CRISPY CHICKEN BITES
Made with just a handful of ingredients, these chicken bites come together really quickly. They're the perfect little bites, whether you want to enjoy them as a snack or as a meal!

Steps:
- Cube chicken into 1" cubes. Set aside in a bowl.
- In a shallow bowl/plate, mix together the flour and seasoning. In another bowl, whisk the egg and heavy cream together.
- Dip a piece of chicken into the flour mixture, then the egg mixture and then back again into the flour mixture, patting the flour well into the chicken.
- Set the piece of chicken aside on a sheet pan and continue repeating the process for the remainder of the chicken pieces.
- Fill a deep skillet with about 2-3" of canola oil and bring to medium heat, around 350 F.
- Deep fry the chicken cubes for about 5 minutes, until crispy brown and fully cooked on the inside. Do 2 batches to prevent overcrowding.
- Remove the chicken from the oil and set for a couple of minutes on a paper towel to drain any excess oil.
- Transfer to a plate and serve with your favorite sauce.

Steps:
- Heat oven to 375°F
- Separate dough from both cans into 8 rectangles; press perforations to seal.
- Cut each rectangle into 6 (2-inch) squares.
- Press 1 square in bottom and up side of each of 48 ungreased mini muffin cups.
- Heat bacon as directed on package; crumble.
- In large bowl, mix bacon and remaining ingredients.
- Place 1 tablespoon chicken filling in each cup.
- Bake 12 to 20 minutes or until edges are golden brown.
- Immediately remove from pans to serving platter. Serve warm.

- Preheat the oven to 375°F. Set a grid-style baking rack (see notes) on a baking sheet and coat it with nonstick cooking spray.
- Place the chicken, cream cheese, shredded cheese, 1/4 cup of the parmesan cheese, and 3 tablespoons of the panko crumbs in a mixing bowl. Add the garlic, parsley and a few grinds of black pepper and combine thoroughly.
- Combine the remaining panko crumbs with the remaining 1/4 cup of parmesan cheese on a dinner plate.
- Form the chicken-cheese mixture into 1-inch balls then roll them in the panko crumbs, set them on the prepared baking rack and coat them with the olive oil spray.
