Keto Cauliflower Casserole with Cheddar and Bacon image

This amazingly rich and flavorful cauliflower casserole is topped with cheese, bacon, and green onions.

1 large head cauliflower (cut into small florets (1.5 lb. florets))
Olive oil spray
1 teaspoon Diamond Crystal kosher salt ((not fine salt))
1/4 teaspoon black pepper
1/2 cup sour cream ((I used low-fat, feel free to use full-fat))
2 tablespoons whole milk ((or cream))
1 teaspoon Dijon mustard
1 teaspoon minced fresh garlic
Pinch cayenne pepper
1 cup shredded sharp cheddar (divided)
2 tablespoons bacon bits
2 tablespoons thinly sliced scallions (green parts)

Steps:

  • Preheat your oven to 425 degrees F. Line a rimmed baking sheet with parchment paper.
  • Arrange the cauliflower florets on the baking sheet. Liberally spray them with olive oil and season them with kosher salt and black pepper. Roast the cauliflower until tender-crisp, about 12 minutes.
  • Meanwhile, in a large bowl, mix the sour cream, milk, Dijon, garlic, cayenne, and 1/2 cup cheddar.
  • When the cauliflower is done, add it to the sour cream sauce and mix to combine.
  • Transfer the mixture to a greased 1.5-quart baking dish. Top with the remaining shredded cheddar. Return the baking dish to the oven and bake just until cheese is melted, about 10 minutes.
  • Sprinkle the casserole with the bacon bits and the scallions and serve.

2 1/2 pounds cauliflower, core removed and roughly chopped into florets
1/2 teaspoon smoked paprika
1/2 teaspoon granulated garlic
2 ounces low fat cream cheese, softened
1/3 cup plain Greek yogurt
1/2 cup shredded part-skim mozzarella cheese
1/2 cup shredded sharp cheddar cheese
1/4 cup thinly sliced green onions, approximately 2 green onions
Kosher salt and fresh ground black pepper to taste

Steps:

  • Spray a 9x9 or similar sized baking dish with cooking spray and set aside. Preheat oven to 375°F.
  • Bring a large pot of salted water to a boil then add in the cauliflower. Lower the heat to medium and cook for 10-15 minutes or until the cauliflower is very soft. Drain the water then return the cauliflower to the pot.
  • Add the smoked paprika, granulated garlic, salt and pepper and cream cheese. Use an immersion stick to purée the cauliflower until smooth. Add in the Greek yogurt and all of the cheese minus 1/4 cup and purée again until smooth. Taste for seasoning. Stir in the green onions then transfer to the prepared baking dish. Top with the remaining cheese.
  • Bake for 15 minutes or until bubbly and the cheese on top is golden and melted. Sprinkle with extra smoked paprika and green onions.

6 slices bacon, cut 1/2-inch thick
2 medium heads cauliflower, cut into bite-size florets (3 to 4 pounds total)
Kosher salt and freshly ground black pepper
6 ounces cream cheese, at room temperature
2 cups shredded Cheddar
4 scallions, white and light green parts only, thinly sliced
2/3 cup sour cream

Steps:

  • Preheat oven to 425 degrees F.
  • Cook the bacon in a medium nonstick skillet over medium heat, stirring occasionally, until brown and crispy, 6 to 7 minutes. Transfer to a paper towel-lined plate. Reserve 2 tablespoons of the bacon drippings.
  • Put the cauliflower florets in a 3-quart casserole dish. Toss with the reserved 2 tablespoons bacon drippings, 3/4 teaspoon salt and 1/2 teaspoon pepper. Roast until the florets are soft and begin to brown, about 30 minutes.
  • Meanwhile, mix together the cream cheese and 1 cup of the Cheddar in a medium bowl until well combined. Dollop over the cauliflower, then sprinkle with the remaining 1 cup Cheddar and bake until the cauliflower is tender when poked with a knife and the Cheddar is melted and bubbly, 5 to 7 minutes more.
  • Dollop the sour cream evenly over the casserole and sprinkle with the scallions and reserved bacon pieces.

Steps:

Vegetable oil spray
1 cup heavy cream
2 ounces cream cheese, cut into small pieces

1 1/2 cups shredded sharp Cheddar, plus 1/2 cup for topping the casserole
1/4 teaspoon freshly ground black pepper
1/8 teaspoon garlic powder

Steps:

  • Preheat oven to 375 degrees F. Bring a large pot of water to a boil. Season the water with salt.
  • Spray the baking dish with vegetable oil spray.
  • Cook the cauliflower in the boiling water until crisp-tender, about 5 minutes. Drain well and pat between several layers of paper towels to dry. Transfer the cauliflower to the baking dish and set aside.
  • Bring the cream to a simmer in a small saucepan, and whisk in the cream cheese and mustard until smooth. 3 tablespoons butter
3 tablespoons flour
1½ cup milk
1 teaspoon salt

½ cup cheddar cheese (for the top)

Steps:

  • Preheat oven to 400º
  • Cut the cauliflower into bite-sized pieces. Steam in a steamer or microwave until slightly tender (about 5 minutes).
  • If necessary, drain and allow to dry before using. Add to an 8x8 baking dish and set aside.

  • Preheat the oven to 450 degrees F (232 degrees C).
  • In a large bowl, toss the cauliflower florets with butter. Season with sea salt and black pepper.
  • Transfer the cauliflower to a small 1.5 quart (1.4 L) casserole dish in a single layer. (Line the pan unless it's glass or stoneware. If there's too much cauliflower to fit in a single layer, roast on a larger baking sheet instead.) Roast in the oven for 15-20 minutes, until crisp-tender.

A nice twist to a classic. Layered and baked until golden brown. A great side dish for any meal. I prefer a grilled steak or some roasted chicken, but this is so good and creamy. Originated as a recipe I developed for a restaurant I worked for, this has been a long standing favorite of friends and family. Give it a try and I am sure you will enjoy.

3 large potatoes, peeled and diced
1 head cauliflower, chopped
1/2 cup milk
1 tablespoon butter
salt
pepper
1 red pepper, diced fine
3 scallions, diced fine
1 medium onion, dice fine
3 slices bacon, chopped and sauteed
salt
pepper
1 1/2 cups shredded swiss cheese
1 cup Italian seasoned breadcrumbs
1 tablespoon butter, melted

Steps:

  • Potato and Cauliflower Layer -- In a large pot of boiling salted water on medium high heat, cook the potatoes for about 10 minutes and then add the cauliflower and cook another 5 minutes under tender. Remove from the heat and drain. Using a potato masher or even just a fork, slightly mash. I like to do a rough mash for this dish. Add, salt, pepper, milk and butter and set to the side.
  • Bacon, Pepper and Onion Layer -- In a medium saute pan, add the bacon and saute until crisp. Remove and let it drain on a paper plate lined with a paper towel. In the same pan, use the bacon drippings (no more than 1 teaspoon, you don't want too much oil) to cook the onion and red pepper red pepper until tender. Once the onion and pepper are done add the scallions, salt and pepper to taste and remove from the heat, drain if necessary (you don't want this oily) and set to the side.
  • Cheese and Crumb Mixture -- In a small bowl, add the melted butter, bread crumbs and cheese and mix well to combine.
  • Casserole -- In a casserole dish, spray with non stick spray and heat the oven to 375. Add a layer on the potato cauliflower mix; then a layer of the bacon, pepper and onions; then a layer of the cheese and bread crumb mix. Next, again, the potato cauliflower; bacon, pepper and onions; and then the cheese and bread crumbs.
  • Bake -- Thirty (30) minutes until golden brown and bubbly. This is a great side dish and makes a great presentation when you cut into it and serve.

  • Cook the entire bag of cauliflower in the microwave. I use a covered dish with about a tablespoon of water on the "frozen vegetable" setting. Or follow instructions on the package. You can use fresh cauliflower. One medium head should yield about one pound and cook in a microwave in 4-5 minutes with a bit of water.
  • Slice 3 green onions.
  • Move cauliflower to the mixing bowl and mash with a potato masher. You could also use a mixer or food processor, but you are NOT trying to cream this. Add cheddar cheese, sour cream, scallions, salt, and pepper. Add bacon if using.
  • Mix well and move to a baking pan. Maybe refrigerated or cooked now.
  • Cook in preheated oven 375° convection until the top is browned. About 20 minutes until nicely browned. (you may adjust the temp depending on your needs for timing or cooking with other foods)
  • Try to let set for 5 minutes before serving.

6 slices bacon

2/3 cup freshly grated Gruyere (or similar melty, nutty, alpine-style cheese, divided)

Steps:

  • Place racks in the upper and lower thirds of your oven and preheat to 425 degrees F. Lightly coat a wide 3-quart (9x13) casserole dish, with nonstick spray, and line a rimmed baking sheet with parchment paper.
  • In a large bowl, toss the cauliflower florets with olive oil, garlic powder, salt, pepper, and nutmeg.
  • Transfer the cauliflower to the prepared casserole dish and spread it into an even layer. Keep the bowl handy. Roast cauliflower on the lower rack for 30 minutes, until the florets are tender and begin to brown.
  • Meanwhile, arrange the bacon strips in a single layer on the prepared foil-lined baking sheet. Bake on the upper rack until crisp, about 10 to 15 minutes.
  • Remove the bacon and cauliflower from the oven. Stir the cauliflower, spread it back into an even layer, and place it on the upper rack to continue cooking until the end of its baking time.
  • Transfer the bacon to a paper-towel-lined plate and lightly pat dry. Once cool enough to handle, roughly chop or crumble the bacon into small pieces.
  • In the same bowl that you used to toss the cauliflower, beat together the cream cheese and Greek yogurt until combined. Stir in 1/3 cup Gruyere cheese, 2 tablespoons of Parmesan cheese, and half of the chopped bacon.
  • Remove the roasted cauliflower from the oven and dollop the cream cheese mixture over the top. Sprinkle with the remaining 1/3 cup of Gruyere and 2 tablespoons of Parmesan.
  • Return the pan to the upper third of the oven and bake until the cheese is melted and gooey, about 5 to 7 minutes. Turn the oven to broil. Broil the casserole until golden on top, 1 to 3 minutes. Do not walk away, and watch carefully to make sure the cheese does not burn.
  • Remove from the oven and sprinkle with fresh chives and remaining bacon. Serve hot.

1/2 yellow onion, diced
1 garlic clove, minced
2 tablespoons butter
2 tablespoons flour
1 1/2 cups milk
1 1/2 cups sharp cheddar cheese, shredded
1/2 cup parmesan cheese, grated
1/2 teaspoon salt and pepper, to taste

Steps:

  • Preheat oven to 400 degrees and generously butter an 8" square casserole dish.
  • Bring water to boil in a large pot over high heat and cook cauliflower for 6 minutes. Remove from heat, strain then place in a casserole dish.
  • Sauté onion and garlic in butter over medium heat until onion is translucent, about 2 minutes. Add flour, whisk to combine then cook for 1 minute. Slowly whisk in milk until flour is dissolved. Stir in cheeses until melted. Turn off heat and season with salt and pepper to taste.
  • Pour cheese sauce over cauliflower then bake 20-25 minutes or until hot and bubbly. Cool for at least 5 minutes before serving.

1 head cauliflower, separated into florets
1 cup sour cream
1 cup shredded Cheddar cheese
½ cup crushed corn flakes
¼ cup finely chopped green bell pepper
¼ cup finely chopped red bell pepper
1 teaspoon salt
¼ cup grated Parmesan cheese
1 pinch paprika

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 2 quart baking dish.
  • Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the cauliflower, and steam until crisp-tender, about 5 minutes. Drain, and set aside.
  • Combine sour cream, Cheddar cheese, corn flakes, bell peppers, and salt in a medium bowl. Stir in the cauliflower, and transfer to the prepared baking dish. Sprinkle Parmesan cheese and paprika over the top of the dish.
  • Bake uncovered until heated through, 30 to 35 minutes.

Steps:

  • Cook cauliflower: Add 1-inch of water to a large pot. Bring the water to a boil. Place the cauliflower florets in a steamer basket and insert the basket into the pot. Cover the pot, reduce the heat to medium and steam until the cauliflower is tender-crisp, about 5-8 minutes. Drain the cauliflower and transfer it to a clean work surface lined with paper towels. Gently pat the cauliflower dry and set aside to cool.
  • Preheat oven to 350-degrees F. Spray an 9x9 or 8x10-inch baking dish with non-stick cooking spray.
  • Mix wet ingredients + seasonings: In a large mixing bowl, combine the condensed soup, mayonnaise, eggs, garlic powder, paprika and cayenne. Season with ½ teaspoon of salt and heaping ¼ teaspoon of pepper. Whisk until thick, creamy, and well combined.
  • Add remaining ingredients: Add the steamed cauliflower, 1 cup of cheddar (4 ounces), all the gruyere, ¼ cup of bacon, and all the parsley. Gently mix well to combine.
  • Add to baking dish: Transfer mixture to the prepared baking dish.
  • Top with cheeses & Bake: Top the casserole with the remaining ½ cup of cheddar. Bake for 40 minutes.
  • Add onions + remaining bacon: Remove the casserole from the oven and top with the remaining bacon and all the crispy onions. Return to oven and bake for an additional 5 minutes, or until the casserole is bubbly and golden brown on top.
  • Cool: Remove from the oven and let you cool 5-10 minutes before serving.
  • Serve: Garnish with grated parmesan and chopped parsley. Serve and enjoy while warm!
