I LOVE to create new recipes. My son's love for beans and cheese is the inspiration for this very simple chili. It's perfect served with corn bread and salad.

1 pound lean ground beef
4 green onions, chopped
3 (15 ounce) cans black beans, rinsed and drained
1 (15.25 ounce) can whole kernel corn, undrained
2 (1.25 ounce) packages chili seasoning mix (such as French's Chili-O Original Seasoning Mix®)
1 (28 ounce) can crushed tomatoes
1 cup water
1 (1 pound) package processed cheese food (such as Velveeta®), cubed

Steps:

  • Place ground beef into a large skillet and cook, stirring often, until the beef is browned and crumbled, about 10 minutes. Stir in green onions after 5 minutes. Drain excess grease.
  • Place ground beef mixture into a large soup pot over medium heat.
  • Stir in black beans, corn and its liquid, chili seasoning mix, crushed tomatoes, and water; stir to combine. If chili seems too thick, mix in a little more water.
  • Cover the chili and cook 1 hour; add processed cheese cubes, allow to melt, and stir into the chili until smooth just before serving.

2 tablespoons extra virgin olive oil
3 garlic cloves, minced
1 medium onion, diced
3 tsp chili powder
1 tsp cumin
1/2 to 1 tsp salt (to taste)
1- 4.2oz can diced green chilies
2 carrots, diced
1 cup frozen corn
2-15oz cans black beans
4 whole canned tomatoes, chopped plus 1/2 cup juice
For the cheesy jalapeno cornbread:
2/3 cup medium grind cornmeal
1/3 cup all-purpose flour
1 1/2 tsp baking powder
1 tsp chili powder
1 tsp garlic powder
1 tsp sugar
1/4 tsp salt
1 cup shredded Sincerely Brigitte Jalapeno Cilantro Cheese (about 3oz)
2/3 cup milk
2 tbsp neutral flavor oil (such as grapeseed or avocado)
1 tsp apple cider vinegar

Steps:

  • Heat oil in a large soup. Add onion and garlic and cook over medium-high heat for 5 minutes, stirring often. Add chili powder, cumin and salt and cook for another 2 to 3 minutes
  • Add canned green chilies, carrots and corn and continue cooking for about 10 minutes, stirring often
  • Add black beans (with their water) and one cup of water and cook for about 15 minutes, until the carrots are tender. Add tomatoes and tomato juice and cook for another 5 minutes. Set aside
  • Preheat the oven to 400F
  • In a large bowl, combine cornmeal, flour, baking powder, chili and garlic powder, sugar and salt and mix well. Add the shredded cheese and mix again
  • in a small bowl, whisk together milk, oil and vinegar. Pour over the dry ingredients and mix with a wooden spoon, until well incorporated
  • Spoon a heaping cup of chili into 4 medium baking dishes or ramekins. Top with a heaping 1/3 cup of cornbread mixture, spread it gently with your fingers and bake for 25 minutes

I aquired this recipe from a co-worker at a pot luck about a year ago. This is a bit different from your average chili and offers just the right amount of spice and great flavors. It can easily be made fully vegetarian by substituting for the chicken broth. Enjoy! Suggestion: If you want a thicker more 'chili-like' consistency try mashing a half a cup or more of the rinsed black beans then add with the rest of the beans.

1 (10 ounce) package frozen corn
2 tablespoons olive oil, divided
1 onion, chopped
4 garlic cloves, minced, to taste
2 teaspoons ground cumin
1 tablespoon chili powder (add more if you want spicy)
1 (14 1/2 ounce) can low sodium chicken broth
2 (15 ounce) cans black beans, drained and rinsed
2 (14 1/2 ounce) cans diced tomatoes with green chilies
sour cream
shredded cheddar cheese

Steps:

  • Preheat oven to 400°F.
  • Place corn in a large baking pan; add 1 Tbs olive oil and stir the corn to coat.
  • Bake until the corn is browned, stirring once, about 20 mins total.
  • Note: Corn sometimes does not brown, but bake until it smells roasted.
  • While corn is roasting, cook onion in remaining 1 Tbs olive oil in a large sauce pan over medium heat until soft, about 5 minutes.
  • Add garlic, cumin, and chili powder and cook, stirring constantly, about 1 minute.
  • Stir in broth, beans, and tomatoes; reduce heat to simmer.
  • Cover and cook 15 mins then stir in corn and simmer for additional 5 minutes.
  • Serve chili with sour cream and shredded cheese.

1 cup basmati rice (cooked to package instructions with a firm texture) or 1 cup white rice (cooked to package instructions with a firm texture)
2 -3 tablespoons olive oil
1 large onion, diced
4 garlic cloves, finely chopped
1 jalapeno pepper, finely diced (to taste)
1 cup corn
2 tablespoons chili powder (chipotle, ancho, etc.)
2 teaspoons cumin
1 (15 ounce) can black beans, drained and rinsed well
1 (10 ounce) can diced tomatoes and green chilies, drained
2 cups shredded cheddar cheese (plus extra for melting on top) or 2 cups monterey jack cheese (plus extra for melting on top)
chopped cilantro, chopped green onion, sour cream and avocado for garnish
tortilla chips (optional)
flour tortilla (optional)

Steps:

  • In a large pan, heat olive oil over medium heat. Add the onion and saute until soft and translucent, about 5 minutes. Add garlic and continue sauteing another 2 minutes. Add the jalapeno pepper then the corn; stir well. Add chili powder and cumin and stir together until mixed.
  • Add beans and drained tomatoes; stir well. Remove from heat and fold in the prepared rice, incorporating all ingredients. Add cheese and stir together until cheese is distributed and melted. Salt and pepper to taste, if desired. Sprinkle remaining cheese on top. (If your rice is cold, placing the lid on top a few minutes should warm it through.).
  • Serve with a variety of toppings: chopped cilantro, green onions, sour cream, avocado slices and chips or flour tortillas.

Whether or not you've fallen for this cheesy white-bean tomato bake, we'd like you to meet its bolder counterpart, smoky and spiced, with lots of melty cheese. Black beans shine in a deep-red mixture of fried garlic, caramelized tomato paste, smoked paprika and cumin. The whole skillet gets coated in a generous sprinkling of sharp Cheddar or Manchego cheese, then baked until melted. The final result is what you hope for from a really good chili or stew, but in a lot less time. For a spicier rendition, add a pinch of cayenne with the paprika, or douse the final skillet with hot sauce. Serve with tortillas, tortilla chips, rice, a baked potato or fried eggs.

Steps:

  • Heat the oven to 475 degrees. In a 10-inch ovenproof skillet, heat the olive oil over medium-high. Fry the garlic until lightly golden, about 1 minute. Stir in the tomato paste, paprika, red-pepper flakes and cumin (be careful of splattering), and fry for 30 seconds, reducing the heat as needed to prevent the garlic from burning.
  • Add the beans, water and generous pinches of salt and pepper, and stir to combine. Sprinkle the cheese evenly over the top then bake until the cheese has melted, 5 to 10 minutes.
