1/2 cup milk
Salt and freshly ground pepper
1 cup shredded cheddar

Steps:

  • Place the potatoes in a large pot and cover with water by an inch. Bring to a boil over high heat, then reduce to simmer. Cook until the potatoes are fork tender, 25 to 30 minutes. Drain.
  • Return the potatoes to the pot and add the butter, milk and some salt and pepper. Mash the potatoes to the desired consistency. While still hot, fold the cheese into the mash and stir to melt.

  • Boil the potatoes with the bay leaves until the potatoes are tender. Drain the potatoes well and discard the bay leaves. 4 slices bacon, chopped
1 stick salted butter, cut into pieces, at room temperature

Steps:

  • Put the potatoes in a large saucepan and cover with cold water by 1 inch. Season generously with salt and bring to a boil. Reduce the heat to medium and simmer until very tender, about 15 minutes.
  • Meanwhile, cook the bacon in a large skillet over medium heat until crisp, 7 to 8 minutes; transfer to a paper towel-lined plate.
  • Drain the potatoes and return to the saucepan over low heat; cook until any remaining water evaporates, about 2 minutes. Add the butter, then gradually mash in the sour cream with a potato masher. Stir in the bacon and chives, reserving 1 tablespoon of each. Transfer to a serving dish; top with cheddar and the remaining bacon and chives.

8 ounces shredded sharp Cheddar cheese
1 cup milk

A light spray of olive oil
3 tablespoons melted butter
4 cloves garlic (, crushed)
1 tablespoon fresh chopped parsley
Kosher Salt and Black Pepper to taste
2 tablespoons Parmesan Cheese

Steps:

  • Pre-heat your oven to broil (or grill) settings to medium-high heat (about 200°C | 400°F).
  • Place potatoes in a large pot of salted water. Bring to the boil; cook, covered for 30-35 minutes or until just fork-tender. Drain well.
  • Lightly grease a large baking sheet or tray with cooking oil spray. Arrange potatoes onto the sheet and use a potato masher to LIGHTLY flatten the potatoes in one piece (not too hard or they will end up mashed).

Steps:

  • Add the chopped potatoes to a large saucepan and cover with cold water. Add a good pinch of salt.Bring the pan to the boil then reduce to a medium simmer and half cover with a lid.Cook until the potatoes are tender, about 15 minutes, then drain the potatoes in a colander and return them to the pan.Cover the potatoes then let them steam over a medium heat for 2 minutes. Give the pan a good shake.Meanwhile, heat the milk in a small saucepan.
  • Using a potato masher mash the potatoes until they are smooth.Add the butter and half the milk to the potatoes and stir vigourously. Add more of the milk now, you may not need to add all the milk, the potatoes should be creamy, not watery.

small potatoes (we used yellow potatoes)
¼ cup salted butter (melted)
1 tablespoon minced garlic
¼ cup parmesan (grated )
salt & pepper (to taste)

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and boil until they are fork tender, about 15 - 20 minutes. Drain and pat dry with a clean cloth or paper towel.
  • Place potatoes on a baking sheet lined with a silicone mat or parchment paper. (Alternately you could can use a greased baking sheet). Use a potato masher or something with a flat bottom (we used the bottom of a glass) to gently flatten each potato.
  • Mix together the melted butter and minced garlic, then brush a liberal amount onto each potato. Sprinkle with salt, pepper, and parmesan cheese.
  • Bake at 400F for 20 to 25 minutes, until the potatoes are a golden brown and have reached your desired crispiness. Serve right away.
