SMOTHERED CHEDDAR BACON RANCH CHICKEN BREASTS
These Smothered Cheddar Bacon Ranch Chicken Breasts are bathed in luxurious ranch-seasoned cream cheese, topped with crispy bacon, and shredded cheddar cheese.

Steps:
- Pre-heat oven to 400 degrees.
- Cook bacon until crisp and chop into 1" pieces.
- Add cream cheese and ranch seasoning to a bowl and mix to combine. (Tip: warming the cream cheese helps it mix much easier)
- Season chicken lightly with salt.
- Spread half of the mixture on the bottom of a 9x13" baking pan and add chicken breasts to pan.
- Top chicken breasts evenly with remaining cream cheese.
- Add bacon and cheese to cover the chicken breasts.
- Cover with foil, and bake in the oven for 15 minute. Uncover and continue to bake until internal temperature reaches 165 degrees (approx 15 more minutes).
- Remove from oven, let cool slightly and serve.

- Preheat oven to 375 degrees.
- Mix together onion powder, garlic powder, and paprika and sprinkle evenly over chicken. Rub to coat chicken in seasoning blend.
- Heat oil in a large heavy bottomed, oven safe skillet over medium heat.
- Add the chicken to the skillet and cook for 4 minutes on each side or until nicely browned.
- As chicken is cooking, stir together the cream cheese and ranch seasoning in a small bowl until well combined.
- Carefully spread the cream cheese mixture over each piece of chicken.
- Top with the shredded cheese.
- Place pan in the oven and bake until chicken is fully cooked, about 10 minutes.
- Top with the crumbled bacon and green onions just before serving.

- Preheat oven to 350°. In a cast-iron or other ovenproof skillet, cook bacon over medium heat until crisp, stirring occasionally. Using a slotted spoon, remove bacon to paper towels; reserve drippings., Sprinkle chicken with salt and pepper. In same pan, brown chicken in drippings over medium heat, 3-4 minutes per side. Brush with 1/3 cup barbecue sauce. Transfer to oven; bake 8 minutes., Spoon remaining sauce over chicken; sprinkle with cheese and bacon. CHEDDAR RANCH SMOTHERED CHICKEN
I found this recipe on a low carb website. It was very easy to make. I double the recipe along with the ranch but it was too ranchy. Will make it again but not double the rancy dressing. Prep time and cooking time are an estimate. I started everything and put the oven on warm and cooked it while I went to a movie and when I got home I turned it to 400, added dressing and cooked for 20 more minutes.

- Lay out stips of bacon on a cookie sheet and bake at 400 degrees while browning the chicken.
- Lightly brown chicken in olive oil and place in a 9 x 13 dish sprayed with cooking spray.
- Take out bacon and place 2 pieces of bacon over each chicken breast.
- Sprinkle with 1/3 of your cheddar cheese. Bake at 400 degrees until almost done.
- While that is cooking mix together the softned cream cheese, ranch dressing mix, and enough halfn-half to bring the mixture to the consistency of ranch dressing.
- When chicken is almost done, drizzle dressing mixture lightly over chicken
- then add to rest of your cheese and cook until the cheese is melted and juices run clear.

- 1. Cook pasta according to package directions in boiling salted water; drain, return to pot, and keep warm.
- 2. Meanwhile, cook bacon in a large skillet over medium heat until crisp. Drain on paper towels. Drain all but one tablespoon of bacon drippings from the pan.
- 3. Season the chicken with salt and pepper. Add the butter to the reserved bacon drippings, then add the chicken to the same skillet. Cook until tender, no longer pink, and slightly browned.
- 4. Sprinkle the flour and ranch dressing mix over the chicken, stirring to coat evenly. Stir in the milk, and cook, stirring occasionally, until thickened and bubbly. Stir in the cheddar cheese and half of the reserved bacon; cook and stir until the cheese is melted.
- 5. Serve each plate of pasta with more bacon sprinkled over the top.
