Gouda Pecans are the BEST! Raw pecans are stuffed with an easy gouda and sour cream mix and that is all, folks! So easy to make!

30 raw whole pecans
1/4 cup gouda cheese (, finely grated and room temperature)
2 tablespoons sour cream
1/4 teaspoon Kosher salt

Steps:

  • Either by hand or in a stand mixer, mix the gouda cheese, sour cream and Kosher salt together well. Chill for 15-30 minutes or until a spreadable consistency.
  • Spread onto the flat side of a pecan and top with another pecan, bumpy sides facing out. You'll use a scant teaspoon on each pecan.
  • Chill until ready to serve. I dusted mine with smoked paprika, which is optional. If adding one of the sauce variations, drizzle right before serving.

This is a recipe that my mother makes as a quick appetizer for special occasions. It may seem like an odd combination of flavors at first, but trust me, these can be addictive!

pecans, per date

Steps:

  • "Butterfly"the dates, making sure that they are still attached along one side Spread the dates open and fill with a generous amount of cream cheese.
  • Place a pecan over the filling.
  • Close the date, shaping it back into its original shape.
  • Eat and enjoy!

Per Whole Foods' website, "To ease the party rush, make the filling for these dates a few days in advance, keeping in mind that the flavor will get stronger over time. For a vegetarian version omit the bacon and sauté the onions in olive oil instead of the bacon grease."

4 slices bacon
1/2 small red onion, chopped
3 tablespoons orange juice
1/2 cup blue cheese, crumbles
2 1/2 ounces cream cheese (light or fat free are fine)
1/2 cup chopped pecans, divided
24 pitted dates

Steps:

  • Cook bacon in a large skillet over medium heat until crisp. Transfer to drain on paper towels, reserving 1/2 teaspoon bacon grease in skillet.
  • Add onion and cook over medium heat until softened, 3 to 4 minutes. Add orange juice and cook, scraping up any browned bits, until liquid is evaporated, 1 to 2 minutes more.
  • Transfer onion to a medium bowl and let cool.
  • Crumble bacon into the onions. Add cheeses and half of the pecans. Stir well to combine.
  • Stuff each date with a heaping teaspoon of the mixture and top with remaining pecans.

4 chicken scallops
salt and pepper
4 tablespoons fresh whole wheat bread crumbs
2 tablespoons pecans, chopped
5 spring onions, finely chopped
2 garlic cloves, peeled and crushed
1 small red pepper, finely chopped
2 teaspoons lemon juice
1 lemon
2 teaspoons butter, melted
1 tablespoon butter
1 tablespoon plain flour
150 ml milk
6 tablespoons dry white wine
4 tablespoons soft blue cheese, crumbled
2 tablespoons pecans, chopped
4 tablespoons fresh watercress, chopped
4 tablespoons plain yogurt
lemon wedge, to garnish
watercress, to garnish

Steps:

  • Pound the chicken to 6 mm in thickness. Cut a slit in the side of each escalope to form a pocket. Season the inside of the pocket with salt and pepper.
  • Mix the remaining stuffing ingredients together and spoon into the pickets, pressing in with the back of a spoon.
  • Cook in a pan until the chicken is cooked through.
  • Meanwhile, melt the butter for the sauce in a pan and add the flour. Cook for 1 minute and gradually stir in the milk and wine. Bring to the boil until the sauce thickens.
  • Add the cheese, pecans, watercress and yoghurt, and heat gently until the cheese has melted.
  • Remove the chicken from the steamer and place on a warmed serving plate. Spoon on the sauce and serve garnished with lemon and watercress.

9 pecans, halved
fresh parsley

Steps:

  • In a bowl, mix boursin cheese and chopped pecans. Garnish each mushroom with about 2 teaspoon of cheese mixture and with half a pecan.
  • Put stuffed mushrooms on a baking sheet and bake in a preheated oven of 350 F for 10 minutes.
  • When ready to serve, garnish with parsley.
