CHICKEN PASTA BAKE

Steps:
- Heat 2 tbsp of the oil in a pan over a medium heat and fry the onion gently for 10-12 mins. Add the garlic and chilli flakes and cook for 1 min. Tip in the tomatoes and sugar and season to taste. Simmer uncovered for 20 mins or until thickened, then stir through the mascarpone.
- Heat 1 tbsp of oil in a non-stick frying pan. Season the chicken and fry for 5-7 mins or until the chicken is cooked through.
- Heat the oven to 220C/200C fan/gas 7. Cook the penne following pack instructions. Drain and toss with the remaining oil. Tip the pasta into a medium sized ovenproof dish. Stir in the chicken and pour over the sauce. Top with the cheddar, mozzarella and parsley. Bake for 20 mins or until golden brown and bubbling.

CHEESY CHICKEN PASTA

- This ooey-gooey pasta dish is a crowd-pleaser for adults and kids alike-think rich and creamy macaroni-and-cheese tossed with cauliflower and chicken. Serve with a spinach salad.;
- 1. Bring a large pot of water to a boil. Add pasta and cook for 5 minutes. Add cauliflower florets and cook until the pasta and florets are tender, about 4 minutes more. Drain, rinse and return to the pot.
- 2. Meanwhile, heat oil in a large saucepan over medium heat. Add onion and cook, stirring, until tender, 2 to 3 minutes. Add wine and cook until reduced slightly, about 1 minute. Whisk milk, flour, salt and pepper together in a medium bowl and add to the pan. Bring to a boil over medium-high heat, stirring frequently. Cook, stirring, until thickened, about 1 minute. Reduce heat to low and stir in cheese until smooth. Stir chicken (or turkey) and mustard into the cheese sauce; cook until heated through, about 2 minutes.
- 3. Stir the sauce into the drained pasta and cauliflower. Serve sprinkled with chives (or scallion greens).

Steps:
- Heat oven to 375°F.
- Cook shells al dente according to package directions.
- Cook onion and red bell pepper in butter until tender, about 5 minutes. Stir in salt and chili powder.
- In a large bowl combine soup, onion mixture, milk and 2 cups cheddar cheese and parmesan cheese. Mix well. Stir in chicken, pasta and green chiles.
- Spread into a 9x13 casserole dish. Top with remaining cheese.
- Bake 30-35 minutes or until hot and bubbly.

- Cook the pasta following pack instructions. Reserve 100ml of the water and drain the pasta in a colander.
- Meanwhile, heat the oil in a frying pan on a medium heat and fry the garlic and spinach for 3 mins until wilted. Add the soft cheese and heat until melted. Stir in most of the parmesan, then add the shredded chicken, peas and some of the pasta water. Bring to the boil and bubble for 2-3 mins until the chicken and peas are completely heated through.
- Add the pasta and stir until combined. Add more pasta water to loosen the sauce, if needed. Remove from heat, sprinkle over the remaining parmesan and parsley or basil to serve.

- Cook pasta as directed on package, omitting salt; drain, reserving 1/2 cup cooking water. Reserve 2 Tbsp. Parmesan and 1 Tbsp. onions. Combine remaining Parmesan and onions with pasta and all remaining ingredients except salsa and cream cheese; shape into 8 (4-inch) patties, using about 1/2 cup pasta mixture for each. Refrigerate 30 min. Meanwhile, blend reserved spaghetti cooking water, salsa and cream cheese in blender until smooth.
- Heat large nonstick skillet sprayed with cooking spray on medium heat. Add pasta cakes, in batches; cook 2 to 3 min. on each side or until heated through and browned on both sides. Meanwhile, cook cream cheese sauce in saucepan on medium heat 5 min. or until heated through, stirring frequently.
- Serve pasta cakes topped with sauce, and reserved Parmesan and onions.
