Who doesn't love cheesy chips?! Not just for a music festival, you can easily make your own food-truck style loaded fries at home with these four tasty cheesy chip recipes.

Steps:
- Season and cook the chips according to pack instructions. Meanwhile fry the bacon for 5min, until crispy and put aside to crisp up. Mix together the sriracha and mayonnaise and season to taste with salt, pepper and lime juice. Roughly chop the bacon into small pieces.
- When the chips have 5min cooking time left, remove from oven and top with the kimchi and cheese. Return to oven and cook for remaining time.
- Scatter over the bacon, spring onion and sesame seeds. Drizzle with the sriracha mayonnaise and serve.
- Season and cook the chips according to pack instructions. Heat the oil in a large pan over medium-high heat. Add the onion and mince and fry, breaking up the mince with a wooden spoon, for 10min until the beef is well browned.
- Stir in the salsa, kidney beans, tomato purée and sweetcorn, and bring to the boil. Stir through most of the coriander, if using, then season to taste.
- Switch the oven to grill and spoon the chilli evenly over the chips. Scatter over the cheddar and put until grill for 3-5min, until the cheese is golden and bubbling. Serve hot with the remaining coriander sprinkled over the top.
- Toss the chips in the oil, and cook according to pack instructions. Meanwhile in a small bowl rub together the salt and oregano. Toss this through the cooked chips along with the red onion and some pepper.
- Put onto a large serving platter and crumble over the feta, drizzle over the tzatziki and the oregano. Serve
- Toss the chips in the olive oil and Mexican seasoning. Season and cook the chips according to pack instructions.
- Meanwhile gently mash the avocado in a small bowl. Stir in 2tsp lime juice, chilli flakes, coriander, tomato and red onion. Season well with salt and pepper and more lime juice if needed.
- Switch to grill setting and sprinkle the cheese over the chips. Grill for 5min until bubbling and golden. Remove and serve with the guacamole and salsa dotted over.

- Have your GH (Grown Helper) put fries in oven on a cookie sheet. While fries are baking in the oven, have a GH place a sauce pot on the stove and heat it over medium heat. Add butter and melt it. Add the flour and stir. Cook butter and flour together for 1 minute or so. This is called "roux" (like Tiger and Roo with Pooh Bear) and it helps to thicken up sauces. Use a whisk to stir as the milk goes into the pot. Keep stirring until the milk gets thicker. Use a wooden spoon or heat-safe spatula to stir in the cheese. When all of the cheese melts, take the sauce off the heat and stir in 3 squirts of ketchup. This is your SECRET ingredient. When everyone asks what you put in your cheese sauce that makes it taste so good, just say milk and cheese, you can NEVER tell what secret ingredients you add! Tell your GH to keep the secret, too or they can never help you again!

- Read the notes before beginning the recipe.
- Preheat oven to 375F. Spread frozen fries out onto a large baking sheet. Check the back of your package to see how long fries should be baked.
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5-6 minutes.
- Once onions are soft, add garlic and cook for about 30 seconds. Add ground beef and cook, breaking up the beef with a wooden spoon, until beef is no longer pink. Add taco seasoning and water, then stir until incorporated. Drain the excess fat. Set aside.
- Heat olive oil in a large skillet over medium heat. Add Italian sausage and cook, breaking up the sausage with a wooden spoon, until it is no longer pink. Set aside.
- Add the butter to a medium saucepan and heat over medium heat until melted.
- Once butter has melted, add the flour and whisk until mixture begins to bubble and foam. Continue to whisk for another 1 minute.
- Slowly pour in the milk while whisking constantly. Once milk is incorporated, allow it to reach a simmer, whisking occasionally. Continue to simmer until milk mixture begins to thicken, it should coat the back of a spoon. This took me about 3-5 minutes.
- Turn off the heat and add cheese, 1 cup at a time, stirring after each addition until completely melted. If the cheese isn't melting, turn the stove back on to the lowest heat to help.
- Once all the cheese has been melted, stir in the salt and cayenne. Taste the sauce and adjust the seasonings to your preference.
- Once fries are done, remove from oven and top with the ground meat, cheese sauce, diced red onions, jalapeños, diced tomatoes, sour cream and diced green onions. Dig in!
