CHEDDAR APPLE PITA PIZZA

The classic combination of apple and cheddar cheese on a small pita pizza that's just for you!

1 Pita Bread
1/2 teaspoon Apricot Preserves
1 tablespoon Crumbled Feta Cheese*
2 tablespoons Chopped Pecans, divided
1/2 cup Baby Spinach, loosely packed
1/2 Apple, seeded, thinly sliced
2 ounces Shredded Mild Cheddar Cheese, (about 1/2 cup)
Fresh Rosemary, optional

Steps:

  • Adjust cooking rack to the bottom placement and preheat toaster oven to 400°F on the BAKE setting.
  • Place pita on the baking sheet and spread with preserves. Top with feta, half the pecans, and spinach. Arrange apple slices in a single layer on top of the spinach. Sprinkle with remaining pecans and cheddar cheese.
  • Bake until the pita edges are browned and the cheese is melted and bubbly about 8 to 11 minutes.
  • Remove pan from the toaster oven, top with fresh rosemary (if using) and allow pizza to cool for 3 minutes before slicing and devouring!

4 wholewheat pitta breads
4 tsp sun-dried tomato purée
3 ripe plum tomatoes , diced
1 shallot , thinly sliced
85g chorizo , diced
50g mature cheddar , grated
few basil leaves , if you like

Steps:

  • Heat oven to 200C/180C fan/gas 6 and put a baking sheet inside to heat up. Spread each pitta with 1 tsp purée. Top with the tomatoes, shallot, chorizo and cheddar.
  • Place on the hot sheet and bake for 10 mins until the pittas are crisp, the cheese has melted and the chorizo has frazzled edges. Scatter with basil, if you like, and serve with a green salad.

Steps:

  • Heat the grill. Spread each pitta bread with 1 tbsp tomato purée, sprinkle over the mixed herbs, then lay on the tomato slices. Divide the salami between the pittas, sprinkle over the cheese and grill until the cheese is golden and bubbling.
