HAM & CHEDDAR BREAKFAST CASSEROLE

Steps:
- Whisk together first 4 ingredients. Place a third of the potatoes in a greased 5- or 6-qt. slow cooker; layer with a third of each of the following: ham, onion and cheese. Repeat layers twice. Pour egg mixture over top. Refrigerate, covered, overnight., Cook, covered, on low 4-5 hours, until casserole is set and edges begin to brown. Turn off slow cooker. Remove insert; let stand, uncovered, 30 minutes before serving.

WESTERN HAM AND EGG CASSEROLE
Steps:
- Gather the ingredients.
- Butter a shallow 2-quart baking dish (about 12-by-8-by-2 inches).
- Remove the crusts from the bread and cut it into small cubes.
- Place the bread cubes in the prepared baking dish. Sprinkle shredded cheddar cheese over the bread and then top with the ham, onion, and green bell pepper.
- In a large bowl, whisk together eggs and milk with the salt and freshly ground black pepper.
- Pour egg mixture over the ham and cheese mixture. Then cover the casserole and refrigerate for 8 hours or overnight.
- Remove the breakfast casserole from the refrigerator and let stand at room temperature for 30 minutes. Heat the oven to 350 F.
- Uncover the casserole and bake it in the preheated oven for 40 minutes or until set.
- Serve for either breakfast, brunch , or dinner and enjoy!

This a wonderful easy meal that I learned from my grandmother when I was a young girl, it was always a favorite around our house when I was growing up. A meal in itself or you can add your favorite vegetables on the side. It is a hot delicious healthy meal that will satisfy a hearty eater.

Steps:
- Butter a large baking dish and evenly spread out the torn bread to cover the bottom of the dish.
- In a large bowl, beat to combine the heavy cream, cheese, ham, milk, scallions, salt, pepper and eggs. Pour the egg mixture over the bread and top with the paprika. Cover and refrigerate for at least 1 hour and up to overnight.
- Remove the dish from the refrigerator 30 minutes before baking. Preheat the oven to 350 degrees F.
- Uncover the dish and bake until puffed, golden and cooked through, about 45 minutes. Let cool 5 minutes, sprinkle with the chives and serve.
EGG, HAM AND ENGLISH MUFFIN CASSEROLE

- Lightly mist a round 2-quart baking dish with cooking spray. Halve each piece of English muffin and arrange it cut-side down in the baking dish in an overlapping shingled pattern. Tuck the ham between the layers. Sprinkle the scallions and 1/2 cup of the Cheddar over top.
- Whisk the milk, mustard and eggs until combined in a large bowl; season with salt and pepper. Pour the egg mixture into the baking dish, cover with plastic wrap and refrigerate for at least 5 hours or overnight.
- Preheat the oven to 350 degrees F.
- Discard the plastic wrap and sprinkle the remaining 1/2 cup cheese over the casserole. Place the dish on a rimmed baking sheet and bake until the eggs are set and the edges are lightly browned, about 1 hour. Let stand 10 minutes before slicing and serving.
HAM AND BROCCOLI BREAKFAST CASSEROLE WITH EXTRA-SHARP CHEDDAR
I was at a church brunch recently and the ladies at my table started talking about egg casseroles. It was fun to hear everyone's take on them...for both sides...the cooking them and the eating them. After listening contentedly for a few minutes, I chimed in with a few thoughts myself. "I love to add some flare to my egg casseroles...whether it be a particular spice, or a bold and delicious cheese." I went on to tell them about this one dish egg casserole that I brought and why I chose the extra-sharp, how it took me what felt like 9 minutes to locate the extra-sharp cheddar cheese in the cheese department, and how I used the English muffins because it's what I found in my freezer. I loved the balance of flavors and textures in this egg casserole. The crushed red pepper gives a hint of heat. The paprika brings a bit of smoky sweetness, and the ham and broccoli work perfectly with the rich and deep flavor of the extra-sharp cheddar cheese. I hope you enjoy the rich flavor that the extra-sharp cheddar cheese brings to this one dish egg casserole!

- Lightly grease a 9x13-inch glass baking dish with non-stick cooking spray.
- In a mixing bowl, toss together the cut English muffin pieces with the broccoli florets, diced ham and about 3/4 cup of the shredded extra-sharp cheddar cheese. Once tossed, pour into the baking dish.
- In the same mixing bowl, whisk together the eggs, milk, paprika and crushed red pepper. Add in a few dashes of salt and pepper as well.
- Pour the egg mixture over top of the ingredients in the baking dish. Cover with foil and refrigerate overnight.
- In the morning, sprinkle the remaining shredded extra-sharp cheddar cheese over top of the casserole. Bake, covered, at 375°F for 45 minutes. Then remove the foil and bake for another 15 to 20 minutes, or until the casserole puffs up and slightly browns on top.

HAM AND EGG BRUNCH CASSEROLE
Plan ahead this needs to be refrigerated for 6-8 hours before baking, I have left the green onions and cayenne pepper as optional you may add them in or omit, I like to add in for extra flavor, 1 pound cooked Italian sausages meat may be used in place of the ham --- this makes a wonderful weekend brunch!

- Butter a 13 x 9-inch baking dish.
- Spread the bread cubes into the bottom of the baking dish.
- Sprinkle with ham and shredded cheddar cheese.

- Spray casserole dish with a non-stick cooking spray.
- Trim crusts from bread, cut slices and place bread on the bottom of casserole dish.
- Beat eggs, add salt, pepper, evaporated milk and mix well.
