I got this recipe about 20 years ago, from a girl I used to work with. She'd bring it in to work and share with all of us. It was really good and we all asked her for the recipe. Here it is. Sometimes when I make this, I add 1/4 teaspoon of chipotle powder to the custard mix for a little "zing".

1 cup flour
1/2 teaspoon salt
1/4 teaspoon dry mustard
1 cup cheddar cheese, grated
1/4 cup butter, melted
1 cup onion, sliced (a mild one-like vidalia)
2 tablespoons butter
1 cup noodles, cooked and drained
2 eggs
1 cup milk, hot
1/2 teaspoon salt
pepper
1 cup cheddar cheese, grated

Steps:

  • Sift the flour, salt and dry mustard into a bowl. Stir in the melted butter and 1 cup of the grated cheddar, mixing thoroughly. Press evenly over bottom and up the sides of a 9" deep pie plate.
  • Saute the onion in 2 tablespoons of butter until soft and transparent. Add the noodles and combine. Toss and spread in the cheese crust.
  • Beat the eggs. Add milk, salt, pepper and remaining 1 cup of cheese. Pour over the noodles.
  • Bake in a preheated 325* oven for 35-40 minutes, or until custard is set.
  • If desired, you can sprinkle additional grated cheddar over the top of the pie, 5 minutes before it is finished baking (really good!).

1 cup shredded mozzarella, divided
3 scallions, chopped
Reserved cooked bacon, from Spaghetti Carbonara, chopped
2 large eggs
1/2 cup milk
1/4 cup Parmesan, divided
Kosher salt and freshly ground black pepper
1 (14 1/2-ounce) can chopped tomatoes, drained
1 tablespoon extra-virgin olive oil
1 tablespoon chopped fresh basil

Steps:

  • Heat the oven to 350 degrees F. Spray a 9-inch pie dish with cooking spray.
  • Mix the reserved pasta together with half the mozzarella, scallions, and the reserved bacon. Pat the pasta mixture into the pie dish. Whisk the eggs with the milk, half the Parmesan, salt, and pepper. Pour over the pasta and sprinkle with the remaining mozzarella and Parmesan. Place onto a baking sheet and bake until set and the top is browned and bubbling, 30 to 35 minutes. Allow to rest for 15 minutes before slicing and serving.
  • In a medium bowl, combine the tomatoes, olive oil, basil, and salt and pepper, to taste. Mix and spoon over slices of the Noodle Pie.

3 chopped scallions
Chopped bacon
2 large eggs
1/2 cup milk
1/4 cup Parmesan cheese
1 (14.5-ounce) can chopped tomatoes, drained
1 tbsp. extra virgin olive oil
1 tbsp. chopped fresh basil
Kosher salt, to taste
Black pepper, to taste

Steps:

  • Heat oven to 350 degrees F. Spray a 9-inch pie dish with cooking spray.
  • Mix the reserved pastas together with half the mozzarella, scallions, and the reserved bacon. Pat the pasta mixture into the pie dish. Whisk the eggs with the milk, half the Parmesan cheese, and salt and pepper to taste. Pour egg mixture over the pasta and sprinkle with the remaining mozzarella and Parmesan cheese. Place dish on a baking sheet and bake until set and the top is browned and bubbling, about 30-35 minutes. Allow to rest for 15 minutes before serving.
  • While the pie is baking, make the sauce: Combine the tomatoes, olive oil, basil, and salt and pepper to taste. Spoon the sauce over slices of the Noodle Pie.
  • TIP: Tossing the eggs in the heated pan will help to cook the eggs, and will also keep them from scrambling, resulting in a creamy delicious sauce.

3/4 cup flour
1 cup grated cheddar cheese
1/4 teaspoon dry mustard
1/4 cup melted butter
3 tablespoons melted butter
2 cups thin sliced onions
1 cup cooked thin noodles
2 eggs
1 cup grated cheddar cheese
1 cup milk, scalded
1 teaspoon salt
pepper, to taste

Steps:

  • Blend all the crust ingredients together and press into bottom of 10 inch deep pie plate.
  • For the Filling.
  • Melt butter in pan, saute onions until tender. Remove from heat. Mix with noodles. Put mixture into pie crust. Beat eggs slightly, stir in milk, salt, pepper and 1 cup grated Cheddar cheese. Pour over onion noodle mixture. Sprinkle with grated cheese and a little paprika.
  • Bake 35 minutes or until knife inserted in middle comes out clean.

1/4 teaspoon salt
Chopped fresh parsley, if desired

Steps:

  • Heat oven to 400°F. Spray 10-inch or 9 1/2-inch glass deep-dish pie plate with cooking spray.
  • In large bowl, mix 2 cups of the cheese, the ham and uncooked macaroni. Spread in pie plate.
  • In blender, place milk and eggs. Cover; blend on medium speed until smooth. Add Bisquick mix and salt; blend until smooth. Pour over mixture in pie plate.
  • Bake 35 to 40 minutes or until knife inserted in center comes out clean. Sprinkle with remaining cheese. Bake 1 to 2 minutes longer or until cheese is melted. Let stand 10 minutes before serving. Sprinkle with parsley.

This simple recipe came from the Polish side of my family. We simply called it 'cottage cheese and noodles' or 'lazy man pierogies.' It's a great comfort food and can be made with any kind of noodle. It could be a side dish, but we always enjoyed it as a meal.

½ cup butter
1 small onion, diced
1 (16 ounce) package egg noodles
1 (16 ounce) package cottage cheese
½ cup sour cream
½ teaspoon sea salt
¼ teaspoon ground black pepper

Steps:

  • Melt butter in a saucepan over medium heat. Cook and stir onion in melted butter until softened, 7 to 10 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and return to the pot.
  • Stir butter and onion mixture, cottage cheese, sour cream, sea salt, and black pepper into the noodles. Place the pot over medium heat; cook and stir until heated through and warm, 5 to 8 minutes.
