This easy cheesy baked pasta dish comes together quickly and is super easy to customize for meat-eaters and vegetarians alike.

1 pound refrigerated or frozen cheese tortellini
2 cups [url href="https://www.kitchentreaty.com/italian-tomato-sauce/"]Italian tomato sauce[/url] or marinara sauce
1/3 cup mascarpone cheese
1/4 cup chopped fresh Italian parsley leaves
2 teaspoons chopped fresh thyme or 1/2 teaspoon dried thyme
1 cup shredded mozzarella (8 ounces)
1/4 cup freshly grated Parmesan
1/2 pound lean ground beef

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Grease one 8-inch by 8-inch baking dish or, if making a vegetarian version and a meaty version, grease two approximately 4-inch by 8-inch baking dishes.
  • Cook the tortellini to al dente, according to package directions. Drain.
  • Add the sauce to a large bowl and stir in the mascarpone cheese, parsley, and thyme.
  • If NOT adding beef to half, gently toss the cooked tortellini with the sauce and pour into the 8-inch by 8-inch baking dish. Proceed to step 6.
  • If adding ground beef to half, brown the ground beef and drain. Add about 1 1/2 cups of sauce to the beef and stir. Add just under half of the tortellini to the sauce with the beef and add the rest of the tortellini to the remaining sauce in the bowl. Toss both gently until coated. Pour meaty version into one 4-inch by 8-inch baking dish and the vegetarian version into another.
  • Sprinkle the cheese evenly over the top(s).
  • Bake until the sauce is bubbly and the cheese melts, 25 - 30 minutes. Serve.

1 lb ground beef

½ cup onion, chopped
1 clove garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
2 teaspoons dried parsley
28 oz crushed tomato, 1 can
¼ cup fresh basil, sliced
2 cups shredded mozzarella cheese
1 ¼ lb cheese tortellini, cooked and drained

Steps:

  • Preheat oven to 375ºF (190ºC).
  • Add a teaspoon of olive oil to a heavy saucepan and brown the beef over medium-high heat. Season with salt and pepper.
  • Mix in the dried herbs. Move beef to one side of the hot pan and add in onions. Stir to soften, then add garlic.
  • Mix in crushed tomatoes. Bring to a boil and cook for 5-10 minutes, stirring occasionally. Taste and season with salt and pepper as necessary.
  • Remove from heat.
  • Spoon a thin layer of meat sauce in the bottom of a casserole dish. Layer as follows: tortellini, cheese, basil, sauce, tortellini, cheese, basil, sauce, and cheese.
  • Bake for 15-20 minutes, or until cheese is melted and bubbling.
  • Cool for several minutes and serve.

18 ounces Three Bridges Triple Cheese Tortellini ((2 9-ounce packages or 1 family size package))
1 15-ounce container Three Bridges Heirloom Marinara Sauce
cooking spray
2 teaspoons olive oil
1/2 cup diced white onion
1 pound ground beef (I use 90% lean)
salt and pepper to taste
2 cups shredded mozzarella cheese
2 tablespoons chopped parsley

Steps:

  • Preheat the oven to 400 degrees F. Coat a 6 cup or larger baking dish with cooking spray. Bring a pot of water to a boil. Cook the tortellini according to package directions.
  • While you wait for the water to boil and tortellini to cook, heat the olive oil in a large pan over medium high heat. Add the onion and cook for 3-4 minutes or until softened.
  • Add the ground beef to the pan and season to taste with salt and pepper. Cook, breaking up the meat with a spatula, until done, approximately 4-5 minutes.
  • Pour the marinara sauce into the pan with the beef and heat until warmed through.
  • Drain the pasta and return to the pot. Pour the sauce over the pasta and toss to coat.
  • Spoon the pasta into the prepared baking dish and sprinkle the cheese over the top. Bake for 20 minutes or until cheese is melted and starting to brown.
  • Sprinkle with parsley and serve.

I came up with this easy time-saver when I was trying to expand my picky son's palatte, and he still loves it. I've also served it to my non meat eating niece, who kept picking out the red peppers and she loved it as well.

2 lbs cheese tortellini, prepackaged (or approximate. the large one plus a small is what I usually use)
1 tablespoon olive oil
1 large onion
1 (10 ounce) jar red peppers (or 3 red peppers, roasted and peeled)
1/2 teaspoon crushed red pepper flakes
1 (28 ounce) can diced tomatoes
2 teaspoons dried basil or 2 tablespoons fresh basil, chopped

Steps:

  • Fill a large pot with hot water and set to boil on stove/cooktop.
  • Heat the olive oil on medium heat in a large deep pan, and dice the onion while the oil heats.
  • Add the onions to the pan and stir occasionally -- at the same time dice the red peppers.
  • When your hot water is at a boil, add the tortellini and set a timer.
  • Add the red peppers, crushed peppers and dried basil to the onions, stir, and let saute gently for 1 minute.
  • Add the tomatoes and basil to the sauce and bring to a boil. Reduce the heat and let it reduce. If you use fresh basil, add it a minute before serving.
  • Drain tortellini well, and put back in the pot and cover. Check the sauce for desired consistency.
  • Add sauce to the tortellini, plate and serve with fresh grated parmesan cheese.

1/2 pound fresh mushrooms
1 tablespoon olive oil
1 pound ground very lean chuck
Salt to taste if desired
Freshly ground pepper to taste
1 tablespoon finely minced garlic
1/4 teaspoon dried oregano
3 cups crushed tomatoes
1/2 cup fresh or canned beef broth
1 pound fresh or frozen cheese tortellini (or an equal amount of another pasta)
2 tablespoons butter
Grated Parmesan cheese

Steps:

  • Cut the mushrooms into thin slices. There should be about 2 cups.
  • Heat the oil in a skillet and add the ground meat. Cook, chopping down with the back of a heavy metal spoon to break up any lumps in the meat. Cook until the meat has lost its raw look.
  • Add the mushrooms, salt and pepper and cook, stirring, about 3 minutes. Add the garlic and oregano.
  • Crushed tomatoes are available in cans. If whole tomatoes are used, crush them using a food processor or electric blender, if desired. Add the tomatoes to the meat and mushroom mixture. Add broth. Cook, stirring occasionally, about 20 minutes.
  • Cook the tortellini according to package directions, about 8 minutes. Drain but reserve one cup of the cooking liquid. Combine the cooked tortellini with the meat sauce, the reserved cup of cooking liquid and the butter. Toss to blend. Serve with grated Parmesan cheese on the side.

4 tablespoons butter
5 tablespoons flour
3 cups milk
Salt to taste if desired
Freshly ground pepper to taste
1/8 teaspoon freshly grated nutmeg
1/8 teaspoon cayenne pepper
1/2 cup heavy cream
1 egg yolk
1/2 cup cheese such as Gruyere or Swiss cut into small cubes
2 10-ounce packages fresh tortellini with cheese or meat filling
1/4 cup grated cheese such as Gruyere or Swiss

Steps:

  • Preheat the oven to 450 degrees.
  • Melt the butter in a saucepan and add the flour, stirring with a wire whisk. Add the milk, stirring rapidly with the whisk, and cook until sauce is thickened and smooth. Add salt, pepper, nutmeg, cayenne and cream.
  • Remove the sauce from the heat and add the egg yolk, beating vigorously with the whisk. Let cool slightly. Add the cubes of cheese, stirring rapidly with the whisk.
  • Meanwhile, bring 3 quarts of water to a boil and add salt. Add the tortellini and cook until tender, about 7 minutes. Drain well. Scatter the tortellini into a baking dish (a dish measuring 13 1/2 by 8 1/2 by 2 inches is ideal) and spoon the cheese sauce on top.
  • Sprinkle the grated cheese over the dish and place in the oven. Bake 10 minutes. To obtain a golden glaze on top of the casserole, run it briefly under the broiler until browned.

  • In a large saucepan, melt the butter with the extra virgin olive oil over medium-high heat. Add the minced veal, pork and chicken flesh and sauté until brown.
  • After about 10 minutes the meat will start to release its juices. At this point, add the prosciutto and mortadella and cook for a further 10 minutes or until the juices evaporate.
  • When cooled, add the nutmeg, Parmigiano Reggiano cheese and egg, and season. Process the mixture in a food processor until all the ingredients are combined.
  • To make the tortellini, roll the pasta dough into sheets of less than 1 mm (1/ 32 inch) thickness. Cut the pasta into squares of approximately 4.5 x 4.5 cm (1_ x 1_ inches).
  • Place ½ teaspoon measures of the filling in the centre of each of the pasta squares and fold the square into a triangle, making sure to press out any air.
  • Quickly fold down the top of the triangle and roll the other two edges of the triangle together (I use my little finger as a mould for this) to form what look like little hats.
  • Heat the bolognaise sauce in a saucepan. Meanwhile, bring abundant salted water to the boil and cook the tortellini for 10 minutes or until they rise to the surface.
