CHEESY CATFISH CHOWDER
This chowder is delicious! You could substitute any type of fish or seafood for the catfish and it would be just as good.

Steps:
- In a Dutch oven over medium heat, melt butter and saute the onion until tender.
- Pour in chicken broth and water.
- Mix in celery, carrots, and potatoes.
- Cook 10 minutes, stirring occasionally, until vegetables are tender.
- In a small bowl, whisk together 1 1/2 cups of milk and all of flour. Mix into the Dutch oven.
- Mix remaining milk, celery salt, salt, and pepper into the Dutch oven. Stirring occasionally, continue cooking the mixture about 10 minutes until thickened.
- Stir the catfish into the mixture, and cook 5 minutes or until fish is easily flaked with a fork.
- Mix in the cheddar cheese and cook another 5 minutes until cheese is melted.
- Enjoy!

CATFISH BAKED WITH CHEESE
Adapted from Craig Claiborne's Southern Cooking. This is also good when made with other kinds of fish. Don't try to fry them; they'll burn.

Steps:
- Preheat oven to 350°F.
- Wipe fish dry.
- Combine cheese, flour, salt, pepper and paprika in a shallow dish.
- Combine egg and milk in a shallow dish.
- Dip fish in egg mixture, then in flour mixture, turning to coat.
- Arrange in a single layer in a baking dish.
- Pour the butter over the fish.
- Top with the almonds, if using.
- Bake for about 20 minutes, until fish is cooked through.
CATFISH SOUP

Steps:
- Bring the dashi to a simmer in a 4-quart saucepan over medium heat. Add the lemongrass, galangal, cilantro, habanero, fish sauce and lime juice and bring the liquid to a simmer. Add the catfish and the coconut milk and cook until the fish is just cooked through, about 4 to 5 minutes. Remove from the heat, ladle into soup bowls and serve immediately.
PETE'S CATFISH

- Put the catfish a shallow pan and cover with water. Add a tablespoon of the salt, cover with plastic wrap and soak overnight in the refrigerator.
- Mix the cornmeal, flour, the remaining1 teaspoon salt and the black pepper in a plastic bag. Drain the water from the catfish and transfer the fillets one at a time to the bag with the cornmeal. Shake the bag to coat the fish and place on a sheet tray or platter.
- Heat the oil in a deep fryer or Dutch oven to 300 degrees F.
- Drop a few fillets into the hot oil. Do not overcrowd. Cook the fish until golden brown, about 10 minutes. Remove the pieces with a slotted spoon and keep warm in an oven while frying the remaining pieces.
CORNMEAL-CRUSTED CATFISH
Steps:
- Stir together the milk and 1 heaping tablespoon of the House Seasoning. Pour the milk mixture into a shallow baking dish large enough to hold the filets. Spread the filets in an even layer in the dish, turning to coat each side. Let marinate for about 1 hour in a cool place or the refrigerator.
- Pour enough oil into a large Dutch oven to come 2 inches up the side. Clip a deep-fry thermometer to the pot and heat over medium-high heat until the thermometer reaches 370 degrees F.
- Meanwhile, stir together the cornmeal, flour and remaining 1 heaping tablespoon House Seasoning in a paper bag. Working with a few filets at a time, remove them from the marinade, allowing any excess to drip off. Place them in the paper bag and gently turn the bag over several times until the filets are evenly coated with the cornmeal mixture. Remove the filets and place them on a baking sheet while you repeat the process with the remaining filets.
- Working in batches, fry the filets until golden brown and crisp on the outside and moist and flaky inside, adjusting the heat to maintain temperature, about 5 minutes. Transfer to a clean wire rack set over a rimmed baking sheet to drain. Serve the filets with lemon wedges.
- Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl.

- Preheat oven to 450 degrees F (230 degrees C). Line a cooking sheet with aluminum foil and spray lightly with cooking spray.
- In a shallow dish, mix together crushed chips, chili powder, salt, and pepper.
- In another bowl, mix egg and oil. Dip catfish in egg and oil mixture, then dredge in chips mixture. Place catfish on foil-lined baking sheet, and sprinkle any leftover chip mixture over the catfish.
- Bake in a preheated oven until catfish is flaky and white in the middle, 10 to 12 minutes.

- For salsa, in a large bowl, combine the tomatoes, onion, jalapenos, vinegar and 1 teaspoon salt.
