A fresh take on tuna salad, this lunchbox-ready version has crisp apples and fennel and is tossed in a light olive oil-lemon dressing. There's also a herb-infused mayonnaise for easy dipping so you can adjust the mayo-to-tuna ratio of every bite. Make the salad the night before and quickly pack a bento box with whole-wheat crackers and crunchy escarole leaves in the morning for an all-star desk lunch.

3 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
Sugar
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground pepper
1 apple (such as Honeycrisp)
1/2 bulb fennel, thinly sliced
Jar of tuna in oil (such as Oritz White Tuna in Organic Extra-Virgin Olive Oil)
Mayonnaise
Finely chopped fresh basil leaves
Wheat crackers and escarole leaves, for serving

Steps:

  • Whisk together lemon juice, Dijon mustard, a pinch of sugar, and extra-virgin olive oil; season with kosher salt and freshly ground pepper. Cut the apple into matchsticks and toss with dressing. Add sliced fennel and a jar of tuna in oil; toss to combine. Pack in a bento box or other resealable container.
  • Stir together mayonnaise and finely chopped fresh basil leaves; season with salt and pepper. Pack in a small compartment of your bento box (or a separate resealable container). Eat tuna salad with basil-mayo, wheat crackers, and escarole leaves.

Found this recipe on a Hellman's mayo coupon card. Sound delicious, light and refreshing. Posting here for safe keeping. When I make it, my preference would be to use the tuna in the foil packets (no draining necessary). Feel free to use your favorite brand of products. I suspect this would be good using chicken instead of tuna too or served over lettuce, etc :) If you try it, I hope you enjoy it!

10 ounces albacore tuna in water, drained and flaked (2 5 oz cans)
1/3 cup mayonnaise
1/4 cup celery, finely chopped
1/4 cup apple, diced
1/4 cup cranberries, dried
1/4 cup walnuts, coarsely chopped (optional)
4 slices cheddar cheese or 4 slices muenster cheese, diced
2 tablespoons red onions, finely chopped
2 (8 inch) pita breads, halved

Steps:

  • Combine first 8 ingredients in a bowl.
  • Stuff pita bread halves with tuna mixture and enjoy!

1 large apple, cored and chopped
1/3 cup(s) celery, chopped

1/2 cup(s) plain nonfat or lowfat yogurt
1/4 cup(s) mayonnaise
1/2 cup(s) shredded cheddar or monterey jack cheese (2 oz)

Steps:

  • In a medium bowl combine tuna, apple, celery, walnuts and raisins; set aside.
  • In a small bowl combine yogurt and mayonnaise. Then add to the tuna bowl; toss gently. Add seasonings of your choice (optional) Cover and chill before serving.
  • To serve: line 4 salad plates with lettuce leaves. Sprinkle cheese over lettuce. Spoon tuna mixture on top of cheese.

This dish can be served as a sandwich filling or as a stand-alone salad accompanied by favorite lettuces and veggies. We use canned tuna packed in spring water because it's lighter than tuna packed in oil, and we make sure the apple is tart and crisp. Granny Smith apples are fine, but also Mutsu, Honeycrisp, or any good local crispy, tart apple will do. Add half the dressing at first and see if you need more-it's up to you how well coated you want the tuna and apples to be.

1/4 cup chopped walnuts
3/4 cup mayonnaise, homemade (page 284) or store-bought
2 teaspoons sugar
1 teaspoon cider vinegar
Kosher salt and freshly ground black pepper to taste
2 crisp, tart apples, such as Granny Smith, Mutsu or Honeycrisp, peeled, cored, and cut into 1/8-inch cubes
3 small cans (about 18 ounces total) canned tuna in spring water, drained and separated into chunks
6 tablespoons finely diced red onion
1/4 cup chopped fresh parsley
8 slices multi-grain bread

Steps:

  • Toast the walnuts in a small nonstick skillet over medium heat for 2 minutes, or until golden brown, stirring occasionally. Alternatively, roast the walnuts in a preheated 300°F oven for 10 minutes, or until they smell toasted. Remove the walnuts to a plate and set aside to cool.
  • Whisk together the mayonnaise, sugar, and cider vinegar in a small bowl. Add salt and pepper to taste. Adjust the seasonings as needed.
  • Combine the walnuts, apples, tuna, red onion, and parsley in a bowl. Toss with half the dressing. Add more dressing, if desired.
  • Spread the salad over 4 slices of bread. Top with the other 4 slices. Cut each sandwich in half, and serve.
