1 egg, beaten
1/4 cup buttermilk
1/3 cup self-rising flour
1 cup shredded Cheddar cheese
1 can (14.5 ounce size) salmon, skin and bones removed
1 tablespoon oil

Steps:

  • Combine the egg and buttermilk in a bowl and whisk until combined. Stir in the flour and cheddar cheese and mix well until the flour is dissolved. Gently stir in the salmon. Form the salmon mixture into equal-sized patties and set on waxed paper. Heat the oil in a large skillet over medium heat. When hot, add the salmon patties and cook for 5-7 minutes or until lightly browned on each side and heated through. Serve hot. Goes well with a dollop of sour cream or tartar sauce.

12 ounces cheese tortellini
1 1/4 cups alfredo sauce (low fat is OK)
1 tablespoon fresh dill, chopped
2 tablespoons green onions, thinly sliced
1 teaspoon olive oil
4 ounces salmon fillets, skinless
salt and pepper
1 cup mozzarella cheese, grated (low fat is OK)

Steps:

  • Preheat oven to 400°F.
  • Boil salted water in a large pot. Add pasta when water is boiling and cook until just done, about 5 minutes.
  • Meanwhile, pour alfredo sauce in a medium saucepan and heat to medium. Add dill and green onions and salt and pepper to taste; let heat through but do NOT boil.
  • In small frying pan, heat olive oil and add fish. Cook through, approximately 3 minutes on each side. Cut up and salt and pepper to taste.
  • When tortellini is done, add to sauce in saucepan. Gently stir in salmon. Add half the mozzarella. Pour into casserole dish sprayed with nonstick spray and sprinkle remaining cheese on top.
  • Bake in oven for 15 minutes or until lightly browned.

Steps:

  • Preheat your oven to 350 degrees F.
  • In a large mixing bowl, combine eggs, heavy cream, milk, parmesan cheese, and all your dried herbs. Whisk until evenly incorporated then set aside.
  • Season your salmon cubes with salt and pepper, then mix to combine.
  • Place these onto a 13½- inch baking casserole of your choice then add the broccoli around the salmon.
  • Pour the prepared milk and cheese mixture around and over the salmon and broccoli.
  • Sprinkle the monterey jack cheese to cover the top of your casserole.
  • Bake for roughly 30 minutes or until the salmon is fully cooked through and the cheese has melted.
  • Serve immediately once baked!

This potato and salmon dish can be a little heavy, but its heartiness makes it suitable especially for cold days. We made a hot and cheesy sauce with parmesan, which we then mixed with the potatoes. Then we cooked these twice. First, we roasted them together with thyme, then again with salmon and mozzarella.

1 tablespoon parmesan
1 teaspoon chili flakes
1 teaspoon paprika powder

6 medium potatoes, halved and quartered
3 thyme sprigs for garnishing
7 ounces of smoked salmon, chopped
2 ounces of low moisture mozzarella
fresh thyme for garnishing

Steps:

  • Add the vegetable oil, parmesan, chili flakes, paprika powder, some salt and pepper in a smaller bowl. Mix them using a teaspoon.
  • Add the potatoes and the mixture to a bowl and mix them using your hands.
  • Add this to a baking dish, garnish with thyme and roast for 45 minutes at 400⁰F/200⁰C.
  • Remove from oven, add the salmon, some pepper, and the low moisture mozzarella. Roast for 10 minutes at 400⁰F/200⁰C.
  • Garnish with the fresh thyme and serve.

7-8 piece Potatoes (roughly 1 kilo), peeled and sliced
4-6 piece Salmon fillets, (roughly 620 grams) washed and well-dried
2 piece Green Onions Sliced into rings
1/2 cup Milk
One block Cheddar, Mozzerella, and/or Parmesan
2 tablespoon Lemon Juice
1 tablespoon Thyme Dried or Fresh
1 tablespoon Rosemary Dried or Fresh
2-3 tablespoon Salt Sea Salt
1 teaspoon Pepper

Steps:

  • Preparation (You Can Make Ahead): 1) Fry diced onions in a skillet until golden brown, set aside in a large bowl 2) Lay the salmon in the skillet and cook it one side at a time until golden brown. Do not move the salmon steaks until they are completely done on one side, then flip over and cook completely on the other side. Remove from the pan and cool. Remove the skin and bones, then floss the salmon meat. Add the salmon meat into the bowl with the fried diced onions. Add in the lemon juice and stir. 3) Arrange the sliced potatoes in a casserole dish with at least 8 cups capacity. Add a 1/2 cup milk, cover the casserole, and microwave for 15 minutes or until cooked but not mushy. 4) Fry the onion rings in the pan after the salmon is done until the rings are half cooked. 5) Mix the thyme, rosemary, salt, and pepper as the seasoning salt. How to Assemble the Casserole: 1) Lay potato slices, 1/4 of the total amount in the casserole dish 2) Sprinkle seasoning salt 3) Crumble 1/4 of the salmon over 4) Add 1/4 of the cheese 5) Sprinkle seasoning salt 6) Repeat 3 times more, only for the final layer, sprinkle the seasoning salt and arrange all the onion rings over the casserole. Then, add the remainder of the cheese on top. 7) If the casserole you are using is very flat and wide, divide the ingredients into 1/3s and have 3 layers of potato, salmon, and cheese. 8) Bake in the oven at 180C for 40 minutes, or until the cheese on top is golden brown.

200 g of sliced smoked salmon (must be finely sliced)
250 g cream cheese
1/4 cup chives, finely chopped
1/4 cup parsley, finely chopped
1 lemon, rind of, finely grated

Steps:

  • Lay a sheet of good quality baking paper or a double layer of aluminum foil on your bench top. Spread the salmon onto the paper to form a large square shape. Overlap each slice- there should be no gaps and you must be able to roll the salmon later and have the slices hold together.
  • In a bowl mix all remaining ingredients. Spread this mixture over the salmon.
  • Using the paper or foil. Roll the salmon. The cream cheese will end up in the centre of the salmon rolls. Refrigerate until required.
  • Slice into approx one inch rolls (they'll look like small sushis). Sprinkle with extra finely chopped chives, or parsley.

3 tbsp butter
2 1/2 tbsp plain flour

1/4 cup creamy mayonnaise
Quick melt Cheese, grated
chopped parsley, to garnish

Steps:

  • Prepare your bechamel first. Melt butter in a pot over low heat then stir in flour, mix until consitency is even and flour is cooked.
  • Gradually pour milk while constantly mixing, continue stirring until sauce becomes smooth and thick.
  • Season with nutmeg, salt and pepper.
  • Remove from heat then set it aside.
  • Rub minced garlic and lemon juice into salmon steak then season it with salt and freshly ground black pepper.
  • Place salmon fillet, skin side down, on a baking sheet lined with baking paper or an oven proof serving platter.
  • Spread a thin layer of mayonnaise on top of salmon steak.
  • Pour bechamel sauce on top, then top it further with quick melt cheese.
  • Bake in a 200C preheated oven for 15-20 minutes, then broil for 3-5 minutes, until the cheese is golden brown.
  • Remove from oven, sprinkle chopped parsley on top then serve.

¾ cup Heinen's plain panko breadcrumbs
1/3 cup Heinen's grated parmesan cheese
2 Tbsp. melted butter
1 ½ lbs. fresh Coho salmon, skin and bones removed
3 garlic cloves, finely minced
4 Tbsp. mayo
1 tsp. ground mustard
1 tsp. paprika
1 tsp. ground pepper
1 tsp. salt
1 bunch fresh flat leaf parsley, rough chopped
1 cup Heinen's shredded Colby Jack cheese (can sub with any shredded cheese you have on hand)
Juice of 1 lemon

Steps:

  • Instructions Preheat the oven to 425˚F. In a bowl, combine the panko, grated parmesan and butter. Set aside. Clean and thoroughly dry the salmon. Run the salmon under cold water after removing the skin and bones. Your Heinen's fishmonger can remove the skin and bones for you upon request. Thoroughly dry the salmon with paper towels. Set aside. Mix together all of the spices, mayo, garlic and parsley in a small bowl. Set aside. Place the salmon in an oven-safe baking dish. Coat the salmon with the mayo mixture and half of the grated cheese. Top with the panko mixture and the other half of grated cheese. Bake uncovered for 5-6 minutes, or until the breadcrumbs are golden, then cover with tin foil and continue to cook for an additional 10 minutes. Remove from oven and serve immediately. Garnish with fresh parsley and a squeeze of fresh lemon juice. Note: For a family friendly twist, cut the salmon into 1-inch cubes and toss with the mayo mixture. Follow the rest of the recipe as written above.
