1 cup uncooked orzo

Steps:

  • Bring a large pot of water to a boil. Once boiling, pour orzo in and cook 3 minutes.
  • Add broccoli in to the orzo and continue cooking for another 3 minutes or until pasta is tender.
  • Drain pasta and broccoli before adding in butter, milk, cheddar, parmesan, garlic powder, salt, and pepper. Stir until well combined.

4 tablespoon butter (unsalted)
1 small onion (chopped)
4 cloves garlic (minced)
2 cups orzo (dry)
1/2 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
2 cups chicken broth (low sodium)
2 cups half and half
1 1/2 cup Parmesan cheese (freshly grated)
2 tablespoon fresh parsley (chopped)

Steps:

  • In a large skillet add the olive oil, butter and cook for about 30 seconds until the butter melts. Stir in the onion and garlic and let it cook for about 2 minutes until the onion softens and the garlic becomes aromatic.
  • Add the orzo to the skillet and let it cook for about 2 minutes just in the oil so that it starts to toast lightly, this will give it a nutty flavor.
  • Season with salt and pepper then stir in the chicken broth and half and half. Bring to a boil, then turn the heat down to a medium-low, cover with a lid and let it cook for 5 minutes.
  • Remove the lid and stir in the Parmesan cheese and fresh parsley.
  • Serve immediately.

  • Cube chicken breasts into bite size pieces and season with salt and pepper.
  • In a sauté pan over medium heat, and add one tablespoon of olive oil. When hot, add chicken in a single layer and cook until heated to an internal temperature of 165 degrees Fahrenheit, about 3-4 minutes, flipping once halfway through. Remove from pan, cover, and set aside.

3 tbs olive oil, divided
1 lb chicken breast, cut into smaller cubes
1/2 tsp salt, divided
1/4 tsp pepper, divided
1/2 tsp paprika, divided
1/2 tsp onion powder, divided

1 white onion, diced
1 tbs minced garlic
2 1/2 cups chicken broth
1 cup orzo, uncooked
3 cups fresh broccoli florets
1/2 cup heavy cream
1 cup shredded sharp cheddar cheese

Steps:

  • Heat a saute pan over medium heat. Add 2 tbs of the olive oil once hot add the cubed chicken and season with half the amount of all of the seasonings. Cook the chicken though. Once cooked remove the chicken to a separate plate and set to the side.
  • Add 1 tbs of olive oil to the same pan you cooked the chicken in, once hot add the diced onion saute the onion for 3-5 minutes or until it starts to get soft now add the remaining amount of seasonings and minced garlic. Stir for a minute to let the garlic become fragrant.
  • Pour the broth in and scrape any bits off the bottom of the pan. Stir the orzo in bring up to a simmer then cover with a lid let simmer for 2 minutes. Remove the lid and stir the broccoli in place the lid back on the pan and continue to let simmer for 8-10 minutes or until the orzo is tender and the liquid in the pan is absorbed. (If needed to cook your orzo you can add an additional 1/4 cup of water if it becomes too dry)
  • Remove the lid and add the cooked chicken back in the pan, heavy cream and cheese stir well to melt the cheese down. Enjoy!

1 1/2 Cups Shredded Cheddar Cheese

Steps:

  • Melt the butter in a large pot over medium heat.
  • Add the onion, garlic, and orzo to the pan and cook, stirring occasionally for 5 minutes.
  • Add the oregano, basil, salt, pepper, dijon mustard, hot sauce, broth, and broccoli to the pan and stir to combine.
  • Simmer over medium heat for 9-12 minutes, until the orzo is soft, stirring frequently.
  • Stir in the cream cheese and 1 cup of the shredded cheddar. Taste and add more salt & black pepper if desired.
  • Turn off the heat, cover the pan and allow the cheese to melt, about 2-3 minutes.
  • Serve immediately and store any leftovers in an airtight container in the refrigerator for up to 3 days.
  • Turn the instant pot to saute mode and add the butter.
  • Once melted add the onion, garlic and orzo and cook, stirring constantly for 3 minutes (the instant pot cooks faster and we don't want the garlic to burn).
  • Turn the instant pot off and add in the oregano, basil, salt, pepper, mustard, hot sauce, broth and broccoli and stir to combine.
  • Place the lid on the pot and seal the valve. Turn the pot onto manual/high pressure for 5 minutes, keeping in mind the pot will take about 5-8 minutes to come to pressure.
  • Once the cook time is up, do a quick release of the pressure.
  • Stir in the cream cheese and cheddar and serve.

Steps:

  • Bring broth and water to a boil in a medium saucepan over high heat.
  • Stir in chicken and orzo and return to a boil, reduce heat to medium to medium-high heat and simmer for 6 minutes, add broccoli and simmer for about 6 minutes longer, or until pasta and broccoli are tender and most of the liquid is absorbed.
  • Remove from heat and stir in salt, pepper and cheese. Serve immediately.

This is an all-in-one-meal that will ensure your kids eat their vegetables. The broccoli and orzo cook together, so it's impossible to eat the pasta without the broccoli. The chicken drumsticks are tossed in a kid-friendly spice mix and then baked in the oven. This will become your go-to, easy weeknight, kid-approved dinner.

2 tablespoons vegetable oil, plus more as needed
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Kosher salt and freshly ground black pepper
8 chicken drumsticks
2 1/4 cups chicken broth, plus more if needed
2 cups small broccoli florets, stems finely chopped
3/4 cup orzo
1/3 cup freshly grated Parmesan, plus more for garnish

Steps:

  • Preheat the oven to 400 degrees F and line a rimmed baking sheet with parchment paper.
  • Whisk together the oil, garlic powder, onion powder, 1 teaspoon salt and 1/2 teaspoon pepper in a large bowl. Add the drumsticks and toss to coat in the spice mixture. Transfer to the prepared baking sheet and roast, flipping halfway through, until the skin is crisp and golden and the drumsticks register 165 degrees F on an instant-read thermometer, 30 to 35 minutes.
  • Meanwhile, bring the chicken broth to a simmer in a medium saucepan over medium heat. Add the broccoli, orzo, 1/2 teaspoon salt and 1/4 teaspoon pepper. Reduce the heat to medium low and continue to cook, stirring occasionally to prevent sticking, until the orzo is al dente and the broccoli begins to get very soft, about 15 minutes. If the pan starts to look too dry, add another splash of chicken broth. Stir in the Parmesan, then use the back of a wooden spoon to slightly mash the broccoli, breaking it up into very small pieces.
  • Serve the drumsticks over the broccoli orzo and garnish with more Parmesan.

  • Using a medium sized saucepan over medium-high heat, bring the broth to a boil. Add the orzo and cook until almost tender, for about 7 minutes, turning the heat down to medium-low once the orzo has been added and mixing occasionally so the orzo does not stick to your saucepan. Most, if not all, of the broth will be absorbed into the orzo. Remove from heat and set aside.
  • Using a large skillet over medium-high heat, heat the olive oil and add the onions and saute until tender, for about 3 minutes. Add the mushrooms and broccoli and continue to saute for about 5 to 6 minutes.
  • Turn the heat to low and add in the cooked orzo and any remaining broth. Pour in the heavy cream and the parmesan, mozzarella, cheddar cheese and cooked chicken and mix well to combine everything. Remove from the heat and season with salt and pepper and stir to combine. Pour the mixture into the prepared baking casserole dish.
