Red Bliss potatoes, thinly sliced
1 cup thinly sliced yellow onion
1 red bell pepper, thinly sliced
4 ounces monterey jack cheese, shredded

Steps:

  • Preheat the oven to 450 degrees F.
  • Whisk together the eggs, creme fraiche, parsley, half of the smoked Gouda, and season with 1/4 teaspoon salt and 1/4 teaspoon pepper.
  • In a 12-inch nonstick oven-proof skillet, heat the oil over medium-high heat. Cook the sausage until starting to brown and almost cooked through. Add the potatoes and cook for 2 minutes more. Add the onion and bell pepper and cook, stirring occasionally, until starting to brown, 3 to 4 minutes.
  • Remove from the heat and pour the egg mixture over the top, stirring to distribute the vegetables. Sprinkle with the Monterey Jack and then the remaining smoked Gouda. Bake until the center is set, 12 to 14 minutes. Run a spatula around the edges of the frittata and carefully slide onto a serving platter.
