Cheese and potato pie was one of my favourite meals growing up, back then it would have been served as a main with peas and ketchup. I now prefer to serve it as a side with sausages and baked beans, yes I am still a child at heart!

Steps:
- Bring a pan of well-salted water to the boil.
- Add on the potatoes whole and unpeeled and boil until cooked, this should take around 30-35 minutes.
- Halfway through cooking the potatoes peel the onion and drop it into the pan.
- Drain the potatoes, prick with a fork and peel off the skin.
- Mash the potatoes or pass through a potato ricer.
- Add the butter, almost all of the cheese and the mustard and mix well.
- Beat the egg with the milk.
- Add in the beaten egg and milk, then mix well, you should have quite a "wet" mash.
- Chop the onion into a 1cm dice and mix that through the potatoes.
- Have a taste here and add more salt if required although it should not be!
- Place the mash into a greased or buttered casserole dish (around 0.5 litres in size) and top with the remaining cheese.
- Slice the tomato into 3-4mm thick slices.
- Add slices of tomatoes to the top.
- Bake in an oven at 200°C or 400°F for 15-20 minutes.

BACON-CHEESEBURGER POTATO PIE

- Heat oven to 375°F. In medium bowl, mix ground beef, bread crumbs, onion, ketchup, mustard and salt. Press mixture in bottom and up sides of ungreased 9-inch pie plate. Bake 15 minutes.
- In medium saucepan, place water, butter and garlic salt. Heat to boiling. Remove from heat. Add milk. With fork, stir in potato flakes. Stir in 1/2 cup of the cheese.
- Remove partially baked beef crust from oven; pour off any drippings. Spoon potato mixture evenly into crust. Return to oven; bake 10 to 15 minutes longer or until beef is thoroughly cooked and thermometer placed in center of crust reads 160°F, and potatoes are hot.
- Remove pie from oven. Top with tomato, remaining 1/2 cup cheese and crumbled bacon; bake 5 minutes longer or until cheese is melted. Remove from oven; top with green onions. Let stand 10 minutes before serving.

- On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. - Preheat oven to 400 degrees F (200 degrees C).
- Crumble ground beef into a large skillet. Saute over medium heat 1 minute, then add onion and green pepper. Continue to saute until onion begins to brown, about 5 minutes. Mix in 1/2 cup tomato sauce, bread crumbs, and seasoning salt. Spoon mixture into pastry shell.
- In a medium bowl, mix together cheese, egg, milk, Worcestershire sauce, and white pepper. Spread mixture over meat filling. Cover edges of crust with strips of aluminum foil.
- Bake in preheated oven for 15 minutes. Remove foil and bake an additional 15 minutes, until topping is puffy and lightly browned. Allow to set 10 to 15 minutes before serving. - Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes; drain. Set aside to cool in a large bowl.
- Preheat oven to 350 degrees F (175 degrees C). Grease a 1 1/2-quart casserole dish.
- Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until the beef is crumbly, evenly browned, and no longer pink, about 10 minutes. Stir green beans and tomato soup into the ground beef mixture; transfer to prepared casserole dish.

- Mix together the American cheese, Monterey Jack cheese, Swiss cheese, mayonnaise, jalapenos, sriracha, pimentos and 1 teaspoon salt and pepper in a large bowl.
- Prepare a grill for high heat. Season the burger patties with kosher salt and pepper. Place the patties on the grill and cook, rotating two to three times, until the edges begin to sweat, 2 to 3 minutes. Flip the burgers and cook for 2 to 3 minutes more.
- Place a 2-ounce scoop of the pimento cheese in the middle of the cooked burgers. Serve the burgers on toasted buns, garnished with Fried Pickles.
- Add the granulated sugar, cider vinegar, white vinegar, peppercorns, brown sugar, garlic, jalapeno, 2 1/2 ounces salt and 1 cup water to a stockpot and bring to a boil. Lower the heat and simmer until the sugar and salt are dissolved, 10 minutes. Let cool to room temperature. Add the sliced cucumbers to the brine and refrigerate for 24 hours.
- In a bowl, mix together the tempura powder and 1 cup ice water until smooth.
- Fill a large heavy pot with 2 to 3 inches of oil and heat to 350 degrees F. Working in batches, dip the pickles in the tempura batter and then into the oil. Fry until golden brown. Transfer to a paper-towel-lined plate to drain.

I probably copied this recipe from a box of Betty Crocker potatoes back in the day. It was always a hit with my family and I'm sure it will be with yours as well.

- 1. Mix the potatoes and sauce packet from the potato mix with the water and milk in a 2-qt. casserole dish. Bake uncovered until potatoes are tender, 30 to 35 minutes at 400 degrees. Cool 15 minutes.
- 2. Cook ground beef and onion together in skillet; drain. Stir in worcestershire sauce, garlic powder, and salt.

POTATO PIE CRUST

- Preheat an oven to 400ºF.
- Lightly oil a 9" pie dish.
- Pour frozen hash browns into the pie dish, and sprinkle with oil, salt and pepper. Toss lightly to combine and then bake as is, in the lower rack for 20 minutes.
- Remove from oven. Using a spoon, carefully form the pie crust by pushing the potatoes up the sides of the pie plate to form the edges. Then, using a spoon push down the potatoes on the bottom of the pie plate.
- Return to the oven and bake for an additional 20 minutes, or until the potatoes are fully cooked through.
- The pie crust is now ready to to use in your desired filling. It can sit for 1 day at room temperature, covered, before use.

- Fry the beef in a nonstick pan, and when finished, drain off the fat and set it aside Place the potatoes in a medium sized mixing bowl, mash them, or if using the instant, follow the directions on the box.
- Add the milk and whip them until creamy.

- Dump the ground beef into a large saute pan over medium-high heat.
- Crumble the ground beef well as it cooks.
- Once the ground beef is fully cooked, drain the grease from the pan.
- Reduce the heat to low and add the condensed cheddar cheese soup, ketchup and mustard to the pan.
- Stir until all of the ingredients are fully combined.

- Return the dish to the oven and continue baking for another 5 minutes.
- After 5 minutes remove the dish from the oven and leave the casserole to sit for a couple minutes before slicing and serving.

My husband and father-in-law love this! It's a bit time-consuming, but worth the spectacular results. Truly a handsome dish! From one of those Pillsbury mini-magazine things you buy at the supermarket. Please note that you can use leftover mashed potatoes as well, or make homemade if you really hate instant!

LOADED BACON-CHEESEBURGER-POTATO SOUP
This particular soup is a cheeseburger variation on a more traditional potato soup base, and the addition of the ground beef alongside all that cheese and the potatoes makes for a rich, creamy, and hearty soup.
