Easy potato dish that's real comfort food! Simple and rich, made fresh at home with common pantry ingredients. Never buy a box of Betty Crockers Scalloped Potatoes again! Easy to halve the measurements to make a 4 serving size.

1/2 onion, chopped
4 tablespoons margarine
4 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups milk
1/2 cup half-and-half
6 cups potatoes, peeled and sliced
2 cups cheddar cheese, shredded

Steps:

  • Use a big pot.
  • Saute chopped onions in margarine til soft but not browned.
  • In small bowl, combine flour, salt and pepper.
  • Stir flour mixture into onion mixture then add milk and half and half and stir and cook over medium heat until mixture begins to thicken (about 3 minutes).
  • Turn off heat.
  • Add 1 1/2 cups shredded cheddar to the sauce and stir til melted and smooth.
  • Add sliced potatoes and stir well to combine.
  • Pour mixture into a 9 by 13 casserole dish that you have sprayed with Pam.
  • Cover with foil and bake at 350 for 35 minutes.
  • Remove from oven, take foil off and sprinkle reserved 1/2 cup cheese over top (or more as desired).
  • Return to oven to bake another 30 minutes or so or until potatoes are soft, cheese is melted and edges begin to lightly brown.
  • Let stand a few minutes before serving to allow sauce to thicken.

3 lb Betty Crocker™ fresh russet potatoes, peeled (about 4 large)
1/4 cup thinly sliced green onions (4 medium)
1 cup shredded Cheddar cheese (4 oz)
1/2 cup shredded Parmesan cheese

Steps:

  • Heat oven to 350°F. Spray 3-quart glass baking dish with cooking spray.
  • In 2-quart saucepan, melt butter over medium heat. Cook and stir garlic in butter 1 minute. Stir in flour with whisk until smooth. Gradually add half-and-half and cream. Heat to boiling. Reduce heat to low; cook about 5 minutes, stirring frequently, until sauce is slightly thick. Stir in salt, pepper and nutmeg. Slice potatoes into 1/8-inch-thick slices.
  • In large bowl, toss potatoes with cream sauce. Layer half of the potatoes in baking dish; top with green onions. Sprinkle with half each of the Cheddar and Parmesan cheeses. Repeat layers, using up potatoes and cheese.
  • Bake 55 to 65 minutes or until potatoes are tender and top is golden brown. Let stand 5 to 10 minutes before serving. Cover and refrigerate any remaining potatoes.

4 lb russet potatoes, peeled & cubed (or potatoes of choice)
1 large yellow onion, chopped
1 medium red onion chopped
1 small bunch green onions, chopped
1 large green bell pepper, chopped
4-5 mini sweet peppers (cut into rings)
1/4 stick butter
2 Tbsp olive oil or canola
8 clove garlic minced or chopped fine (less if desired)
2 tsp each kosher salt & coarse black pepper (more or less as desired)
1 Tbsp dried chopped chive
2 1/2 oz pkg. crumbled real bacon
1 1/2 c kerry gold ballyshannon white cheddar cheese,shredded
2 c mild cheddar cheese (shredded)

Steps:

  • 1. You will need a large skillet, with lid, I used a 16 inch size. Add butter and olive or canola oil to skillet, & leave on stove till ready to heat & start cooking.
  • 2. Chop all 3 onions & bell peppers, then cut mini sweet peppers into rings, and add to a large colander.
  • 3. Peel & cube potatoes and add to same colander.
  • 4. Heat oil and butter over low heat, wash all of the veggies througly, drain and add to skillet.
  • 5. Add the chopped or minced garlic, salt & pepper, and chopped chive. Stir to make sure they are not sticking and heat is medium low. Cover with lid and continue to cook.
  • 6. While potatoes are cooking, grate the Cheese if not already grated.
  • 7. Check potatoes to make sure they are not sticking and all the liquid has not evaporated. If it has,add 1/4 to 1/3 cup of water, just enough to create steam and prevent potatoes from sticking. Cover with lid and continue to cook till potatoes are tender for a total time of about 20 to 25 minutes.
  • 8. Add the shredded white cheddar cheese, and carefully stir to mix cheese into potatoes, cover with lid about 2-3 minutes.
  • 9. Remove lid then top potatoes with the mild cheddar cheese.
  • 10. Sprinkle bacon on top of cheese. Cover again for about 5 minutes till cheese melts.Serve and enjoy.
  • 11. Turn off heat when cheese has melted. Serve and enjoy.

1 egg
1 cup cheddar cheese (shredded)
1 tbsp Worcestershire sauce*
1/2 large white onion (diced)
1/4 cup green onion (chopped, plus more for garnish)
2 garlic cloves (minced)
1/2 cup flour**
2 tbsp fresh basil*** (optional) (chopped)
2 tbsp fresh parsley*** (chopped)
1 tsp salt
1/2 tsp black pepper

Steps:

  • In a large bowl, mix all ingredients (EXCEPT white onion, garlic, and butter) until everything is well-incorporated.
  • In a large pan, sautee your white onion and garlic with a bit of olive oil or butter for about five minutes, or until soft and fragrant. Remove from pan and add to the potato mixture.
  • Melt 1 tbsp. of butter in your pan on medium heat.
  • Take about 1/4 cup of potato dough (it's sticky!) for each patty, and work into a ball shape.
  • Put 3 or 4 patties into the hot pan, and flatten with a spatula until they're about 1/2-inch to 3/4-inch thick. Then cook on each side for about four minutes until they're golden and beginning to get a bit crispy. Repeat until all of your mashed potato batter is used up.
  • Serve with sour cream and extra green onion (or top with hot sauce or ketchup - the options are endless!) or grab one and eat it cold out of the refrigerator the next day -- they keep really well in the fridge for a few days!

This is the recipe my husband uses when he makes Potatoes Au Gratin. You will need to refer to Recipe #207024 for this to make the cheese sauce. Using a food processor or mandoline to slice the veggies is key.

4 -6 potatoes (depending on size)
2 onions
2 cups whole mushrooms
2 tomatoes, sliced (optional)
salt and pepper, to taste
2 tablespoons butter
2 tablespoons flour
200 g cheddar cheese, grated
400 ml milk
50 g cheddar cheese, grated (See Peter's Cheese Sauce for preparation of sauce)

Steps:

  • Preheat oven to 200C/400°F.
  • Generously butter the inside of a 9X13 baking dish and set aside.
  • Peel the potatoes and thinly slice along with the onions and mushrooms, using a food processor or mandoline.
  • Layer half the potatoes into the bottom of the baking dish, then half of the onions, followed by half the mushrooms. Season with salt and pepper. Repeat layers with remaining veggies and season with salt and pepper.
  • Pour cheese sauce over potatoes and cover with aluminum foil.
  • Bake for 1 1/4 hours. Remove from oven and take foil off. Put a single layer of sliced tomatoes on top, if using. Sprinkle with remaining 50g cheese and return to oven for 15 minutes, turning on broiler/grill for the last 3-5 minutes to brown cheese.

1/4 cup butter
1 envelope (1 ounce) dry onion soup mix
1 1/2 cups shredded Cheddar Cheese
5 green onions, sliced thin

Steps:

  • Preheat the oven to 400 degrees. Place the cubed potatoes on a greased baking sheet. Dot the cubed potatoes with butter and sprinkle the dry onion soup over the cubed potatoes evenly.
  • Cover the potatoes with a sheet of foil and bake in a preheated 400 degree oven for 25 minutes. After 25 minutes, remove the pan from the oven and stir the potatoes. 4 large russet potatoes, scrubbed and cut into pieces
¼ cup butter
4 slices thick sliced bacon
⅓ cup chopped onion
1 cup cottage cheese
1 ½ cups chopped green onion
½ cup shredded Cheddar cheese
salt and pepper to taste
2 tablespoons butter, cut into pieces
¼ cup shredded Cheddar cheese
¼ teaspoon paprika, for garnish

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 2-quart baking dish.
  • Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Return potatoes to pot and roughly mash them with 1/4 cup butter.
  • Meanwhile, place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove all but 1 teaspoon of bacon drippings from the skillet. Drain the bacon slices on a paper towel-lined plate, and allow to cool. Crumble the bacon and set aside.

1 medium vidalia onion, 1/4-inch wedges
3/4 teaspoon lemon pepper
1/2 teaspoon salt
1/2 cup cheddar cheese, shredded

Steps:

  • Preheat oven to 350ºF.
  • Pierce potatoes with a fork; arrange on paper towels in microwave oven.
  • Microwave at HIGH for 5 to 6 minutes, turning once.
  • Let stand 1 minute.
  • Cut potatoes lengthwise into quarters.
  • Place potatoes and onion wedges in an 8-inch square baking pan coated with cooking spray.
  • Lightly coat tops of vegetables with cooking spray, and sprinkle evenly with lemon pepper and salt.
  • Bake at 350ºF for 30 minutes.
  • Sprinkle with cheese; cook an additional 3 minutes or until cheese melts.

3 tbsp canola oil
1 tbsp grated Parmesan cheese
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp paprika
1/8 tsp pepper
8 bacon strips (cooked and crumbled)
1-1/2 cups shredded cheddar cheese
1/2 cup sour cream
4 green onions (sliced)

Steps:

  • Preheat oven to 475°. Cut potatoes in half lengthwise; scoop out pulp, leaving a 1/4-in. shell (save pulp for another use). Place potato skins on a greased baking sheet.
  • Combine oil with next 5 ingredients; brush over both sides of skins.
  • Bake until crisp, about 7 minutes on each side. Sprinkle bacon and cheddar cheese inside skins. Bake until cheese is melted, about 2 minutes longer. Top with sour cream and onions. Serve immediately.
