GLUTEN FREE CHERRY QUICK BREAD
A recipe for gluten free Cherry Quick Bread or traditional cherry quick bread can be made in a loaf pan or in muffins tins. Baking with frozen cherries makes this an easy recipe for any time of year.

Steps:
- Preheat the oven to 350 degrees F. Prepare a 9 inch loaf pan with parchment and baking spray.
- If using frozen cherries, let them thaw in a strainer for ten minutes. Toss with one tablespoon of gluten free flour. Set aside.
- Mix the dry ingredients of gluten free flour, salt, baking powder and nutmeg. Set aside.
- Beat the sugar and the butter until fluffy. Add the eggs one at a time. Add the vanilla and the milk.
- Gently fold the wet and dry ingredients together. Fold the cherries into the batter. Do not overmix.

- In a bowl, beat butter and sugar until creamy. Add the egg, almond extract and vanilla while beating. Add cherries and the juices. Beat to combine everything.
- Put flour in a small bowl. Add baking powder and salt. Add to the mixture of cherries. Stir just enough to wet the dry ingredients. Pour the dough in a greased loaf pan. Cook in the oven at 350 F for about 45 minutes or until a toothpick inserted in it comes out dry. Cut in 8 slices.

- Stir all dry ingredients together.
- Beat oil and eggs.
- Add vanilla.
- Mix all dry ingredients with flour. Add oil mixture to flour mixture.

- Pour into two loaf pans. Beat at 300 for 1 to 1 hour.
CHERRY BREAD PUDDING
Not only is bread pudding a great use of leftover bread, it's rich, satisfying, and delicious comfort food. The juice from the baked cherries makes this a very moist, tender, and sweet bread pudding. Good served with a scoop of ice cream or a dollop of whipped cream.

Steps:
- Combine milk, sugar, butter, vanilla, cinnamon, and salt in a small saucepan over low heat. Cook just until butter has melted and set aside to cool.
- Grease an 8x8-inch baking dish or spray with cooking spray.
- Add bread cubes to the baking dish. Whisk eggs into the butter mixture until well combined and pour over the bread cubes, pressing down a bit so bread cubes are submerged. Stir cherries into the bread cube mixture and distribute evenly. Let soak for 30 minutes.
- Preheat the oven to 350 degrees F (175 degrees C). Sprinkle cinnamon sugar over the bread pudding.
- Bake until the top is golden brown and the custard is set in the center, about 65 minutes. Bread pudding will puff up but drop shortly after coming out of the oven, just like a souffle. Place on a baking rack and cool for 10 minutes. Serve warm or at room temperature.

CHOCOLATE-CHERRY PECAN BREAD
Here's something special! Based on the method outlined in The New York Times last November, this bread requires very little effort. But you do have to plan ahead-start it the night before, then bake the next day, or start early in the morning for bread in the evening. This recipe was developed using a bread crock, but any appropriately sized heavy, oven-safe, covered pot should work. This recipe comes from the King Arthur site. Times given do not allow for the long rising time.

- Mix flours, sugar, salt, yeast, and water in a large bowl.
- Add cherries, chocolate chips, and pecans. Stir well to make a very soft dough, and cover the bowl with plastic wrap.
- Let rest at room temperature overnight, or for at least 12 hours; the dough will be bubbly and puffy.
- Turn the dough out onto a lightly floured surface, and fold it onto itself a few times.
- Let it rest 15 minutes, then form it into a ball.
- Place it in a lightly greased bowl, smooth side down. Cover and let rise at room temperature about 2 hours, until a slight indentation remains when poked with a finger.
- During the last 30 minutes of rising, preheat the oven to 450°F and place a bread crock (or a heavy, 4- to 4 1/2-quart oven-safe pot) in the oven while it heats.
- When the dough is risen, remove the crock from the oven, and turn the dough out of the bowl and into the crock; the smooth side will be facing up.
- Shake the crock gently to settle the dough, then cover with the lid and return to the oven.
- Bake the bread for 20 minutes, then remove the lid and continue to bake another 30 to 40 minutes, until the bread is deep brown in color and an instant-read thermometer inserted into the center registers about 205°F.
- Remove the crock from the oven, turn the bread onto a rack, and cool before slicing. Yield: 1 loaf.
CHERRY COBBLER IN THE SLOW COOKER

- Combine cherries, 2 tablespoons sugar, lemon juice, cornstarch, and almond extract in a saucepan over low heat. Cook, stirring occasionally and crushing cherries with a spoon, for 5 to 10 minutes. Remove from the heat and pour into a slow cooker.
- Whisk flour, baking powder, and cinnamon together in a bowl. Cream 3/4 cup sugar and butter together in a separate, large bowl until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in milk. Mix in flour mixture just until incorporated. Add to the slow cooker.
- Cook on Low for 4 hours or on High for 2 hours.
