Steps:

  • Beat cream cheese with mixer until creamy. Gradually beat in milk. Add dry pudding mix; mix well. Whisk in 1 cup Cool Whip®.
  • Layer half each of wafers, berries, and pudding mixture in 8 parfait glasses. Repeat layers.

One 5.3-ounce container vanilla nonfat Greek yogurt
1/4 cup light sour cream
1/2 cup confectioners' sugar
6 chocolate wafer cookies, crumbled
1/2 cup crisp rice cereal
1/4 cups Grape-Nuts brand cereal
1 1/2 cups sliced strawberries
1 cup blueberries

Steps:

  • Beat the Neufchatel, yogurt and sour cream with an electric hand mixer until smooth. Stir in the confectioners' sugar and beat again until smooth.
  • Combine the crumbled cookies and cereals together in a small bowl.
  • Build the parfaits: Place a small spoonful of the cheesecake mixture in the bottom of each of 4 parfait glasses or wine goblets. Add a layer of fruit, followed by a second layer of the cheesecake mixture; top with a layer of the crumbs. Repeat. Two (8-ounce) packages cream cheese, at room temperature
1 cup plus 3 tablespoons chilled heavy cream
1/2 cup (8 tablespoons) sugar
1 tablespoon plus 1 teaspoon vanilla extract
1 tablespoon fresh lemon juice
2 teaspoons lemon zest
1/4 cup sour cream
1 1/2 cups crushed graham crackers
1 1/2 cups fresh fruit, such as strawberries, blueberries or raspberries

Steps:

  • Beat the cream cheese, 3 tablespoons heavy cream and 5 tablespoons sugar in a stand mixer fitted with the paddle attachment until smooth. Add 1 tablespoon vanilla extract and the lemon juice and zest. Beat until light and creamy, about 3 minutes.
  • Whisk together the remaining 1 cup heavy cream, 3 tablespoons sugar, 1 teaspoon vanilla extract and the sour cream in a large bowl with a handheld electric mixer (or a stand mixer fitted with the whisk attachment) on high speed until soft peaks form.
  • Add a layer of crushed graham crackers to the bottom of each parfait glass. Top the graham crackers with a layer of the cheesecake, then a layer of fruit (see Cook's Note). Top each parfait with a dollop of the whipped cream and serve.
