This is a wonderful baked appetizer blending the tastes of Cheddar cheese and jalapeno peppers. The amount of jalapenos used can easily be adjusted to personal taste, although baking does take a lot of the burn out of the peppers. I've made this several times and I never have leftovers. My husband wishes I would make these for him every day. I don't recommend doubling the recipe; make multiple batches instead.

4 eggs
1 pound shredded Cheddar cheese
1 teaspoon minced onion
2 jalapeno peppers, seeded and chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the eggs into a food processor, and process until light and frothy. Add Cheddar cheese, onion, and jalapeno peppers, and process until smooth. Pour into an ungreased 8x8 inch baking pan.
  • Bake in the preheated oven until set, 25 to 30 minutes. Cool for 5 minutes; cut into squares to serve.

Broccoli cheddar squares are an excellent make-ahead breakfast or appetizer for your next party. Simple ingredients with delicious results.

2 tbsp (1 oz.) unsalted butter, melted
3 large eggs
1 cup milk
1 cup all-purpose flour
1 tsp baking powder
½ tsp sea salt
½ tsp black pepper
1 lb. fresh broccoli florets
½ large onion (white or yellow), diced
2 cups cheddar cheese, freshly grated

Steps:

  • Preheat the oven to 350 degrees F. In a 9x13 baking dish, pour the melted butter evenly over the bottom of the baking dish. Set aside.
  • In a large bowl, beat the eggs before whisking in the milk. Add in the flour, baking powder, salt, and pepper. Whisk well until the mixture is smooth and uniform.
  • Place the broccoli ¾ full in a food processor fitted with an S-blade attachment and gently pulse until the broccoli is broken down into small pieces to make broccoli rice (you may need to do this in batches) *(see first note.)
  • Add the broccoli rice, onion, and cheese to the flour mixture. Using a spatula, combine the ingredients well together.
  • Carefully transfer the mixture to the baking dish, making sure that the mixture is evenly distributed and spread flat on top.
  • Bake for 40-45 minutes until set (firm to the touch) in the middle. Let it cool for 15 minutes before slicing into squares. Can be served warm or room temperature.

8 strawberries, halved

Steps:

  • Combine wafer crumbs, butter and 2 Tbsp. sugar; press firmly onto bottom of foil-lined 8-inch square pan. Carefully spread jam over crust.
  • Mix cream cheese and 1/3 cup sugar in large bowl until blended. Gently stir in COOL WHIP; spoon over jam.
  • Refrigerate 3 hours or until firm. Serve topped with strawberries.

⅓ cup butter, softened
⅓ cup packed brown sugar
⅓ cup chopped walnuts
1 cup sifted all-purpose flour
¼ cup white sugar
8 ounces cream cheese
1 tablespoon lemon juice
2 tablespoons milk
1 egg
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F(175 degrees C).
  • To make Pastry: Cream together the butter and brown sugar until light and fluffy. Add in the flour and chopped nuts and stir until mixture becomes crumbly. Set aside 1/4 cup to use as a topping.
  • Press pastry mixture into 8-inch square pan and bake for 12 to 15 minutes. Let cool on rack.
  • To make Filling: Beat together the white sugar, and cream cheese until smooth. Stir in the egg, milk, lemon juice, and vanilla and mix well. Spread filling mixture over baked crust. Sprinkle reserved mixture on as a topping.

2 (8 ounce) packages cream cheese
1 cup white sugar
1 teaspoon vanilla extract
½ cup margarine, melted
¼ cup white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
  • Press one can of the crescent rolls into the bottom of the prepared pan. In a medium bowl, mix together the cream cheese, 1 cup of sugar, and vanilla until smooth and creamy. Spread over the crescent layer. Unroll the second can of crescent rolls and lay them on top of the cream cheese layer. Do not press down. Pour the melted margarine over the entire pan. 2 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate, divided
2 cups flour
2-1/3 cups sugar, divided
1 tsp. baking soda
1/2 tsp. salt
3 eggs, divided
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened

Steps:

  • Preheat oven to 375°F. Microwave butter, water and 2 oz. chocolate in large microwaveable bowl on HIGH 2 min. or until butter is melted; stir until chocolate is completely melted. Chop remaining 6 oz. chocolate; set aside. Stir in combined flour, 2 cups of the sugar, the baking soda and salt. Add 2 of the eggs and the sour cream; mix well. Pour into greased and floured 15x10x1-inch baking pan.
  • Beat cream cheese and remaining 1/3 cup sugar in small bowl with electric mixer on medium speed until well blended. Add the remaining egg; mix well. Spoon over chocolate batter; cut through batters with knife several times for marble effect. Sprinkle with the chopped chocolate.

2 eggs
¼ cup milk
1 cup bread crumbs
2 cups vegetable oil for frying

Steps:

  • Cut the block of cheese lengthwise in half (to make thinner pieces) and then into squares or triangles.
  • Mix eggs and milk in small bowl. Dip the cheese pieces into this mixture. Coat moistened cheese thoroughly with bread crumbs. Refrigerate for 30 minutes or freeze for 10 minutes to firm up the breaded cheese.
  • Heat oil in shallow pan to a medium-high temperature. Make sure the oil is only 1/2 way up the cheese squares. Pan fry the squares until they are lightly browned. Flip them only once. Drain on paper towels.

1 (15- to 18-ounce) package butter cake mix
1/2 cup butter, softened
8 ounces cream cheese, softened
1 pound confectioners' sugar, plus more for dusting, optional

Steps:

  • Gather the ingredients. Preheat the oven to 350 F.
  • Grease and flour a 9 x 13-inch baking pan.
  • In a small bowl, lightly beat 1 of the eggs.
  • In a mixing bowl with an electric mixer, combine the cake mix, butter, and the beaten egg. Beat on low speed until the butter is blended into the dry cake mix and the egg mixture and the crumbs begin to clump together. Stop mixing and pat the crumbs firmly into the bottom of the prepared baking pan.

Deep-Fried Cheese Squares image

4 tablespoons unsalted butter
1 1/4 cups all-purpose flour
1 1/2 cups milk
3 egg yolks
1 teaspoon salt
1/8 teaspoon white pepper
1 cup freshly grated imported Swiss Gruyere cheese (about 1/4 pound)
1 cup freshly grated imported Swiss Emmentaler cheese (about 1/4 pound)
2 eggs beaten together with 1/3 cup milk
1 cup dried bread crumbs
Vegetable oil for deep frying

Steps:

  • In a heavy 3 to 4-quart saucepan melt the butter over moderate heat. When the foam begins to subside, stir in 3/4 cup of the flour and mix well. Add the milk in a stream whisking constantly. Cook over high heat until the sauce comes to a boil and thickens. Simmer for another 10 minutes on low heat, whisking often.
  • Take the pan off the heat and beat in the egg yolks, one at a time, using a wooden spoon. Season with the salt and pepper. Add the grated cheese and mix well. Pour into a greased baking dish (8 by 6-inches) and spread into a 1/2-inch thick layer. Use a spatula to smooth the top. Allow to cool to room temperature, cover with plastic wrap, and refrigerate for 8 hours, or overnight, until firm.
  • Using a pastry wheel or a sharp knife, cut the mixture into 2-inch squares and transfer them to a sheet of waxed paper. Dredge each square into the remaining flour and coat completely. Shake off excess flour and dip into the egg wash, followed by the bread crumbs. Pat the square gently with a spatula to help the crumbs adhere. Repeat with all the squares and place them on a baking sheet. Refrigerate for at least 1 hour, until the coating is firm.
  • In a deep fryer or heavy saucepan, heat 2 to 3-inches of oil until it reaches 375 degrees. Preheat the oven to its lowest temperature. Line a baking dish with paper towels and set in the middle of the oven.
  • Deep-fry the squares 3 or 4 at a time, turning them with a slotted spoon for about 5 minutes, until golden brown on both sides. As they brown, transfer them to a baking dish in the oven to keep them warm while you deep-fry the rest. Serve at once as a first course or an accompaniment to the drinks.

Steps:

  • Preheat oven to 350 degrees F.
  • Take the cake mix, 1 egg, and softened stick of butter and mix together.
  • Pat down into a 9x13 pan.
  • Mix together remaining eggs, cream cheese, powdered sugar, and vanilla and pour over cake.

All-purpose flour, for rolling
1/4 cup Dijon mustard
1 cup grated Parmigiano-Reggiano
10 to 14 sprigs fresh thyme, leaves finely chopped
Freshly cracked coarse black pepper

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Roll the pastry out flat on a lightly floured surface with a floured rolling pin. Brush off any excess flour. In a small bowl, combine the mustard with a splash of water to loosen. Brush the mustard over the entire top of the pastry.
  • In a small bowl, stir together the cheese, thyme and a few grinds of black pepper. Sprinkle the entire sheet of pastry with the cheese mixture. Gently roll the top of the pastry again to lightly embed the topping into the pastry. Cut into 2-inch squares and pinch one set of opposite corners together on each square or leave flat. Steps:

  • Preheat oven to 325 F.
  • To prepare crust: In medium saucepan place 1/4 cup sugar and butter;heat until butter is melted, stirring occasionally.
  • Stir in graham cracker crumbs;press mixture evenly over the bottom of a 13 x 9-in.
  • baking pan.
  • In a large bowl with an electric mixer beat cream cheese until smooth.
  • Gradually beat in remaining 3/4 cup sugar.
  • Beat in eggs, one at a time, and vanilla, until well blended.
  • Spoon blueberry filling over crust. Carefully pour cream cheese mixture over blueberries.
  • Bake just until set, 45 to 50 minutes.
  • Cool.
  • Chill until cold, about 2 hours or longer.
  • Cut into 24 squares.
  • Serve garnished with strawberry halves or mint leaves, if desired.

1 stick plus 6 tablespoons unsalted butter, at room temperature
1/4 cup granulated sugar
1/4 cup unsweetened cocoa powder
1 large egg, lightly beaten
2 cups graham cracker crumbs
3/4 cup sweetened shredded coconut
1/2 cup walnuts, finely chopped, plus whole nuts for topping
4 ounces cream cheese, at room temperature
1/2 teaspoon vanilla extract
Pinch of salt
1 1/2 cups confectioners' sugar
1 tablespoon heavy cream
4 ounces semisweet chocolate, chopped

Steps:

  • Make the crust: Line a 9-inch-square baking dish with aluminum foil, leaving a 2-inch overhang on 2 sides. Put 1 stick butter, the granulated sugar and cocoa powder in a heatproof bowl and set over a saucepan of simmering water (do not let the bowl touch the water). Cook, stirring, until the butter melts and the sugar dissolves. Add the egg and continue to cook, whisking, until the mixture is thick like hot fudge sauce, 3 to 5 minutes. Remove from the heat and stir in the graham cracker crumbs, coconut and chopped walnuts. Spread in the prepared baking dish. Cover with plastic wrap and refrigerate until set, about 45 minutes.
  • Make the filling: Beat the cream cheese, 4 tablespoons butter, the vanilla and salt in a bowl with a mixer on medium-high speed until creamy. Add the confectioners' sugar and beat until stiff, then beat in the heavy cream until fluffy. Spread over the crust, cover and refrigerate until firm, at least 30 minutes.
  • Make the topping: Put the chocolate and the remaining 2 tablespoons butter in a microwave-safe bowl; microwave in 30-second intervals, stirring, until melted. Quickly spread the chocolate over the filling. Top with whole walnuts and refrigerate until set, 30 minutes. Remove from the pan and cut into squares. Store in the refrigerator for up to 1 week.

1/2 teaspoon cayenne pepper (or to taste)
1 teaspoon garlic powder (optional or to taste)
1/3 cup grated parmesan cheese
3 green onions, chopped (optional)
1/2 teaspoon seasoning salt (or to taste)
1 teaspoon fresh ground black pepper (or to taste)
1 teaspoon baking powder
2 1/2 cups grated cheddar cheese or 2 1/2 cups mozzarella cheese
1 (10 ounce) package frozen spinach, thawed, well drained, squeeze out any excess moisture with hands
2 -3 tablespoons melted butter
grated parmesan cheese (any amount desired)
1 cup shredded cheddar cheese (optional) or 1 cup mozzarella cheese (optional)

Steps:

  • Heat oven to 350 degrees F.
  • Butter a 13 x 9-inch baking pan.
  • Place the butter in the prepared baking dish, and melt in the oven; remove pan and set aside.
  • In a large bowl beat the eggs thoroughly.
  • Blend in flour, half and half, cayenne, garlic powder and Parmesan cheese seasoning salt, black pepper and baking powder.
  • Add in 2-1/2 cups grated cheddar or mozzarella cheese, green onion and spinach; mix well.
  • Spoon the mixture into baking dish on top of the melted butter, and level off.
  • Drizzle the top with 2 tablespoons melted butter.
  • Sprinkle with grated Parmesan cheese.
  • Bake for about 30 minutes or until golden brown and set.
  • Remove from oven, and cool for 40-45 minutes.
  • If desired you may sprinkle about 1 cup shredded cheddar or mozzarella cheese immediately after baking.
  • Cut into squares.
  • Note: these squares freeze very well.

Since my DH and DS could make a meal just on taters, I'm always searching for new and great tater recipes, this one happens to be a really good one. If you like some heat add in some cayenne pepper or chopped jalapeno.

5 lbs potatoes
2/3 cup butter, melted
1 onion, chopped (I use 2 medium onions)
1 tablespoon minced fresh garlic
1 (12 ounce) can evaporated milk
4 eggs, beaten
2 -3 teaspoons salt or 2 -3 teaspoons seasoning salt
pepper
3 cups shredded cheddar cheese (or to taste)

Steps:

  • Peel the potatoes and place in cold water to prevent turning dark; set aside.
  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch baking dish.
  • Melt butter in a large skillet.
  • Add in onion and garlic; saute until soft (about 5-6 minutes).
  • Add in the evaporated milk and bring to a boil, then remove from heat.
  • In a large bowl, combine the eggs, salt and pepper; beat until frothy.
  • Shred the potatoes, and add to the egg mixture; toss to combine.
  • Add in the milk mixture; stir to combine.
  • Set aside about 1 cup of cheese and add the rest to the potato mixture, and mix well.
  • Transfer the mixture to prepared baking dish.
  • Bake for about 45 minutes.
  • Remove from oven and sprinkle the remaining cheese on top and return to oven, bake for an additional 25-30 minutes.
  • Cut into squares and serve hot.
