CHERRY APPLESAUCE JELLO SALAD
Steps:
- Place the Jell-O in a bowl.
- Add the boiling water and stir until the Jell-O has completely dissolved, about 2 minutes.
- Add the applesauce; stir until well-combined. Note: If you want, you can transfer it, at this point, to your serving bowl.
- Cover and refrigerate until set, about 4 to 6 hours (I usually just let mine sit overnight).
- Enjoy!

- Combine apples, cinnamon stick, lemon juice, salt, and 1/4 cup water in a large Dutch oven or other heavy pot. Scrape in seeds from vanilla bean and add pod. Cover pot and cook over medium-low heat, occasionally stirring with a wooden spoon and checking to make sure apples are not scorching (add a splash of water if they are), until apples are soft and falling apart, 35-45 minutes. Uncover pot and let apples cool slightly.
- Working in batches, pass apples through food mill fitted with a medium disk into a large bowl; discard solids. If sauce is watery, return to pot and simmer over medium heat until thickened.
- Do Ahead:
- Applesauce can be made 4 days ahead. Let cool; cover and chill.

- Carefully warm applesauce in a sauce pan (applesauce can scorch easily due to its sugar content.) Figure approximately 1 cup applesauce per person.
- Meanwhile, slice the cheddar cheese into 1/4 inch cubes.
- Ladle the warm applesauce into bowls and immediately scatter the cheddar cubes and almonds on top. The cheese will begin to melt from the heat of the warmed applesauce.
- Also good as a topping on a bowl of steel cut oatmeal.

This recipe comes from an old church cookbook that I have been cooking out of for years. The dish is so easy to prepare, and everyone I've ever served it to has loved it. Be sure to use a good quality applesauce so the gelatin will get firm and set-up nicely. Cheaper applesauces have too much liquid in them for this recipe.
