What's not to love when you combine tortellini, chicken, and broccoli in a flavorful sauce made with chicken broth, milk, cream cheese, and Parmesan cheese? This dinner is a true kid-pleaser!

2 tablespoons olive oil
8 oz boneless skinless chicken breast, cut into 1/4-inch slices
3 cups fresh small broccoli florets
2 teaspoons chopped garlic
1 1/2 cups Progresso™ chicken broth (from 32-oz carton)
2 packages (9 oz each) refrigerated cheese tortellini
1 cup milk
6 oz cream cheese, cubed (from 8-oz package)
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 cup grated Parmesan cheese

Steps:

  • In 12-inch nonstick skillet, heat 1 tablespoon of the oil over medium-high heat. Add chicken; cook 3 to 4 minutes or until no longer pink; remove from skillet, and keep warm.
  • In same skillet, heat remaining 1 tablespoon olive oil; add broccoli. Cook and stir over medium heat about 3 minutes or until broccoli is bright green. Add garlic to skillet; cook about 30 seconds or until fragrant.
  • Add chicken broth and tortellini. Heat to simmering; cook 3 minutes. Stir in milk, cream cheese, salt and pepper. Cook over medium heat 3 to 5 minutes, stirring occasionally, until cream cheese is melted; stir in Parmesan cheese.
  • Add chicken back to skillet; cook 1 to 2 minutes or until heated through. Garnish with additional Parmesan cheese, if desired.

1 pound cooked chicken breast (cut into bite sizes)
2 cups broccoli florets
1/4 cup butter
2 cloves garlic (minced)
1 1/2 teaspoon dried basil
2 cups low sodium chicken broth
2 tablespoons cornstarch
1 teaspoon lemon zest
1 pound cheese tortellini
1/4 cup Parmesan cheese
Salt to taste

Steps:

  • Heat water in a pan and bring to water to a boil. Add the broccoli and cook for 2 to 3 minutes or until fork tender. Remove with a slotted spoon and set aside.
  • Cook the tortellini according to the directions on the package.
  • While the tortellini is cooking prepare the sauce for the dish. In a large skillet melt the butter. Add the garlic and basil cook for a minute or two until the garlic softened.
  • Mix the cornstarch with chicken broth. Add the broth to the skillet and bring to a boil and cook until the sauce begins to thicken. Add the lemon zest and stir in.
  • Stir in the tortellini, chicken, and broccoli and simmer for 3 to 5 minutes, so to warm the chicken and broccoli. Add the Parmesan cheese and stir in. Season with salt if needed.

24 ounces cheese tortellini
2 cups broccoli florets
2 teaspoons olive oil
2 chicken breasts, cut into bite-sized pieces
1 teaspoon onion powder
½ teaspoon kosher salt
¼ cup unsalted butter (half a stick)
2 cloves garlic, minced
¼ cup flour
2 cups milk (I use 2%)
1 cup shredded parmesan cheese
1 cup shredded mozzarella cheese

Steps:

  • Boil tortellini in a large pot of water according to package directions. Add the broccoli to the water during the last minute of cooking. Drain tortellini and broccoli and set aside.
  • In the same pot, heat olive oil over medium high heat. Add the cut up chicken breast, salt, and onion powder. Cook until slightly browned and cooked through, about 8 minutes. Remove from pot and set aside.
  • In the same pot over medium heat, add the butter, garlic, and flour, whisking until the mixture is lightly browned, about 3 minutes. Continue whisking and pour in the milk. Increase heat until milk lightly bubbles and sauce thickens. Lower the heat and stir in the cheeses until they melt. Add in the tortellini, broccoli, and chicken. Serve warm.

1 package of Cheese tortellini
12 ounces of fresh broccoli florets
1 pound of chicken breast
½ cup all purpose flour
2 tablespoons canola or vegetable oil
2 cloves garlic
1 cup chicken broth
2 cups heavy cream
1/2 cup grated Parmesan cheese
Salt

Steps:

  • Bring a large stock pot of water to boil.
  • Add 1 tablespoon of salt to the water and boil the tortellini for 7 minutes.
  • Add the broccoli florets to the pasta water and continue to boil for 3 additional minutes. Drain and set aside. (You may have to adjust cooking time according to the type of tortellini used.)
  • Save a cup of pasta water after you finish cooking thee tortellini. You may need it to thin out the sauce.
  • While waiting for the pasta water to boil start working on the chicken.
  • Slice chicken breasts into strips about 2 inches long by ½ inch wide.
  • Put flour and 1 teaspoon of salt into a plastic bag, add the chicken strips and toss to coat.
  • Shake off excess flour and sauté the chicken in oil over medium heat.
  • Lightly brown the chicken on each side, cooking for 5 minutes. If the chicken isn't completely done it will finish cooking in the sauce. Cook the chicken in batches.
  • Remove the chicken from the pan and sauté the garlic over low heat for about 30 seconds. Add the chicken broth and cream into the pan and boil to reduce until thick, about 7 minutes.
  • Stir in the chicken, tortellini broccoli and Parmesan cheese, simmer for 2-3 minutes. (The flour we tossed the chicken in earlier will help to thicken the sauce). Add salt to taste.
  • If your sauce is too think, thin it out with a little of the reserved pasta water. Don't add the entire cup at once. add just enough to get the consistency you need

Steps:

  • Heat olive oil over medium-high heat in a large pot. Add garlic and cook 30 seconds until fragrant.
  • Add chicken broth and milk. Bring to a boil.
  • Add tortellini and cook 2 minutes.
  • Add broccoli and continue to cook for about 3 minutes or so, stirring as needed, until tortellini is cooked and broccoli is bright green.

1 lb meat-filled tortellini or 1 lb cheese tortellini
1/4 cup unsalted butter
1/4 cup flour
1 1/2 cups chicken broth
1/2 cup milk

2 (14 1/2 ounce) cans diced tomatoes with basil oregano and garlic
10 -12 slices American cheese
1/4 cup parmesan cheese

Steps:

  • Preheat oven to 350 degrees.
  • Wash broccoli and cut into bite size pieces.
  • Cook broccoli in boiling water for 4 to 5 minutes and drain.
  • Cook tortellini according to package directions and drain.
  • Mix broccoli and tortellini together and set aside.

2 tablespoons olive oil
1/2 teaspoon garlic powder
1/2 cup chicken broth
2 tablespoons lemon juice
10 ounces chicken breasts, cooked, cut into pieces
16 ounces cheese tortellini
1 lb broccoli floret
2/3 cup Italian cheese, shredded

Steps:

  • Fill a pot with water and place over high heat. Bring to a roiling boil.
  • In a microwave-safe dish, combine oil, garlic, chicken broth, and lemon juice. Add chicken and microwave on high for 1 minute and 30 seconds.
  • When water boils, add tortellini to pot and stir. When water returns to a gentle boil, add broccoli and stir. Stir occasionally until tortellini is done, approximately 8-11 minutes Drain tortellini and broccoli in a colander. Do not rinse.
  • Add sauce and chicken to pot. Add tortellini and 1/3 cup shredded cheese. Toss well to coat tortellini and broccoli and sauce.
  • To serve, divide pasta and sauce between 4 bowls. Garnish with remaining cheese. If desired, season with salt, pepper, and crushed red pepper.
