PASTA WITH BRUSSELS SPROUTS AND BACON

Bits of crisp bacon offset tender rigatoni and brussels sprouts in this main dish. Sauteeing the sprouts before braising them adds flavor and helps preserve their texture.

6 ounces bacon (about 7 slices), cut into 3/4-inch pieces
Up to 1/4 cup extra-virgin olive oil
2 large garlic cloves, minced
4 large shallots, cut into thin rounds
1 1/4 pounds brussels sprouts, trimmed and halved (quartered if large)
1 1/4 cups homemade or low-sodium store-bought chicken stock
Coarse salt and freshly ground pepper
12 ounces rigatoni pasta
1/2 cup freshly grated Parmesan cheese, plus more for serving
1/3 cup coarsely chopped fresh sage leaves, about 20 leaves

Steps:

  • Heat a dry large skillet over medium heat. Add bacon; cook, stirring occasionally, until crisp, 5 to 7 minutes. Using a slotted spoon, transfer to a paper-towel-lined plate to drain. Add enough oil to bacon fat in skillet to total 2 tablespoons. Add garlic, shallots, and sprouts; cook, stirring occasionally, until pale golden, about 3 minutes. Add stock; season with salt and pepper. Cook until most of the liquid has been absorbed and sprouts are tender, 10 to 12 minutes.
  • Meanwhile, bring a large pot of water to a boil; add 1 tablespoon salt and the pasta. Cook according to package directions until al dente. Drain, reserving 1/2 cup cooking liquid; return pasta to pot.
  • Stir in sprouts mixture, reserved 1/2 cup cooking liquid, and cheese. Drizzle with 2 tablespoons oil; add sage and bacon. Toss until combined. Serve with more cheese.

2 cups macaroni
1½ ounces butter
6 slices bacon
3 tablespoons flour
2¾ cups milk
2 cups cheese (grated (I used tasty cheddar cheese, but a mixture of whatever you have is great))
5½ ounces leftover turkey (a good couple of handfuls, or however much you have!)
7 ounces leftover cooked brussels sprouts (halved)
leftover stuffing (optional)

Steps:

  • Pre-heat the oven to 200C / 390F.
  • Cook the macaroni in salted boiling water for about eight minutes. If you're cooking your brussels from scratch, add them into the water after four minutes. Drain and set aside.
  • Melt the butter in a medium to large saucepan and cook the bacon until starting to crisp (8 to 10 minutes). Remove with a slotted spoon, leaving behind the butter and juices.
  • Add the flour to the pan and cook, stirring, for a minute or so. Take off the heat and very slowly add the milk. Heat and stir until simmering.
  • When the sauce is smooth and thickened somewhat, add about two thirds of the cheese, followed by the macaroni, turkey, brussels, bacon, and stuffing (if using). Stir in well, and season.
  • Tip into a medium-sized baking dish, and scatter with the rest of the cheese. Bake for about 20 minutes until bubbling and golden.

15 Brussels sprouts, halved lengthwise
3 tablespoons olive oil
3 garlic cloves, smashed with the flat of a knife
1 cup fresh parmesan cheese
1 dash sea salt
1 dash black pepper

Steps:

  • Put olive oil in a medium skillet (over medium-high heat).
  • Reduce heat to medium, add smashed garlic and cook until lightly browned.
  • Add sprouts cut side down, cover, and cook without stirring on medium-low heat 10-15 minutes or until tender when pierced with a fork.
  • Top with freshly grated Parmesan and salt & pepper.

This is my fiance's recipe from the days when the only kind of meat he could afford was bacon! It really only bears a passing resemblance to traditional carbonara recipes, but it's awfully good just the same. Use any kind of pasta like rotelli, tagliatelle, etc., that will catch the sauce.

4 slices bacon
1/4 cup parmesan cheese
1/4 cup half-and-half
1/4 onion, chopped

Steps:

  • Boil water for the pasta and cook per package directions.
  • Meanwhile, cut bacon into 1/2 inch or 1 inch squares and saute 5 minutes on medium heat.
  • Add the onion and saute until bacon is crispy and onion is soft.
  • Add pasta, stir.
  • Add parmesan and stir continuously for about 1-2 minutes.
  • Add half and half and stir continuously for about 1-2 minutes.
  • Serve on warmed plates.

3/4 cup mayonnaise
2 tablespoons basil leaves, fresh, chopped or 1 teaspoon dried basil
1 teaspoon lemon, rind of, grated
1 teaspoon lemon juice
7 ounces pasta shells, small
6 slices bacon, cooked crisp, crumbled
1 1/2 cups turkey, smoked cut into strips
1 1/2 cups lettuce, shredded
1 cup cheese, shredded, your favorite kind
1 large tomatoes, chopped (1 Cup)

Steps:

  • Cook pasta as directed on package; omitting salt.
  • Rinse pasta in cold water; drain.
  • Mix together mayonnaise, basil, lemon peel and lemon juice in a large bowl to form dressing.
  • Add pasta, bacon (reserving 2 Tbl for topping), turkey, lettuce, cheese and tomato to dressing.
  • Mix well.
  • Cover and refrigerate 1-2 hours to blend flavors.
  • Sprinkle with reserved bacon.
  • Serve.

1/2 lb country-style smoked bacon, diced
2 shallots, diced
1 lb mushroom, sliced (shiitake or button)
1/4 cup green onion, chopped
1/2 cup white wine
1/2 teaspoon summer savory
1 teaspoon Dijon mustard
2 cups heavy cream
2 lbs cooked turkey, cubed
1 cup fresh parmesan cheese, grated
2 lbs penne pasta, cooked and drained
fresh parsley, chopped for garnish

Steps:

  • In a large frying pan, sauté bacon until no longer pink but not crisp. Leave 2 tablespoons bacon fat in pan, removeing excess. Add shallots, and sauté until translucent. Add mushroooms an green onions; sauté for two minutes.
  • Add white wine and bring to a boil; reduce and simmer until liquid is reduced by half. Add cooked turkey half-way through the second reduction process.
  • When sauce is reduced, add 3/4 cup Parmesan, reserving the remaining 1/4 cup. Serve sauce over pasta.
  • Garnish with fresh parsley and remaining Parmesan. Serve with bread, grilled or toasted wih garlic butter.

This recipe I received from an elderly lady who, with her daughters, catered homecooked food for large parties. My 11yr old daughter fell in love with these and I was able to get the recipe because of this.

3 (8 ounce) bags frozen Brussels sprouts
1 cup sugar
1 medium onion
1 (4 ounce) jar diced pimentos
1 (8 ounce) package mushrooms
1/2 cup butter
2 cups shredded mild cheddar cheese
2 cups shredded sharp cheddar cheese (this is more cheese than the original recipe, but my family LOVES cheese!)

Steps:

  • Fill large pan with water and stir in sugar. Bring to boil. Add brussel sprouts. (the sugar takes the bitterness out of the brussel sprouts.) Cook until brussel sprouts are tender when stuck with fork. Drain and put into large casserole dish. (I use one that measures 9 x 13).
  • Dice onion and slice mushrooms. Place in large skillet with butter. Saute until onion and mushrooms are both tender. Dump (with the butter) onto the brussel sprouts.
  • Add pimentos to brussel sprouts. Then add about half of both cheeses. Toss to evenly mix ingredients. Spread evenly through dish. Sprinkle with remaining cheese. Cover with aluminum foil and bake at 350 degrees for about 40 minutes or until cheese is throughly melted.

1 1/4 lbs Brussels sprouts, cut in half (about 5 cups)
6 slices bacon, cut into 1-inch pieces
1 tablespoon butter or 1 tablespoon margarine
1 large onion, finely chopped (1 cup)
1 tablespoon all-purpose flour
1/4 teaspoon dried thyme leaves
1/4 teaspoon pepper
3/4 cup half-and-half
2 teaspoons chicken bouillon granules
1/3 cup shredded parmesan cheese
1/2 cup shredded cheddar cheese

Steps:

  • Heat oven to 350 degrees. Remove any discolored outer leaves and trim stem portion of brussels sprouts. In a 3-quart saucepan, place brussels sprouts; add enough water just to cover. Heat to boiling; boil 6-8 minutes or until crisp-tender. Drain and return to saucepan; set aside.
  • Meanwhile, in a 10-inch skillet, cook bacon over medium heat, stirring occassionally, until crisp. Remove bacon and drain on paper towels; set aside. Drain all but 1 tablespoon bacon fat from skillet.
  • Add butter to bacon fat in skillet. Heat over medium-high heat until butter is melted. Add onion; cook 2-3 minutes, stirring frequently, until crisp-tender. Add flour, thyme and pepper; cook and stir until well-blended. Gradually stir in half-and-half and bouillon granules. Heat to boiling, stirring constantly; boil and stir 1 minute. Remove from heat and stir in Parmesan cheese.
  • Pour sauce over brussels sprouts in saucepan; mix gently. Spoon into 2-quart casserole. Bake uncovered 25-30 minutes, sprinkling with crumbled bacon and Cheddar cheese for last 10 minutes of baking, until hot and bubbly. Serve right away.

I don't know why I love brussels sprouts, but I do. I always challenge myself to find new ways to cook it. And I planted brussels sprouts seeds in my mini garden for the first time...I can't wait to see if they actually grow!

10 slices turkey bacon, cut into 1/2 inch pieces
3 garlic cloves, minced
4 shallots, thinly sliced
1 1/2 lbs small Brussels sprouts, washed, trimmed and halved
1 1/2 cups chicken stock
12 ounces pasta, I like to use a rigatoni or 12 ounces a cavatappi pasta
1/3 cup parmesan cheese, fresh grated
1/3 cup romano cheese, fresh grated
1/3 cup sage, fresh and roughly chopped

Steps:

  • Season the bacon liberally with black pepper. I love Turkey Bacon but it needs the extra kick of pepper.
  • Heat a large skillet over medium heat. Add bacon, and cook until crisp (about 6-8 minutes). Watch the bacon and turn frequently. I find that Turkey bacon burns much easier than regular as it has less fat.
  • Once the bacon is finished cooking, remove bacon from the pan with a slotted spoon and drain on paper towels. Add enough olive oil to the skillet to total about 2 Tablespoons. Add garlic, shallots, and sprouts. Season with salt and pepper.
  • Cook for about 3 minutes, or until the sprouts begin to brown. Add the stock. Season again with salt and pepper. Cook about 10-12 minutes or until most of the liquid has been absorbed.
  • In the meanwhile, bring a large pot of water to a boil, add salt, and cook the pasta according to the manufacturer's directions. Be careful not to over cook.
  • Drain but reserve about 1/2 cup of the cooking water. Return pasta to the pot. Stir in brussels sprouts mixture, cooking liquid, cheese, sage, and bacon. Drizzle with a bit of olive oil. Stir until well combined.
  • Serve along side your favorite main dish or as a main dish on its own.
