Steps:
- Heat oven to 375ºF.
- Cook chorizo in large ovenproof skillet on medium-high heat until done, stirring frequently. Remove chorizo from skillet, reserving drippings in skillet. Set chorizo aside. Add spinach to skillet; cook 2 min. or just until wilted, stirring frequently. Stir in tomatoes and onions. Remove from heat.
- Whisk eggs and milk in medium bowl until blended; stir in 1 cup cheese. Add to ingredients in skillet; stir just until blended. Top with remaining cheese.
- Bake 25 min. or until knife inserted in center comes out clean.

- Place 4 cups bread cubes in a single layer in a greased 13x9-in. baking dish. Sprinkle with 1 cup cheese and the spinach. Layer with chorizo and onion; top with remaining bread and cheese., In a large bowl, whisk eggs, milk, garlic salt and mustard. Pour over bread. Refrigerate, covered, several hours or overnight., Preheat oven to 350°. Remove strata from refrigerator while oven heats. - Place bread cubes in a greased 13x9-in. baking dish. In a large skillet, cook and crumble sausage with pepper and onion over medium-high heat until no longer pink, 5-7 minutes. - Defrost the spinach in the microwave, and then wring out any excess liquid.
- Heat the EVOO in a skillet over medium-high heat. Brown and crumble the spicy breakfast sausage, and then remove the crumbles to a plate. Return the skillet to the heat. Reduce the heat a little and melt the butter. To the skillet, add the onions and garlic and cook to soften, 5 to 6 minutes. Then add the spinach and season with salt, pepper and a little nutmeg. Turn off the heat and combine with the sausage bits.
- Arrange half of the bread in a casserole dish.
- Whisk the eggs with the milk, Dijon and some salt and pepper.
- Scatter half of the sausage-spinach mixture over the bread, top with half the cheese, pour over half the eggs, repeat. Cover and store in the fridge.
- Bring the strata to room temperature for about 30 minutes before you bake. Preheat the oven to 350 degrees F with the rack in the center of the oven.
- Set the casserole on a baking sheet and bake uncovered 1 hour. Let stand 10 minutes and serve.

Steps:
- Chop green chilies.
- seed and dice jalapeno.
- melt butter.
- Preheat oven to 300.
- Generously grease four 10 ounce ovenproof ramekins.
- Cook and drain chorizo.
- Spread an even amount of chorizo over bottom of each ramekin.
- top with chilies and jalepeno.
- spread half of the cheese cubes evenly among the ramekins.
- top with bread crumbs.
- In a medium bowl, wisk egg, cumin,salt and pepper, followed by milk.
- Drizzle each ramekin with the melted butter.
- Divide the eggs mixture evenly among them.
- Top with remaining cheese.
- Chill at least 2 hours, or overnight.
- Set ramekins in a bath of hot water and bake at 300 for 45-50 mins.till puffed and set.
- Set the ramekins under the broiler for 5-7 minutes to get a nice crispy, cheesy top.
- Serve with your favorite salsa if desired.
MEXICAN CHORIZO STRATA

- Heat a drizzle of EVOO in a skillet. Add the chorizo and cook, crumbling with a wooden spoon, until browned. Drain off the fat.
- Arrange the bread in a casserole dish. Top with the chorizo and then the roasted chiles.
- Whisk together the milk, butter, hot sauce and eggs in a bowl and sprinkle with salt and pepper; pour over the chiles. Top with the cheese. Cover and refrigerate at least overnight and up to 2 days.

- Brush both sides of the chicken with olive oil and sprinkle with the taco seasoning.
- Place the chicken in a casserole dish and bake in a 400 degree oven for 25 minutes.Note: Increase bake time if using regular cut (not thin cut) chicken breasts,
- As the chicken bakes, cook the chorizo in a skillet over medium heat for 5 to 8 minutes, breaking it apart as it cooks. Drain on paper towels to remove excess grease.

HOW TO MAKE A STRATA
Steps:
- Grease a 9x13 pan. Chop bacon into 1 1/2 inch pieces. Cook until crispy. Set aside on paper towels and pat to remove excess grease. Pour all but a couple of tablespoons of the bacon grease out of the pan. Cook shallots in remaining fat until softened. Set aside. Whisk eggs for 1-2 minutes. Whisk in milk, mustard, salt, and pepper. Stir in reserved bacon, shallots, cheese, and parsley. Fold in the torn bread. Pour into the prepared pan and cover with foil. Refrigerate for at least 6 hours, up to 24. Preheat oven to 350ºF. Bake strata for 1 hour and 10 minutes, or until golden, puffed, and set in the center. Remove from oven and let rest for 5 minutes before serving. (The strata will deflate as is rests.) Scoop portions with a large spoon rather than trying to cut into squares.
