3 1/2 cups all-purpose flour
1 cup whole wheat flour
1 package instant yeast
1 1/4 cup grated Cheddar cheese
1 teaspoon salt
1 cup milk
3/4 cup water
2 tablespoons hot sweet or Dijon mustard

Steps:

  • In large bowl, combine 3 cups all-purpose flour, whole wheat flour, yeast, 1 cup cheese and salt. Heat milk, water and mustard until hot to touch (125 degrees F); stir into dry mixture. Mix in enough reserved flour to make soft dough. Knead on floured surface until smooth, 8-10 minutes. Cover; let rest 10 minutes. Divide dough into 3 equal pieces; roll each to 24-inch rope. Braid ropes; place on greased baking sheet. Form into a circle; pinch ends to seal. Sprinkle with remaining cheese. Cover; let rise until doubled in size, about 30-40 minutes. Bake at (375 degrees F) for 40 minutes or until done; cool on wire rack.

3 slices bread, crumbled
1 ½ pounds ground beef
1 onion, chopped
1 cup shredded Cheddar cheese
½ cup shredded carrot
¼ cup brown sugar
¼ cup ketchup
1 tablespoon prepared yellow mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk eggs, milk, salt, and ground black pepper in a large bowl. Add crumbled bread and stir until dissolved. Mix ground beef, onion, Cheddar cheese, and carrot into bread mixture; transfer mixture to a 9x5-inch loaf pan. Combine brown sugar, ketchup, and mustard in a small bowl; spread over meat mixture.
  • Bake in the preheated oven until no longer pink in the center, 1 to 1 1/4 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

1 pound Monterey Jack cheese, sliced
1/2 cup butter, melted
2 tablespoons lemon juice

1/2 teaspoon celery salt
Minced fresh chives, optional

Steps:

  • Preheat oven to 350°. Cut bread into 1-in. slices to within 1/2 in. of bottom of loaf. Repeat cuts in opposite direction. Insert cheese in cuts., Mix all remaining ingredients except chives; drizzle over bread. Wrap in foil; place on a baking sheet., Bake 20 minutes. 1 (1 1/2) pound round loaf sourdough bread
1 cup butter
1 tablespoon Dijon mustard
1 teaspoon lemon juice
1 tablespoon poppy seeds
1 tablespoon seasoned salt (such as Spice Islands® Beau Monde Seasoning)
1 tablespoon minced onion
1 pound Swiss cheese, sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Cut a checkerboard pattern into the sourdough bread round by cutting 5 or more slices about 1 inch apart into the sourdough bread round with a serrated knife, taking care not to cut all the way through the loaf. Rotate the bread a quarter turn, and cut 5 or more slices going the other way, to finish the checkerboard pattern. The slices will still be attached at the bottom.
  • Melt the butter over low heat in a saucepan, and stir in the mustard, lemon juice, poppy seeds, seasoned salt, and onion until the mixture is well combined. Place the bread loaf onto the prepared baking sheet, and carefully pour the butter mixture all over the bread, including in the cracks between squares, letting the butter mixture soak into the bread. Stuff slices of Swiss cheese into the spaces between the bread squares.
  • Bake in the preheated oven until the cheese is melted and bubbling, and the loaf is browned, about 30 minutes. To serve, let guests pull the bread apart into individual squares.

1 (1/4 ounce) package dry active yeast (about 1 Tablespoon)
1 1/4 cups warm water (110 F/45C)
1 3/4 cups rye flour
2 cups bread flour
1 teaspoon salt
1 tablespoon vegetable oil
6 tablespoons whole grain mustard
1 1/2 cups emmenthaler cheese, shredded
3 tablespoons parsley, chopped
1 teaspoon mustard seeds

Steps:

  • Dissolve yeast in 1/4 cup of the water; let stand 5 minutes until frothy. Put flours and salt into a large bowl; make a well in the center. Add yeast mixture, remaining water and oil and mix to a soft dough.
  • Knead on a lightly floured surface about 5 minutes or until smooth and elastic. Put into a clean bowl, cover with a damp cloth and let rise in a warm place 1-1/2 to 2 hours or until doubled in size.
  • Preheat oven to 425 degrees F. (220 degrees C.).
  • Punch down dough. Knead dough 2 minutes, then roll into a 12-inch square. Spread with mustard, then sprinkle with cheese and parsley.
  • Roll up like a jellyroll and place, seam side down, on a floured baking sheet; brush with water and sprinkle with mustard seeds.
  • Bake 10 minutes; reduce temperature to 400 degrees F. (205 degrees C.) and bake 20 minutes or until bread sounds hollow when tapped underneath. Cool on a wire rack.
  • Variation: Use 1 cup light beer instead of 1 cup of the water.

120g rolled oats, plus extra for the topping
250g plain flour, plus extra for dusting
1 tsp bicarbonate of soda
150g mature cheddar, grated
4 spring onions, chopped
350ml buttermilk, plus a little extra (optional)
½ tsp Dijon mustard

Steps:

  • Heat the oven to 200C/180C fan/gas 6 and line a baking tray with baking parchment. Blitz the oats in a food processor until fine, then tip into a large bowl along with the flour, bicarbonate of soda, ½ tsp salt and 1 tsp freshly ground black pepper. Quickly mix together to combine. Mix in 130g of the cheese and all of the spring onions.
  • Mix the buttermilk and mustard together in a jug, then pour this into the dry ingredients and use a cutlery knife to quickly mix into a soft, shaggy dough. If the dough still looks dry, add another 1-2 tbsp buttermilk. Turn the dough out on a floured surface and knead briefly to just bring it together into a ball.
  • Transfer the dough to the prepared tray and flatten it slightly into a thick disc using your palm. Use a sharp knife to cut a very deep cross into the top, then scatter with the remaining cheese and a small handful of oats. Bake for 35-45 mins until deeply browned and the loaf sounds hollow when tapped on the bottom. Leave to cool on a wire rack before slicing and serving.

225 g self-raising flour
1 teaspoon baking powder
3 slices oak-smoked ham, chopped
6 fresh sage leaves, finely chopped
75 g sharp cheddar cheese, chopped
50 g unsalted butter, melted and cooled slightly
1 medium egg, lightly beaten
1 1/2 tablespoons wholegrain mustard
150 ml semi-skimmed milk

Steps:

  • Preheat the oven to 200°C/fan180°C/gas 6. Sift the flour, baking powder and 1/4 teaspoon salt into a large bowl. Stir in the ham, sage and Cheddar. Make a well in the centre, then add the butter, egg, mustard and milk. Mix together briefly, until just combined.
  • Put teaspoonfuls of the mixture into petits fours cases, so that each is about three-quarters full. Place on 2 large baking sheets and bake for 8-10 minutes, until risen and golden. Transfer to wire racks to cool a little.
  • To serve, peel off the petits fours cases and line the muffins up on serving plates. Serve warm or at room temperature. Put your favourite chutney into a serving bowl for guests to dunk the muffins inches.
  • Tip: Make the muffins, then cool and freeze in food bags for up to 1 month. Defrost in the fridge overnight, then serve at room temperature.
