This recipe serves 2 but can easily be doubled. The cheese gives this a nice richness. I have made this with both scallop and shrimp also.

I don't recall where I got this excellent recipe, but have been making it for special occasions for 25 years! Easy to put together, and very elegant served with rice pilaf and a green salad for company. I like to serve this in prepared scallop shells.

THE BEST CHEESY SCALLOPED POTATOES
What makes this the best out of all the scalloped potatoes recipes out there? I slice them extra thin and toss them in a rich, creamy cheese sauce. Then, to make them the best ever, I sprinkle homemade bread crumbs on top-they get nice and crispy in the oven. Make room for these at all your family get-togethers. -Aria Thornton, Taste of Home Prep Cook

- Combine the bread crumbs, 1/8 cup Parmigiano Reggiano, salt and pepper on a plate and mix together.
- Wash scallops and remove the small, tough side muscle. The side-muscle is a little rectangular tag of tissue on the side of the scallop. It feels tougher than the rest of the scallop and its muscle fibers run opposite the fibers in the scallop itself. Just pinch it between your thumb and first-finger with a paper towel, and tear it away.

- Start by making a blond roux, combination of unsalted butter and flour. In a medium sauce pan, melt 1 cup unsalted butter. As it melts, the milk solids will rise to the top, a frothy white. Skim this off and then pour through a fine mesh sieve. Return the now clarified butter back to the sauce pan.
- Whisk in flour over medium heat. Continue to whisk until the mixture is a loose paste, darkens slightly in color and starts to smell nutty. Remove before mixture turns tan or smells like popcorn (this would be a golden or dark roux). Remove from heat and set aside.
- In a small skillet, melt salted butter, seasoned bread crumbs and season lightly with fine sea salt and freshly ground pepper. Mix until butter has been absorbed and is like wet sand. Remove and set aside.
- Preheat oven to 350 degrees and heat a large skillet over high heat with about 1 tablespoon of unsalted butter. If this does not cover the bottom of your skillet, add a small amount more. Heat until very hot.
