APRICOTS WITH HERBED GOAT CHEESE

Steps:
- Place goat cheese, minced basil, chives and milk in a mini food processor; process until smooth. Arrange apricot slices on a serving platter. Drop goat cheese mixture by teaspoonfuls over top. Sprinkle with salt and pepper; drizzle with balsamic glaze. Garnish with additional basil leaves. Serve immediately.

Steps:
- Cover baking sheet with foil; spray with cooking spray. Cook butter and sugar in small skillet on medium heat until butter is melted. Add nuts; cook 5 to 7 min. or until lightly browned and evenly glazed with sugar syrup, stirring constantly. Spread into single layer on prepared baking sheet; cool completely.
- Meanwhile, bring vinegar to boil in small saucepan on medium heat; cook 6 to 7 min. or until slightly thickened. Cool completely.
- Mix cream cheese and Gorgonzola until blended; spread onto apricots. Sprinkle with nuts; drizzle with vinegar.

SAGE SAUSAGE BITES WITH BALSAMIC APRICOT DIP

- Preheat a small pot over medium heat and the oven to 425 degrees F.
- To the pot, add oil and onion. Saute the onion for 1 minute.
- In a mixing bowl, combine sweet sausage and chopped sage.
- Next, add balsamic vinegar to onion and reduce by half, 1 minute. Remove vinegar from heat and combine with apricot all-fruit spread or preserves and spicy mustard. Stir until mustard is fully incorporated. Dip will be glossy and brown in color.
- Add 2 tablespoonfuls of apricot dip to bulk sausage and mix. Form meat into bite size nuggets, coat in bread crumbs then place on nonstick cookie sheet. Recipe will make 20 to 24 pieces. Bake 15 to 17 minutes, until evenly browned, turning occasionally. Drain, then serve with party picks for dipping with remaining balsamic apricot mustard dip.
GRILLED APRICOTS WITH GOAT CHEESE AND BALSAMIC VINEGAR

- Remove the goat cheese from its package, place in a bowl, and let sit at room temperature to soften.
- Cut the apricots in half along the seam that runs around the fruit; the two halves should come apart cleanly after you cut all the way around. Remove the pit. Drizzle the halves lightly with the olive oil and season with salt and pepper.
- Heat the grill. Place a few apricots on the grill, cut side down, and grill for just under a minute. As you grill, press down firmly with tongs for a couple of seconds to form grill marks. Turn and cook for 10 seconds on the second side. Repeat with the remaining apricots.
- Add a dash of water to the goat cheese and stir until it's pliable. Using two spoons, place a generous spoonful of goat cheese in the indentation of each apricot; scoop the cheese with the first one and use the second to push the cheese onto the fruit. Spoon a few drops of the balsamic vinegar over the apricots and season with more pepper. Serve immediately.
